400g can lentil , rinsed and drained
5 roasted red peppers from a jar, chopped
handful radishes , sliced
handful olives
2 tbsp balsamic vinegar
4 tbsp olive oil
2 Little Gem lettuces
150-200g feta cheese , crumbled

Steps:

  • Tip the lentils and peppers into a bowl with the radishes, olives, vinegar and oil, and mix well. Season to taste.
  • Separate the lettuce leaves and put onto a large plate. Spoon over the lentil salad and scatter with the feta.

1/2 teaspoon black pepper
1/4 teaspoon cayenne
1 cup dry white wine
1 1/2 cups red lentils, picked over and rinsed (10 oz)
2 cups water
1 tablespoon agar-agar flakes
1 teaspoon balsamic vinegar
8 ounces cream cheese, softened
3/4 cup chopped bottled roasted red pepper, patted dry
1 tablespoon extra virgin olive oil
1/4 cup chopped roasted red pepper, patted dry
1 teaspoon balsamic vinegar
1 teaspoon finely chopped fresh oregano or 1 teaspoon marjoram

Steps:

  • Lightly oil terrine & line bottom and ends with a strip of parchment paper, allowing at least 2 inches of overhang on each end of terrine.

2 cups red lentils
5 cups water or 5 cups light vegetable stock
2 medium onions
3 garlic cloves
2 tablespoons sesame oil or 2 tablespoons extra virgin olive oil
1 teaspoon dried basil
1 teaspoon oregano
1 teaspoon thyme
1/4 cup whole wheat bread crumbs
1 teaspoon sea salt, to taste (may sub regular salt)
1/2 cup parsley
1/2 teaspoon fresh ground black pepper, to taste
1 teaspoon seasoned rice vinegar

Steps:

  • Wash lentils quickly, drain, and place the lentils in a 3-4 quart saucepan.
  • Add the water or stock, bring to a boil, reduce heat to medium, and simmer, covered, for 20 minutes.
  • Chop the onions and the garlic very finely.
  • In a large skillet, heat the oil.
  • Add the garlic, onions, and herbs and saute over medium heat, stirring constantly, for about 10 minutes, or until the onions and garlic are browned and fragrant.
  • Oil a 9-inch shallow baking pan or loaf pan and sprinkle with half the bread crumbs, completely coating the inside of the pan.
  • Preheat the oven to 375°F.
  • Chop the parsley finely.
  • When the lentils are done, stir them thoroughly to mash, add the onion mixture, bread crumbs, and parsley.
  • Season to taste with sea salt, vinegar, and pepper.
  • Pour the lentil mixture into the prepared pan and bake for about 20 to 30 minutes, or until set.
  • Allow to cool to room temperature before slicing.

1 cup large or small red lentils, sorted and rinsed
4 cups water
1 bay leaf
3 tablespoons extra-virgin olive oil
1 small onion, finely chopped
1/3 cup pine nuts
3 garlic cloves, finely chopped
1 tablespoon tomato paste
1 teaspoon ground coriander
1/2 teaspoon ground caraway seeds
1/2 teaspoon ground cumin
1/8 teaspoon cayenne pepper
1 teaspoon coarse sea salt or kosher salt
Freshly squeezed juice of 1/2 lemon
Pita toasts, to serve
Crudite, to serve

Steps:

  • In a 3-quart saucepan over high heat, combine the lentils with 4 cups water and bring it to a boil. Skim and discard any foam and add the bay leaf. Reduce the heat to low, cover the pan, and simmer until the lentils are tender, about 30 minutes; drain.
  • While the lentils simmer, in a small saute pan over medium heat, warm the oil. Add the onion and pine nuts and cook until the onion softens and the pine nuts begin to color, about 5 to 7 minutes. Stir in the garlic, tomato paste, coriander, caraway, cumin, cayenne, and salt. Continue to cook for 5 minutes. Stir in the lemon juice, scraping up any browned bits on the bottom of the pan. Remove from the heat.
  • In a food processor, add the lentils and onion mixture and puree until smooth.
  • Transfer to a serving bowl and serve at once. May be covered and chilled and served cold. Serve with pita toasts or crudite.

