Tortellini Marinara is absolutely wonderful. This quick and easy recipe uses only 6 ingredients. It can be ready to serve in about 30 minutes, making it the perfect weeknight dinner. - Cook tortellini according to package directions.
- Drain.
- In a large skillet, cook Italian sausage over medium heat until meat is no longer pink.
- Drain if necessary.
- Stir in marinara sauce, tomatoes and mushrooms.
- Bring to a boil, then reduce heat.
- Cover with lid and simmer 5-10 minutes or until mushrooms are cooked through and tender.
- Add tortellini and stir into skillet.
- Sprinkle with mozzarella cheese.

- Preheat the oven to 350 degrees F. Lightly oil an 8 by 8 by 2-inch baking dish.
- Whisk the sauce, mascarpone cheese, parsley and thyme in a large bowl to blend. Cook the tortellini in a large pot of boiling salted water until just tender, about 2 minutes. Drain. Add the tortellini to the sauce and toss to coat. Transfer the tortellini mixture to the prepared baking dish. Top the mixture with the smoked mozzarella and Parmesan. Cover and bake until the sauce bubbles and the cheeses on top melt, about 30 minutes.
