NIF'S PRETTY BELL PEPPER RICE PILAF

I came up with this tonight, trying to use some of the veggies in my fridge while they were still good! I like to overlap steps to save time so I hope that the instructions make sense! You can use any kind of broth to make the rice or just use water. I also really enjoyed the rosemary but you don't need to add any herbs if you don't want to. The type of rice is also optional. Just make sure that you end up with about 2.5 cups of cooked rice. Enjoy!

1 cup converted long grain white rice
2 cups chicken broth (or whichever kind you prefer, water works in a pinch)
2 teaspoons olive oil
1/2 cup onion, chopped
1/2 cup carrot, diced
2 garlic cloves, minced
1 cup bell pepper, diced (red, yellow or orange)
2 teaspoons fresh herbs, chopped, optional (your favourite, I used rosemary)
salt and pepper
2 tablespoons green onions, thinly sliced (optional)

Steps:

  • Place rice and broth in a saucepan. Bring to a boil. Cover with lid, set heat to minimum and cook for 20 minutes. No peaking! If you are using a different kind of rice, just follow the instructions. You want your rice to be cooked, but not mushy!
  • Meanwhile, heat olive oil in a large nonstick frying pan over low-medium heat.
  • Cut veggies in the order listed (onion, carrot, garlic and peppers). Add each type of veggie to the pan as they are cut. When they are all added, turn heat to low and let veggies sweat. You want them to be soft but not browned. Add herbs, if using.
  • When rice is done, add it to the frying pan. Give it all a stir, taste and add salt and pepper to your liking. Serve immediately as rice will become mushy if you let it sit.
  • Top with green onion.

RED PEPPER CHICKEN PILAF

This one is right off the back of a container of low-fat Kroger brand chicken broth. I like the recipe because it is elegant, simple, healthy, and very tasty. This is a nice light supper that you can whip out for your family in a hurry. You can also double the recipe for a small dinner party. For a little more color, use one yellow bell pepper. Enjoy!

2 tablespoons butter
2 tablespoons vegetable oil
2 large red bell peppers, sliced
2 fresh garlic cloves, chopped
4 boneless skinless chicken breast halves, cut into chunks
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 cup all-purpose flour
1 cup chicken broth, canned
1/4 cup white wine
2 tablespoons fresh parsley, chopped
4 cups cooked white rice

Steps:

  • In a large skillet over medium high heat, melt the butter and add the cooking oil. Sautee the peppers until they are tender, about 10 minutes. After about the first 8 minutes, add the garlic in with the peppers. Transfer the drained peppers and garlic to a bowl. Reserve remaining oil in the skillet.
  • Pour the flour into a lunch-sized paper bag. Pat each chicken breast dry and, one at a time, shake the breasts in the bag to coat each with flour. Place the chicken breasts into the skillet and brown them on both sides, about 4 minutes per side.
  • Remove the chicken from the skillet and put the peppers back in, adding the broth and the wine. Deglaze any chicken bits with your spatula. Turn the heat to medium high and reduce the liquid to a sauce texture.
  • Return the chicken to the skillet and cook for about 5 more minutes over medium heat. Season with the salt and pepper.
  • Pour the warmed rice on a large platter, pour the chicken and peppers over it, and garnish with the chopped parsley. Serve family style.

RED PEPPER GARLIC RICE PILAF

2 1/2 teaspoons butter
1/4 large onion, chopped fine (or less to your liking)
1 garlic clove (chopped fine)
1 1/2 cups chicken broth
1 1/2 cups rice (I use instant for best results)
1/2 red roasted pepper (buy whole red peppers in a jar and chop fine)
4 tablespoons mexican cheese (or whatever you prefer)

Steps:

  • Melt butter in saucepan. Saute onions for 4 minutes.
  • Add chopped garlic. Cook about 4-5 minutes more, or until onion is tender.
  • Place chicken broth in pan with onion mixture. Bring to boil and cook rice according to package directions.
  • Once rice is done, stir in red bell pepper and fluff with fork.
  • Top with cheese and serve. Delicious!

