1 lb farfalle pasta, or any short pasta
1 tablespoon olive oil
3 hot italian sausages
3 sweet italian sausages
1 red bell pepper, large, diced
1 green bell pepper, large, diced
1 yellow bell pepper, large, diced
½ white onion, sliced
2 cloves garlic, sliced
28 oz diced tomato
1 teaspoon oregano
1 teaspoon salt
1 teaspoon black ground pepper

Steps:

  • Bring a large pot of water to a rolling boil, add a generous amount of salt, and cook pasta 2 minutes less than the package instructions.
  • Strain pasta and set aside. Toss with a small amount of oil to prevent sticking
  • In the same pot, heat 1 tbsp of olive oil and fry sausages, working in batches as needed, until deeply browned on all sides.
  • Remove sausages, slice in ¾-inch (2 cm) rings, and set aside.
  • Sauté all of the bell peppers, onion, and garlic for about 2 minutes.
  • Add the canned tomatoes, all of the spices, and the sausage slices to the pot.
  • Simmer about 10 minutes.
  • Add the pasta back to the pot and stir gently until all the ingredients are coated in the sauce. Continue simmering until pasta is al dente.
  • Serve with grated parmesan.

Steps:

  • In 8-inch skillet, melt butter over medium heat. Toast bread crumbs in butter 2 to 3 minutes, stirring frequently, until browned. Transfer to small bowl; set aside.
  • In 5-quart Dutch oven, heat oil over medium heat. Add sausage; cook 6 to 8 minutes, stirring occasionally, until no longer pink. Using slotted spoon, transfer to bowl; cover and keep warm. Add onions, bell pepper, Italian seasoning and salt to oil and drippings in pan; cook over medium-high heat 5 to 7 minutes or until softened and starting to brown.
  • Stir in broth and tomatoes; heat to boiling. Stir in pasta; return to boiling. 1 teaspoon oregano (dried)
1/2 cup parsley (chopped fresh, optional)
Pepper to taste

Steps:

  • In a large pot of boiling water, cook the pasta until tender, but firm. Drain and return the pasta to the pot.

1 pound bow-tie pasta
1 cup whole-milk ricotta
1 lemon, zested and juiced
Freshly ground black pepper
2 tablespoons olive oil
1 pound bulk Italian sausage
1 tablespoon fresh oregano, chopped
2 teaspoons crushed red pepper
3 cloves garlic, minced
1 sweet onion, such as Vidalia, sliced
1 bunch broccolini, cut into 1-inch pieces
1/2 cup jarred roasted red bell pepper strips, drained
1/2 cup yellow cherry tomatoes, halved
1/2 cup freshly grated Parmesan
10 to 12 fresh basil leaves
1 loaf ciabatta or focaccia, warmed, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions.
  • Mix together the ricotta and lemon zest in a small bowl and season with salt and pepper; set aside.
  • Meanwhile, heat the olive oil in a large cast-iron skillet over medium-high heat. Tear the sausage into 1- to 2-inch chunks and place in the skillet. Cook for 60 to 90 seconds, then flip and cook for an additional minute. Add the oregano, crushed red pepper, garlic and onion and cook, stirring occasionally, until the sausage is cooked through, about 4 minutes. Stir in the broccolini and jarred peppers. Using a ladle, remove 2/3 cup cooking water from the pasta pot and add to the skillet. Cook until the sauce is thickened and the broccolini is softened, about 3 minutes.
  • Drain the pasta once cooked.
  • Remove the skillet from the heat and stir in the pasta, lemon juice, yellow tomatoes and Parmesan. Dollop on the ricotta mixture; tear the basil leaves into large pieces and sprinkle them over the skillet. Serve the bread alongside the pasta, whole or torn into large chunks.

8 ounces Italian sausage, cut in bite-size chunks (sweet & mild)
2 tablespoons garlic, minced (you can use less if you want)

Steps:

  • Boil the water and cook the penne according to package directions. DO NOT ever add oil to the water! It will make your sauce slide off the pasta later.

½ cup finely-chopped onion
½ cup finely-chopped sweet bell pepper
1 lb. Italian sausage, casings removed
2 cloves garlic, minced
Kosher salt and pepper
Pinch of crushed red pepper flakes
1 cup dry red wine
2 cans (28 ounces each) crushed tomatoes
½ cup heavy cream or half-and-half
2 tablespoons tomato paste
1 lb. pasta (such as penne, rigatoni or rotini)

2 tablespoons chopped fresh basil
½ cup freshly-grated Parmesan cheese, plus extra for garnish

Steps:

  • Heat olive oil in a large Dutch oven over medium heat. Add the onions and bell peppers; sauté for about 5-7 minutes (or until tender). Add the sausage and cook for 7-8 more minutes, until browned. Add garlic, 2 teaspoons kosher salt, ½ teaspoon black pepper, and crushed red pepper. Cook, stirring constantly, for 1 minute.
  • Add wine; bring to a boil, scraping bits from the bottom of the pan. Add crushed tomatoes, cream and tomato paste. Bring back to a boil; reduce heat to low, and simmer for 20-25 minutes (until sauce thickens). Remove from heat; stir in parsley, basil and Parmesan.

