CREAMY CUCUMBER SALAD
Fresh dill and sour cream turn the summer staple into something cool, creamy and refreshing. Try this classic Midwestern salad with black bread and smoked salmon, or as a simple side for chicken or fish.

Steps:
- Put a large colander in a large bowl. Add the cucumbers and onions to the colander, sprinkle with 1 tablespoon salt and toss until the salt is evenly distributed. Let stand at room temperature for at least 1 hour and up to 2 hours.
- Transfer the cucumbers and onions from the colander to a paper towel-lined baking sheet and pat them dry with another layer of paper towels.
- Whisk together the sour cream, dill, vinegar and a few cracks of black pepper in a medium bowl. Add the cucumbers and onions and toss until coated.
- To make ahead: Salt and pat dry the cucumbers and onions as above, then keep separate from the dressing until ready to serve.
FROZEN CUCUMBER SALAD
Here's a delicious way to enjoy garden-fresh cucumbers year-round. I got this recipe from a friend and made good use of it one year after my husband harvested a very large crop. Just defrost...and enjoy the crispy texture!

- Combine cucumbers, onions and salt. Let mixture soak for 3 hours. In a saucepan, warm the vinegar and sugar; stir to dissolve sugar. Drain cucumbers and add to vinegar mixture. Ladle into plastic freezer containers and freeze. When ready to use, defrost and serve chilled.

CUCUMBER SALAD RECIPE
Make this recipe at least 2-3 hours ahead, but preferably a day ahead.

- Wash, peel and slice about 6-8 medium sized cucumbers to make 2 quarts (about 8 cups). Place them in a large deep glass or stoneware mixing bowl.
- Chop or slice 1 small onion and add to the cucumbers.
- Sprinkle 1 Tablespoon of salt over the cucumbers. Add just enough water to cover the cucumbers and place a plate on top to keep them weighted down. Let sit for two to four hours.
- Drain the cucumbers and onions in a colander and rinse them well to remove the excess salt.
- Place the cucumbers back in the same bowl and add the sugar, celery seed, and vinegar. Mix well until sugar is dissolved.
- For Freezing: You can freeze this cucumber salad right away in a freezer safe container.
- For eating the next day: Cover the bowl and place in the refrigerator overnight and they are ready to eat for brunch or dinner or take to a picnic.

- In a large bowl, whisk to combine the sour cream, vinegar and dill. Add the cucumber and red onion, season with salt and pepper and toss to combine.

FROZEN CUCUMBERS
This is a great way to use up the end of the garden, over-sized cucumbers. I started making these a couple of years ago and my family and friends love these. It is so nice to have fresh tasting cucumber salad in the middle of winter!

- 1. Slice cucumbers and onions into large bowl and mix. I use my mandolin and the thin slice blade to slice the cucumbers and onions. You do not need to peel the cucumbers first. I use my 13 quart stainless steel bowl to make this. Sprinkle with salt. Pour enough water over cucumbers and onions to just cover. I use nursery water, found in the baby food section for all of my canning as our water is too soft. Let set 2 hours. Drain in colander, but do not rinse. Put cucumbers and onions back in bowl.
- 2. Mix sugar and white vinegar and pour over cucumber - onion mixture. Stir and let set about 15 minutes. Put in freezer bags or containers and freeze. I usually put about 3 1/2 cups of the mixture into each quart bag. This recipe will make 10 quart bags. To use, thaw bag in refrigerator, pour into bowl and serve. Refrigerate leftovers. These stay crisp and taste just like fresh cucumber salad!
SMASHED CUCUMBER SALAD
This refreshing, flavorful salad stars Chinese black vinegar with light soy sauce as its milder sidekick. Smashed cucumber salad (pai huang gua in Mandarin) is a staple side dish in many Chinese restaurants, and I've often ordered it along with soup dumplings for a light meal. Chinese black vinegar has a deep and slightly smoky flavor, mild acidity and faint sweetness. The salad usually includes garlic and sesame seeds or sesame oil, and some variations add chiles or Sichuan peppercorn; this version uses gochugaru (Korean red pepper flakes) for a touch of heat, which isn't traditional but gives the salad a nice red hue and balanced spiciness. Smashing the cucumber helps to create jagged edges so there is more surface area to absorb the dressing, while salting the cucumber softens the skin, firms up the flesh and releases some water, concentrating the cucumber's flavor.

- Partially peel the cucumbers by removing alternate strips of the skin with a vegetable peeler. Cut the cucumber in half lengthwise, then use a spoon to scrape out the seeds. Smash the cucumber with a flat side of a cleaver or large knife or a rolling pin or meat mallet until it is flattened with jagged edges. Split each cucumber half in half again lengthwise. Cut the strips into 1-inch pieces diagonally.
- Toss the cucumber and salt together in a medium bowl. Let sit at room temperature until the cucumber releases some water, about 1 hour.
- Meanwhile, combine the oil, shallot and garlic in a small saucepan and cook over medium-low heat until the shallot is translucent, about 2 minutes. Mix in the gochugaru and allow it to bloom in the oil. Stir the vinegar, soy sauce, sugar and 1/2 teaspoon sesame seeds together in a small bowl until the sugar dissolves. Set aside.
- Strain the cucumbers and dry them with a paper towel. Return them to the medium bowl. Add the vinegar mixture and toss. Toss again with the garlic-shallot oil. Garnish with the remaining sesame seeds and the cilantro.