2 tablespoons butter
1/2 onion, chopped
1/2 red bell pepper, chopped
2 pinches kosher salt
2 cups long grain rice
2 3/4 cups chicken broth
2 strips orange zest
Pinch of saffron strands, steeped in 1/4 cup hot water
1 bay leaf
1 1/2 cups frozen peas, thawed
Golden raisins and pistachios, for garnish

Steps:

  • Preheat oven to 350 degrees.
  • In a heavy, wide, lidded pan, melt butter over medium-low heat. Add onion, red pepper, and kosher salt. Sweat the onions and peppers until aromatic, stirring constantly. Add the rice and stir to coat. Continue stirring until rice smells nutty. Add chicken broth, orange zest, saffron and water, and bay leaf. Bring to a boil. Stir once, then cover pan with moistened dish towel (or tea towel). Place lid on pan and fold towel corners over lid. Bake for 15 minutes. Then rest at room temperature for 10 to 20 minutes without removing the cover.
  • Meanwhile, simmer peas in salted water until heated through or heat in a microwave.
  • Remove lid from rice and turn out onto a platter. Add peas and fluff with a large fork. Add raisins and pistachios.

2 large or 4 small shallots, chopped
1 small red pepper, stemmed, seeded, deveined and chopped into 1/2-inch pieces
1 teaspoon kosher salt, plus extra for seasoning
1/2 teaspoon freshly ground black pepper, plus extra for seasoning
1 1/2 cups quinoa
1/4 cup white wine, such as pinot grigio
1 1/2 cups low-sodium chicken broth
1 packed cup arugula, chopped
1/2 cup slivered almonds, toasted and coarsely chopped
1/2 cup chopped fresh mint
1 medium cucumber, peeled, seeded and diced into 1/2-inch pieces
Zest of 1 lemon

Steps:

  • Cook's Note: To toast the almonds, arrange in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven until lightly toasted, 6 to 8 minutes. Cool completely before using.
  • Heat 2 tablespoons of the oil in a large saucepan or a high-sided skillet over medium-high heat. Add the shallots and cook until soft, about 2 minutes. Add the bell pepper, salt and pepper. Cook until the vegetables are tender, 5 minutes. Make a space in the center of the vegetables and add the remaining 1 tablespoon of oil. Add the quinoa and cook, stirring constantly, until coated with oil, about 2 minutes. Add the wine and cook until all of the liquid has evaporated, about 2 minutes. Add the broth and bring to a boil. Cover the pan and simmer until all of the broth has been absorbed and the quinoa is tender, about 15 minutes. Keep covered and let sit for 10 minutes. Add the arugula, almonds, mint, cucumber and lemon zest and toss well. Season with salt and pepper.

1 Turkish or 1/2 California bay leaf
1/4 cup extra-virgin olive oil
1 cup long-grain white rice
2 cups water
1/4 cup raw green (hulled) pumpkin seeds (pepitas), toasted

Steps:

  • Cook squash, bell pepper, onion, and bay leaf in oil with 1 teaspoon salt and 1/4 teaspoon pepper in a 12-inch heavy skillet over medium heat, stirring occasionally, until vegetables begin to brown, 8 to 10 minutes.
  • Add rice and stir until well coated, then add water and bring to a vigorous boil. Reduce heat to low and cook, tightly covered with lid, until vegetables and rice are tender and liquid is absorbed, about 20 minutes. Remove from heat and let stand, covered, 10 minutes. Season with salt and pepper and sprinkle with seeds.