10.6 ounces hot Italian sausages (crumbled (see note))
3 cloves garlic (minced)
1/2 cup chicken broth or white wine
1/2 tablespoon flour
1 (14 fluid ounce) can diced tomatoes (with juices)
1/2 cup heavy/whipping cream
Salt & pepper (to taste)
6 large leaves basil (sliced/torn into small pieces)
Freshly grated parmesan cheese (to taste)

Steps:

  • Bring a large pot of salted water to a boil. Cook pasta al dente according to package directions.
  • Take the sausage meat out of the casings and crumble it into a deep skillet. Cook it for about 5 minutes, stirring occasionally, over medium-high heat until browned.
  • Once the sausage is browned, take it out of the pan and set it aside. Drain the fat.
  • Add the garlic, followed by the chicken broth to the skillet. Sprinkle the flour in. Whisk it until the flour has dissolved, and scrape any browned bits from the bottom of the pan. Cook this mixture until it's significantly reduced (should only take a minute or two in total).
  • Add in the tomatoes, cream, and the sausage meat. Cook the sauce for a few more minutes until it's thickened to your liking. Season with salt & pepper as needed.
  • Just prior to serving, add in the torn basil leaves and then toss with the drained pasta. Serve with freshly grated parmesan cheese.

1 red onion, cut into 8 wedges
2 large peppers, red and yellow, seeds removed, cut into 4cm/1½in chunks
2 medium courgettes, trimmed, halved lengthways and thickly sliced
1 tbsp olive oil
6 sausages (around 400g/14oz), each cut into 3 pieces
200g/7oz penne
300ml/10fl oz single cream
50g/1¾ oz Parmesan, finely grated, or 75g/2½oz mature Cheddar cheese
salt and freshly ground black pepper

Steps:

  • Preheat the oven to 220C/200C Fan/Gas 7.
  • Put the vegetables in a large roasting tin (roughly 30x25cm/12x10in), season with salt and freshly ground black pepper, toss with the oil and roast for 10 minutes. Add the sausage pieces and toss. Roast for 20 minutes.
  • Half fill a large saucepan with water and bring to the boil. Add the pasta and cook for 10-12 minutes, or according to the pack instructions, until tender, stirring occasionally. Drain the cooked pasta in a colander.

150 grams Italian Sausage Ground
100 grams Button Mushrooms (sliced)
2 cloves Garlic (minced)
1 tbsp Flour
1 cup Chicken Stock
¼ cup Heavy Cream
3 tbsp Shredded Parmesan
Salt and Pepper (to taste)
200 grams Cooked Linguine

Steps:

  • Sear sausage in a pan until fat is fully rendered.
  • Add garlic into the pan. Sautee until aromatic.
  • Add mushrooms and stir briefly.
  • Dust flour into the pan and stir for a minute.
  • Add stock and simmer until thick.
  • Add cream and parmesan. Bring back to a simmer.
  • Toss in the pasta.

Easy Pasta and Italian Sausage Weeknight Dinner image

This pasta and Italian sausage recipe is like the non-recipe! A few simple ingredients thrown together to make a wonderful Italian inspired meal to share with family.

Yield 6 to 8 servings

Number Of Ingredients 6

6 cups of your favourite tomato sauce (we used our own nonna-approved tomato sauce)
4 cups quality penne pasta (cooked as per the package instructions)
6 sweet Italian sausages (or spicy if you prefer)
½ cup jarred roasted peppers, cut in strips
10 leaves fresh basil, finely shredded
Shaved parmesan cheese to top the dish

Steps:

  • Pre-heat the oven to 400 ºF.
  • Line a baking sheet with aluminum foil.
  • Place the sausages on the baking sheet.
  • Place the baking sheet in the oven and cook for 25 minutes.
  • Place two large pots on the stove, each over it's own burner.
  • Pour the sauce into the first large pot and set to medium.
  • Let the sauce simmer slowly. Reduce temperature if necessary.
  • Fill the second large pot with water, add salt and bring to a boil.
  • Add the pasta and cook to al dente as per the package instructions.
  • Pour the cooked pasta into a colander over the sink.
  • Once the water has drained out, carefully pour the pasta into the pot with the sauce and shut off the burner to stop cooking the sauce and pasta.
  • Once the sausages are cooked, remove them from the oven and slice into wheels.
  • Add the sausages to the pasta and sauce.
  • Add the roasted red peppers and basil, and stir.
  • Adjust the salt and pepper if necessary.
  • That's it... it's really ready to eat!
  • Plate the pasta and don't forget to top it with the shaved parmesan.

  • Firstly we take off the casing off the sausages, we do this by cutting the sausages lengthways just enough to pierce the casing and then push the mince out into a mixing bowl (you can then dispose of the sausage casings) . Once you have prepared all the sausage mince into a mixing bowl, you can add your seasoning (See ingredient notes).
  • Now we start cooking, in a large sauté pan add olive oil and over a medium heat sauté the onions for 5-6 minutes until soften. Add the garlic and sauté for an additional minute.
  • Turn up the heat and quickly add the sausage mince and season with salt and pepper. Now break up the mince using a wooden spoon and keep stirring to let any meat liquid evaporate. Once the mince has browned turn down the heat to medium.
  • Next add the wine and with a wooden spoon deglaze the pan (scrape any brown bits stuck to the bottom of the pan). Once the wine has evaporated add the milk and simmer for 10—15 minutes (this is to help tenderise the meat).