This easy vegetarian dip is a healthy alternative to hummus and great with crudités in a lunchbox or served as a vegan pate as part of a snack selection.

1 tbsp olive oil , plus extra for drizzling
½ onion , finely chopped
1 tsp smoked paprika , plus a little extra
1 small sweet potato , peeled and diced
140g red lentil
3 thyme sprigs, leaves chopped, plus a little extra to decorate (optional)
500ml low-sodium vegetable stock (choose a vegan brand, if desired)
1 tsp red wine vinegar (choose a vegan brand, if desired)
pitta bread and vegetable sticks, to serve

Steps:

  • Heat the oil in a large pan, add the onion and cook slowly until soft and golden. Tip in the paprika and cook for a further 2 mins, then add the sweet potato, lentils, thyme and stock. Bring to a simmer, then cook for 20 mins or until the potato and lentils are tender.
  • Add the vinegar and some seasoning, and roughly mash the mixture until you get a texture you like. Chill for 1 hr, then drizzle with olive oil, dust with the extra paprika and sprinkle with thyme sprigs, if you like. Serve with pitta bread and vegetable sticks.

Because red beans conjure up Cajun cooking for me, I spiced this bean pâté with paprika and cayenne and added red peppers and tomatoes.

Number Of Ingredients 13

1 can red beans, rinsed, or 1 2/3 cups cooked red beans
1/4 cup extra virgin olive oil
1/2 cup finely chopped onion
1 cup finely diced red pepper
1 serrano chili, minced
3 garlic cloves, minced
1/2 pound grated tomatoes or 1/2 14-ounce can chopped tomatoes with juice
1 teaspoon paprika
1/4 to 1/2 teaspoon cayenne (to taste)
2 eggs
2 tablespoons lemon juice
Salt to taste about 3/4 teaspoon
Freshly ground pepper to taste

Steps:

  • Preheat the oven to 350 degrees. Butter or oil a 5-cup pâté tureen or baking dish, or a bread pan.
  • Heat 2 tablespoons of the olive oil over medium heat in a medium skillet. Add the onion, red pepper and serrano chili. Cook, stirring, until tender, about five minutes. Add 2 of the garlic cloves. Cook, stirring, until the garlic is fragrant, about one minute. Stir in the tomatoes, paprika and cayenne, and season to taste with salt and pepper. Cook, stirring often, until the tomatoes have cooked down and the mixture is thick, about 10 minutes. Remove from the heat.
  • Turn on a food processor fitted with the steel blade, and drop in the remaining clove of garlic. When the garlic is chopped and adhering to the sides of the bowl, stop the food processor and scrape down the bowl. Place the beans and eggs in the food processor. Turn it on, and add the lemon juice and remaining 2 tablespoons of olive oil. Process until smooth. Add the tomato-onion-pepper mixture, and pulse to combine. Season to taste with salt and pepper. Scrape into the prepared baking dish, and cover tightly.
  • Bake for 40 to 45 minutes until the pâté is set and the top is just beginning to color. Remove from the heat, and allow to cool. For best results, refrigerate overnight. Serve at room temperature or cold.

150g red lentil fusilli
2 handfuls of rocket
60g unsalted, unroasted cashews
1 large garlic clove, roughly chopped
1 large roasted red pepper (in red wine vinegar) from a jar, drained, any seeds removed
4 sundried tomatoes
8 large basil, roughly chopped

Steps:

  • First, make the sauce. Put the cashews and garlic in a bowl, then pour over 125ml boiling water and set aside for 5 mins. Meanwhile, put a large pan of water over a high heat. When the water is boiling rapidly, tip in the pasta and a little salt, stir once, then continue to boil for 8 mins, or following pack instructions, until the pasta is softened but still retains some bite.
  • Meanwhile, add the roasted pepper and sun-dried tomatoes to the bowl with the cashews, garlic and water, then whizz with a hand blender or in a food processor to make a smooth, creamy sauce. Stir through the basil and season with black pepper.
  • Drain the pasta, mix with the sauce in a large bowl, then divide between two bowls and add a handful of rocket to each.
