1 cup butter, softened
1 cup shortening
1-1/2 cups sugar
1-1/2 cups packed brown sugar
4 eggs
2 teaspoons vanilla extract
2 cups shredded carrots
4 cups quick-cooking oats
3-1/2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons salt
1 cup chopped walnuts
1 cup miniature semisweet chocolate chips

Steps:

  • In a large bowl, cream the butter, shortening and sugars until light and fluffy. Beat in eggs and vanilla. Beat in carrots. Combine the oats, flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in walnuts and chocolate chips. Cover and refrigerate for at least 4 hours., Drop by rounded tablespoonfuls 3 in. apart onto baking sheets coated with cooking spray. Bake at 375° for 10-13 minutes or until lightly browned. Cool for 2 minutes before removing to wire racks.

1/2 cup butter or margarine, softened
1/2 cup grated carrots
1 tablespoon water

4 oz (half of 8-oz package) cream cheese, softened
1 tablespoon butter or margarine, softened
1/2 teaspoon vanilla
1 1/2 cups powdered sugar
1/4 cup finely chopped nuts, if desired

Steps:

  • Heat oven to 375°F. In large bowl, stir cookie ingredients until stiff dough forms.
  • On ungreased cookie sheets, drop dough by teaspoonfuls 2 inches apart.
  • Bake 9 to 10 minutes or until edges are light golden brown. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 30 minutes.
  • In small bowl, mix cream cheese, 1 tablespoon butter, the vanilla and powdered sugar with spoon until smooth. Spread frosting over cookies. Sprinkle with nuts. Store tightly covered in refrigerator.

1 cup instant oats (as a substitute you can use old fashioned rolled oats pulsed a few times in a food processor)
¾ cup whole wheat flour
1 ½ tsp baking powder
1-1 ½ tsp ground cinnamon (to taste)
Dash of salt
2 tablespoons coconut oil-melted and cooled
1 egg
1 teaspoon vanilla
½ cup honey
1 cup grated carrots

Steps:

  • Whisk together instant oats, flour, baking powder, cinnamon, and salt, set aside.
  • In a large bowl whisk together egg, vanilla and coconut oil. Add honey and stir to combine.
  • Stir in dry ingredients mixture, then fold in carrots.
  • Cover the dough with plastic wrap and chill for 1 hour. CHILLING IS MANDATORY!!! The oats need some time to soak some moisture, also prevent cookies from flatten completely.
  • Preheat the oven to 350 F, line large baking sheet with parchment paper and set aside.
  • Using ice cream scoop drop the ball of cookie dough onto baking sheet leaving two inch space apart. If you chill the dough longer and the dough is very thick flatten the cookies slightly before baking.
  • Bake for 11-13 minutes. Cool the cookies on a baking sheet for 15 minutes ( they need to finish cooking on warm baking sheet) then transfer to a rack.

These cookies taste just like carrot cake-one of my favorite treats! They're chewy like regular "dessert" cookies and have the sweetness level of muffins. They'll keep for at least one week if stored in an airtight container in the refrigerator-if they last that long!

Number Of Ingredients 12

1 cup (100g) instant oats (measured like this and gluten-free if necessary)
¾ cup (90g) whole wheat or gluten-free* flour (measured like this)
1 ½ tsp baking powder
1 ½ tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp salt
2 tbsp (28g) coconut oil or unsalted butter, melted and cooled slightly
1 large egg white, room temperature
1 tsp vanilla extract
¼ cup (60mL) pure maple syrup, room temperature
5 tbsp (75mL) nonfat milk, room temperature
¾ cup (68g) freshly grated carrot (about 1 medium, peeled first!)

Steps:

  • In a medium bowl, whisk together the oats, flour, baking powder, cinnamon, nutmeg, and salt. In a separate bowl, whisk together the coconut oil, egg white, and vanilla. Stir in the maple syrup and milk. Add in the flour mixture, stirring just until incorporated. Gently fold in the carrots. Chill the cookie dough for 30 minutes.
  • Preheat the oven to 325°F, and line a baking sheet with a silicone baking mat or parchment paper.
  • Drop the cookie dough into 15 rounded scoops onto the prepared sheet, and flatten to the desired thickness and width with a spatula. Bake at 325°F for 10-13 minutes. Cool on the pan for 10 minutes before transferring to a wire rack.

