Steps:
- Preheat the oven to 350 degrees F. Brush an 11-by-17-inch jelly roll pan or rimmed baking sheet with vegetable oil and line with parchment paper; brush the paper with oil and dust with flour, tapping out the excess.
- Whisk the flour, baking powder, baking soda and salt together in a medium bowl. Whisk the granulated sugar, vegetable oil, milk, eggs and vanilla together in a large bowl. Add the flour mixture in 2 batches, whisking until incorporated. Transfer half of the batter (about 1 1/2 cups) to a separate bowl. Tint one batch red and the other batch blue with the food coloring.
- Spread the red and blue batters across the width of the prepared pan in alternating stripes, making each stripe about 2 inches wide (don't worry if the stripes aren't perfectly straight). Bake until the top springs back when pressed, 12 to 15 minutes. Let cool about 3 minutes in the pan. Dust with confectioners' sugar and spread a clean kitchen towel (not terry cloth) on top. Place a cooling rack on the towel, then invert the cake onto the rack; peel off the parchment. Roll up the cake and towel together, starting at a short end. Let cool completely on the rack, about 1 hour 30 minutes.
- Gently unroll the cake (don't worry if the ends are still curled up). Spread the jam all the way to the edges. Reroll the cake (without the towel) and trim the ends. Top with dollops of whipped cream and garnish with shaved chocolate and mint. Slice and serve!
FRESH RASPBERRY JELLY

- Use the oil to lightly grease the inside of a 600ml jelly mould. Put the gelatine leaves in a small bowl of cold water, one at a time so they don't stick together. Leave to soak while you cook the raspberries.
- Pour 300ml water into a large saucepan. Add the caster sugar, heat gently over a medium heat, stirring occasionally until the sugar has dissolved, then add the raspberries. Bring to the boil, then turn the heat right down so the mixture is barely simmering, and cook for 5 mins until the raspberries break down. Stir well, but don't mash them too much as the raspberries will break down in the heat.
- Carefully pour the raspberry mixture through a sieve set over a large heatproof measuring jug. Stir in the lemon juice, then either top up with cold water or pour some away to ensure you have exactly 600ml total liquid. Drain the water from the gelatine leaves and squeeze out any excess before adding to the raspberry mix. Stir well until the gelatine has completely dissolved, then pour into your jelly mould (see tip below). Once cold, place in the fridge and leave overnight to set.
- Turn the jelly out onto a large plate just before serving. Serve with a scoop of clotted cream or ice cream, and some raspberries.

- Preheat oven to 375°. Line a greased 15x10x1-in. baking pan with waxed paper. Grease paper; set aside., Beat eggs 3 minutes. Meanwhile, pulse hazelnuts, flour, and salt in a food processor until nuts are finely chopped, about 1 minute. Sift flour mixture, discarding any pieces of nuts in sieve.
- Whisk together eggs, yolks, and granulated sugar in a heatproof bowl set over a saucepan of simmering water, until sugar dissolves and mixture is warm, about 2 minutes. Remove from heat. Beat with a mixer on medium speed 2 minutes. Raise speed to high, and beat until pale and fluffy, about 4 minutes. - Preheat the oven to 375°F Line an 18" x 13" half-sheet pan with parchment or aluminum foil, and grease the parchment or foil.
- Beat the eggs and salt at high speed until they're foamy.
- Gradually add the sugar, beating till thick and light-colored, about 3 minutes at high speed of an electric or stand mixer.
- Gently mix in the water and vanilla.
- Stir in the flour, scraping the bowl to make sure the mixture is thoroughly combined.
- Pour the batter into the prepared pan, making sure it spreads into the corners.
- Bake the cake till it's a light golden brown, and a cake tester inserted into the center comes out clean, about 16 minutes.
- While the cake is baking, generously sprinkle confectioners' sugar on a smooth dish towel (not terry cloth) larger than 18" x 13". Gently rub/spread the sugar to cover the surface of the towel.
- Remove the cake from the oven, and turn the pan over onto the towel. Lift off the pan.
- Peel off the parchment or foil. Starting with a short end, gently roll the warm cake and towel into a log.
- Let the wrapped cake cool for 30 minutes, or until it's completely cool.
- Unroll the cooled cake, and lift it off the towel onto a clean work surface.
- Stir the jam till any lumps have smoothed out, and it's soft enough to spread easily. Spread it over the cake.
- Roll the cake up, again starting with a short end. Roll fairly tight without squashing; you may see excess jam oozing off the edge when you get to the end. That's OK; just scrape it off and use it on your toast.
- Sprinkle the cake heavily with confectioners' sugar.
- Let the cake set for an hour or so before serving. For prettiest slices, cut off each ragged end, and serve in 1" slices. A garnish of fruit, sauce, or whipped cream is always welcome.

