PINEAPPLE PORK BURGERS
Five ingredients and 20 minutes are all you need to serve up these mouthwatering pork burgers! A slice of grilled pineapple adds a tropical touch.

Steps:
- Heat gas or charcoal grill. In medium bowl, mix pork, seasoning and 2 tablespoons reserved pineapple juice. Shape mixture into 4 patties, about 1/2 inch thick.
- Place patties on grill over medium heat. Cover grill; cook 6 to 7 minutes, turning once, until no longer pink in center and meat thermometer inserted in center of patties reads 160°F. During last 4 minutes of cooking time, add pineapple slices to grill, turning once.
- On bun bottoms, place lettuce, burger and pineapple slice. Cover with bun tops.

HAWAIIAN PORK BURGER
Steps:
- Make burger mixture: Use your (clean) hands to mix the ground pork, green onion, allspice, salt, pepper and ground ginger together in a large bowl until just combined. Don't knead the mixture too much or the burgers will be tough.
- Grill pineapple rings: After you've flipped the burgers, lay the pineapple rings down on a hot part of the grill. Cook the burgers for another 5 to 7 minutes, until cooked through. Cook the pineapple rings for 3-5 minutes, or until you have nice grill marks on one side. Flip the pineapple and grill another 1-2 minutes. Remove the pineapple and burgers from the grill and let them rest 5 minutes.
- Toast burger buns on grill: While the meat is resting, toast the burger buns on the hot grill until the edges brown nicely, about 1-2 minutes.

- In a large bowl, combine the first six ingredients. Crumble pork over mixture and mix well. Shape into eight patties. - Preheat the oven to 400 degrees F (200 degrees C).
- Layer pineapple and peppers on a baking sheet. Drizzle evenly with 1 tablespoon olive oil.
- Bake in the preheated oven until browned, 15 to 20 minutes. Stir occasionally to prevent overbrowning.
- Meanwhile heat remaining olive oil in a large skillet over medium heat. Cook and stir onion until soft, about 5 minutes.
- Combine pineapple-pepper mixture, onion, orange juice, salt, and pepper in a blender or food processor. Puree until salsa is thoroughly combined. Add cilantro and blend lightly. Chill for approximately 1 hour.
- Combine ground pork, seasoned salt, paprika, dill, garlic powder, hot sauce, and red pepper in a large bowl. Blend well using your hands. Shape mixture into 8 patties.
- Preheat a gas or charcoal grill for medium-high heat and lightly oil the grate.
- Grill burgers until browned, 5 to 7 minutes per side. Cook 5 minutes for medium-well; 7 minutes for well done.
- Place burgers on buns and garnish with pineapple salsa.

Plan ahead the shaped uncooked burger patties need to marinate for a minimum of 6 hours to blend the flavors before grilling. If possible use fresh pineapple rings for this about 1/2-inch thick or a little larger. If you prefer a little kick then add in a small amount of cayenne pepper --- You can also use half ground pork and beef --- you will LOVE these burgers!

- In a large bowl whisk/mix the first six ingredients together until well blended.
- Add in the ground beef with garlic, green onions, black pepper and salt; mix to combine.
- Shape the ground beef into 7-8 patties (about 1-inch thick).
- Place the shaped patties on a baking sheet; cover with plastic wrap and refrigerate for about 6 hours.
- Grill the burgers over medium-high heat, brushing with soy sauce while grilling.
- Grill for about 6 minutes per side.

- Prepare the grill for direct cooking over medium heat (350° to 450°F).
- In a large bowl gently combine the patty ingredients. With wet hands, form four loosely packed patties of equal size, each shaped to fit the buns and about 3/4 inch thick. Don't compact the meat too much or the patties will be tough. Using your thumb or the back of a spoon, make a shallow indentation about 1 inch wide in the center of each patty. This will help the patties cook evenly and prevent them from puffing on the grill. Brush the pineapple slices with canola oil.
- Brush the cooking grates clean. Grill the patties over direct medium heat, with the lid closed as much as possible, until cooked through, 10 to 15 minutes, turning once or twice. At the same time, grill the pineapple over direct medium heat until lightly charred and softened, about 8 minutes, turning once. Remove from the grill as they are done.
- Grill the buns, cut side down, over direct medium heat until lightly toasted, about 1 minute. Build the burgers on toasted buns with lettuce, a patty, hoisin sauce, and a pineapple slice. Serve warm.