1 cup Hot tap water (for hydrating carrots and raisins)
1 egg
1/2 cup packed brown sugar
1/3 cup light corn syrup
2/3 cup butter
2 cups quick cooking oatmeal
1/2 cup coconut (optional)
1/2 cup nuts (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Add carrots and raisins to hot tap water. Allow to hydrate for a minimum of 5 minutes. Drain and squeeze out excess water.
  • In small sauce pan, melt brown sugar, corn syrup and butter on medium. Bring to a boil and cook for 3 minutes. Remove from heat.
  • To a mixing bowl add the cake mix, drained carrots and raisins, coconut, nuts, oatmeal and egg. Mix by hand until blended.
  • Pour in the melted brown sugar, butter mixture and stir until well mixed.
  • Spread evenly into a 9x13 inch, lightly greased baking pan.
  • Bake for 30-35 minutes.
  • Remove from oven and immediately press down on surface of hot cooked bars with spatula.
  • Cool and refrigerate before cutting.

2 large carrots, grated on the coarse holes of a box grater (1 1/2 cups)
3/4 cup golden raisins
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon kosher salt
1/4 teaspoon freshly grated nutmeg
1/2 cup plus 2 tablespoons packed dark brown sugar
2 cups whole milk
2 large eggs
4 tablespoons unsalted butter, melted and cooled
1 teaspoon pure vanilla extract

Steps:

  • For the cream cheese topping: Combine the cream cheese, granulated sugar and vanilla in a small bowl. Mix well until smooth. Set aside.
  • For the carrot cake baked oatmeal: Preheat the oven to 350 degrees F.
  • Combine the oats and pecans in a large cast-iron skillet over medium-low heat. Cook and toss until the oats and pecans are lightly toasted and fragrant, 3 to 4 minutes. Remove from the heat and let cool slightly while the oven preheats.
  • To the skillet with the oats and pecans, add the carrots, raisins, baking powder, cinnamon, ginger, salt, nutmeg and 1/2 cup brown sugar and toss to combine. In a large spouted measuring cup, combine the milk, eggs, melted butter and vanilla. Whisk to combine. Pour over the oat mixture. Stir and toss to combine well, making sure all of the oats are evenly distributed in the egg mixture.
  • Sprinkle the top with the remaining 2 tablespoons brown sugar. Dollop dots of the cream cheese topping over the surface of the oatmeal. Bake until the oatmeal is set and slightly puffed and the top is golden and caramelized, 30 to 35 minutes. Let cool 5 minutes before cutting and serving.

1 cup light brown sugar (packed)
1 large egg
1 teaspoon vanilla extract
1.5 cups rolled oats (lightly pulverized)
1 cup white whole wheat flour

1.5 teaspoons ground cinnamon
1/2 teaspoon ground allspice
3/4 teaspoon ground nutmeg
1/8 teaspoon salt
1 cup coarsely grated carrot (lightly packed)

Steps:

  • First, preheat oven to 350ºF and spray a baking sheet with nonstick cooking spray.
  • Next, cut cold butter into 1-tablespoon pads and place into a stand mixer.
  • Add brown sugar and then turn your stand mixer on to medium.
  • Cream butter and sugar together until there are no more lumps of butter and the consistency is smooth. This should take around 5 minutes.
  • While the butter is creaming, lightly pulverize rolled oats in a food processor. The goal here is to still have some chunks of oatmeal, but also have some oat flour. Then, transfer into a large bowl.
  • Add white whole wheat flour, baking powder, ground cinnamon, allspice, nutmeg, and salt to the same large bowl and mix until combined.
  • Once the butter has creamed, add egg and vanilla extract and mix on medium until combined. Make sure not to over mix!
  • Slowly add the dry ingredients to wet and mix on medium until a dough has formed. You may need to stop to scrape the bottom of your mixer. The consistency should be a little bit sticky, but have the ability to form into a ball.
  • Finally, add in grated carrot, walnuts, and raisins, and mix one final time on medium to combine.
  • Use a 1.5 tablespoon cookie scoop to scoop dough into your hands. Roll into a ball and then slightly flatten between your palms to create a cookie shape. Place on a cookie sheet and repeat.
  • Bake at 350ºF for 12-14 minutes.
  • Once the bottoms are golden brown, remove from cookie sheet immediately and transfer to a cooling rack.
  • Top with optional sea salt before serving.