CHARRED SWEETCORN, RED PEPPER & BULGUR WHEAT PILAF

1 tbsp rapeseed oil
2 corn cobs
2 large red peppers, sliced
bunch of spring onions, sliced
2 tsp smoked paprika, plus extra to serve
2 garlic cloves, crushed
500ml vegetable stock
300g bulgur wheat
½ small bunch of coriander
Greek yogurt, to serve (optional)
lime wedges, to serve

Steps:

  • Heat ½ tbsp oil in a casserole dish (that has a lid) over a high heat. Fry the corn cobs for 8-10 mins turning frequently, until golden and lightly charred. Stand on a chopping board and run the knife down the cobs to remove the kernels.
  • Tip the peppers into the pan with the remaining oil and fry for 10 mins until softened and golden, then stir in the spring onions, paprika and garlic. Fry for another 3-4 mins until fragrant, then stir most of the corn back into the pan, along with the stock. Bring to a simmer, then stir in the bulgur. Turn the heat to low. Cover with the lid and leave for 8-10 mins until the stock has been absorbed and the bulgur is tender.
  • Fluff the pilaf up with a fork, then scatter with the remaining corn and the coriander. Serve with a dollop of Greek yogurt dusted with a little paprika, if you like, and the lime wedges for squeezing over.

1 tbsp vegetable oil
1 onion , finely chopped
2 garlic cloves , crushed
1cm piece ginger , finely chopped
1 tsp tomato purée
1 tsp ground cumin
1 tsp garam masala
200g basmati rice
850ml vegetable stock
140g red lentils , washed and drained
200g bag spinach leaves, chopped
handful mint leaves, chopped
8 peppers

Steps:

  • Heat the oil in a large saucepan with a lid. Add the onion, garlic and ginger, then gently cook for 5 mins until softened. Stir in the tomato purée and spices, and cook for 1 min more. Add the rice, stir to coat, then pour in the stock. Bring to the boil, tip in the lentils, cover with the lid and leave to cook over a low heat for 15 mins, until the lentils and rice are cooked. Stir through the spinach and mint (see tip below, if freezing).
  • Use a sharp knife to slice the top off each pepper. Cut out the middle stalk and scoop out any seeds. Carefully trim the bottoms slightly so they stand upright, but the filling won't fall out. Fill each pepper with the rice mix and place the lid on top. Bake or wrap tightly in cling film or freezer bags and freeze.
  • To cook, defrost peppers completely if frozen. Heat oven to 200C/180C fan/gas 6. Place the peppers on a lightly greased baking tray and cook for 25-30 mins or until the peppers have softened. Serve with a green salad tossed with cucumber, herbs and a dollop of yogurt.

1 cup long grain rice
3 tablespoons butter
1/2 lb baby portabella mushrooms, sliced
1/2 cup onion, sweet, finely chopped

2 cups chicken broth, good quality
1 sprig fresh thyme
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4 cup almonds, sliced, toasted
1/4 cup large golden raisin
2 green onions, finely chopped

Steps:

  • Melt 1 tbsp butter in saucepan, add mushrooms and saute 3 minutes over high heat, remove mushrooms and reserve.
  • Melt remaining butter, in same pan, add onions and peppers, saute until soft.
  • Stir in the salt, thyme, rice and broth.
  • Bring mixture to a boil, cover, lower heat and simmer for 20 - 25 minutes, until all liquid is absorbed.
  • Remove from heat, add in the reserved mushrooms, almond slices and raisins.
  • Mix well, pour into a nice dish, season with freshly ground black pepper and garnish with finely chopped green onions.

1 teaspoon brown sugar
3 tablespoons light soya sauce

1 cup spring onion, chopped

Steps:

  • Heat oil in a wok.
  • Add the garlic and sauté on medium flame until the raw smell is gone and it starts to brown.
  • Add the sliced onion and red bell pepper.
  • Sauté on medium flame for 3 minutes.
  • Add red chili powder, turmeric powder, pepper and salt to taste.
  • Mix well with the other ingredients.
  • Sprinkle spring onions over the rice immediately before serving.
  • Serve hot.
