1 lb ground pork
2 tablespoons dry applewood rub seasoning
1 can (8 oz) pineapple slices in juice, drained and 2 tablespoons juice reserved
4 onion or plain hamburger buns, split
4 leaves lettuce

Steps:

  • Heat gas or charcoal grill. In medium bowl, mix pork, seasoning and 2 tablespoons reserved pineapple juice. Shape mixture into 4 patties, about 1/2 inch thick.
  • Place patties on grill over medium heat. Cover grill; cook 6 to 7 minutes, turning once, until no longer pink in center and meat thermometer inserted in center of patties reads 160°F. During last 4 minutes of cooking time, add pineapple slices to grill, turning once.
  • On bun bottoms, place lettuce, burger and pineapple slice. Cover with bun tops.

1 pound ground pork
1/4 cup minced green onion
1/2 teaspoon ground ginger
1/8 teaspoon ground allspice
1/8 teaspoon salt (more to taste, but be careful, the BBQ sauce is salty, as is the ham)
Pinch black pepper
4 pineapple rings, fresh or canned
1/4 cup your favorite barbecue sauce
4 burger buns
4 large lettuce leaves (use leafy lettuce)
1/4 pound thinly sliced ham

Steps:

  • Make burger mixture: Use your (clean) hands to mix the ground pork, green onion, allspice, salt, pepper and ground ginger together in a large bowl until just combined. Don't knead the mixture too much or the burgers will be tough.
  • Grill pineapple rings: After you've flipped the burgers, lay the pineapple rings down on a hot part of the grill. Cook the burgers for another 5 to 7 minutes, until cooked through. Cook the pineapple rings for 3-5 minutes, or until you have nice grill marks on one side. Flip the pineapple and grill another 1-2 minutes. Remove the pineapple and burgers from the grill and let them rest 5 minutes.
  • Toast burger buns on grill: While the meat is resting, toast the burger buns on the hot grill until the edges brown nicely, about 1-2 minutes.

1 fresh pineapple, cored and cut into 1-inch pieces
2 poblano peppers, seeded and chopped
2 tablespoons olive oil, divided
1 small red onion, coarsely chopped
¼ cup orange juice
½ teaspoon kosher salt
ground black pepper to taste
¼ cup chopped fresh cilantro
2 pounds ground pork
3 teaspoons seasoned salt
2 teaspoons paprika
2 teaspoons dried dill weed
2 teaspoons garlic powder
1 ½ teaspoons hot pepper sauce
½ teaspoon ground red chile pepper
8 hamburger buns, split

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Layer pineapple and peppers on a baking sheet. Drizzle evenly with 1 tablespoon olive oil.
  • Bake in the preheated oven until browned, 15 to 20 minutes. Stir occasionally to prevent overbrowning.
  • Meanwhile heat remaining olive oil in a large skillet over medium heat. Cook and stir onion until soft, about 5 minutes.
  • Combine pineapple-pepper mixture, onion, orange juice, salt, and pepper in a blender or food processor. Puree until salsa is thoroughly combined. Add cilantro and blend lightly. Chill for approximately 1 hour.

If you prefer a little kick then add in a small amount of cayenne pepper --- You can also use half ground pork and beef --- you will LOVE these burgers!

1/3 cup honey (you can use up to 1/2 cup honey)
1/4 teaspoon cinnamon
1/4 teaspoon paprika
1/4 teaspoon curry powder
1/8 teaspoon ginger powder
1 pinch nutmeg
2 lbs extra lean ground beef
2 tablespoons fresh minced garlic (or to taste)
2 green onions, finely chopped (or use 1 small yellow onion)
black pepper
2 teaspoons seasoning salt (or to taste, or use white salt)
1/4 cup low sodium soy sauce
8 slices of fresh pineapple rings (or use canned pineapple slices, fresh is better!)
crusty hamburger bun
lettuce leaf

Steps:

  • In a large bowl whisk/mix the first six ingredients together until well blended.
  • Add in the ground beef with garlic, green onions, black pepper and salt; mix to combine.
  • Shape the ground beef into 7-8 patties (about 1-inch thick).
  • Place the shaped patties on a baking sheet; cover with plastic wrap and refrigerate for about 6 hours.
  • Grill the burgers over medium-high heat, brushing with soy sauce while grilling.
  • Grill for about 6 minutes per side.
  • The last 4 minutes or grilling place the pineapple slices on the grill; lightly brown on both sides (about 2 minutes per side).
  • Place a lettuce leaf on each crusty bun.
  • Top with a grilled burger and then a slice of grilled pineapple.

3 scallions, finely chopped (white and light green parts only)
2 teaspoons minced garlic
2 teaspoons toasted sesame oil
1 teaspoon sriracha hot chili-garlic sauce
1 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
4 fresh pineapple slices, each 1/2 inch thick, core removed
canola oil
4 hamburger buns, split
4 leaves romaine lettuce
4 teaspoons hoisin sauce

Steps:

  • Prepare the grill for direct cooking over medium heat (350° to 450°F).
  • In a large bowl gently combine the patty ingredients. With wet hands, form four loosely packed patties of equal size, each shaped to fit the buns and about 3/4 inch thick. Don't compact the meat too much or the patties will be tough. Using your thumb or the back of a spoon, make a shallow indentation about 1 inch wide in the center of each patty. This will help the patties cook evenly and prevent them from puffing on the grill. Brush the pineapple slices with canola oil.
  • Brush the cooking grates clean. Grill the patties over direct medium heat, with the lid closed as much as possible, until cooked through, 10 to 15 minutes, turning once or twice. At the same time, grill the pineapple over direct medium heat until lightly charred and softened, about 8 minutes, turning once. Remove from the grill as they are done.
  • Grill the buns, cut side down, over direct medium heat until lightly toasted, about 1 minute. Build the burgers on toasted buns with lettuce, a patty, hoisin sauce, and a pineapple slice. Serve warm.