- Preheat oven to 375°F (190°C).
- Line with parchment paper or grease and flour a 15x10 inch (40x25cm) rimmed baking sheet.
- In bowl, beat egg whites with cream of tartar.
- Gradually add ¼ cup (60 ml) of the sugar, one tablespoon at a time.
- Beat until stiff peaks form; set aside.
- In large bowl, beat egg yolks with remaining sugar until pale and thick, about 3 minutes. Mix in vanilla extract.
- In small bowl, mix flour, baking powder and salt.
- Alternate folding the egg whites and the flour into the egg yolks, trying to keep as much air in the batter as possible.
- Pour batter into the pan and spread evenly.
- Bake for 12 to15 minutes until top is golden brown.
- Lay a clean tea towel on a countertop and dust with 2 tbsp (30 ml) of icing sugar.
- Remove cake from oven. Using a knife, loosen edges of cake and invert onto towel. Remove pan and peel off paper.
- Immediately roll up the cake with the towel starting at the short edge.
- Let cool on rack. (Store like this for up to one day or roll in wax paper, wrap in foil and freeze for 2 weeks).
- Whip the whipping cream with the sugar until stiff. Set aside.
- Cut raspberries in half. If using frozen, thaw and drain. Set aside.
- Carefully, unroll the cooled cake. Do not force to lay flat.
- Spread jam on cake.
- Spread whipped cream on cake, leaving a 1½ inch (3.7 cm) margin on the short side that will be rolled up last.
- Sprinkle cut raspberries on top of whipped cream.
- Gently re-roll the cake without the tea towel.
- Place seam side down on a serving plate.
- Sprinkle with remaining icing sugar.
- Cover and refrigerate for 2 hours.
- Use a serrated knife to cut slices. Serve with raspberries and whipped cream.

- Preheat oven to 350 degrees. Butter bottom and sides of an 11-by-17-inch rimmed baking sheet. Line pan with parchment paper and butter again. Dust with flour; tap out excess. In a small bowl, sift together flour and cornstarch.
- In the bowl of an electric mixer fitted with the whisk attachment, beat egg yolks, 3/4 cup granulated sugar, vanilla, and salt on high speed until thick and pale, about 3 minutes. Transfer egg-yolk mixture to a large bowl. Wash and dry mixer bowl and whisk attachment.

- Unroll cake. Whip cream until soft peaks form; mix in jam. Spread on top of cake, leaving a 1/2-inch border. Starting at a short end, roll up cake without towel. Wrap jelly roll cake in towel. Transfer to baking sheet, seam side down to maintain cylindrical shape. Refrigerate at least 30 minutes and up to 3 hours. Dust with confectioners' sugar before slicing and serving.

- Preheat oven to 350 degrees. Line a 10 1/2" by 15 1/2" jelly roll pan with baking parchment and lightly coat with nonstick vegetable spray.
- Into a large bowl, sift the flour and baking powder together three times.
- In a mixing bowl, beat the egg yolks, vanilla, and 1/4 cup of the sugar together until thick, pale yellow and when drizzled, will hold a ribbon shape for 2 seconds on the surface. This should take about 5 minutes.

At a drizzle, gradually beat in the vanilla and corn syrup until the filling is the consistency of mayonnaise, about 2 minute more.
- Run the tip of a knife around the edge of the cake to loosen it from the sides. Dust the surface with confectioners' sugar. Flip the cake onto a dry work surface. With a spatula, spread a 1/8" thick layer of vanilla cream over the cake. Mix the preserves and water until smooth, then carefully spread 1/3 of it in a very thin layer over the vanilla cream. - Make custard: stir powder and sugar in a heavy-bottomed saucepan until blended.
- Gradually whisk in milk, sherry and rum. Cook over medium heat, stirring frequently, until mixture comes to a boil.

- Remove from heat and stir in vanilla extract.
- Press piece of plastic wrap on surface to prevent a skin from forming and chill until cooled.

RASPBERRY JELLY
I love preserves, love raspberries, but not raspberry jam. I am just not a fan of the seeds. So instead for raspberries it's jelly!

- Wash raspberries, removing any stems, leaves or rotten berries.
- Transfer clean raspberries into a large, stainless steel stock pot, and heat over low until barely warm. Crush berries (I used a potato masher) to extract juice.
- Line a big sieve or colander with several layers of cheesecloth and place over a bowl. I use a big 8-cup marked measuring bowl. Pour mashed raspberries into colander, tie cheesecloth up into a bag, and hang to drip for several hours or overnight.
- If you have a really good juicer, scoop remaining pulp out of cheesecloth bag and run through the juicer. Otherwise squeeze your cheesecloth bag on regular intervals to make sure you extract as much juice as possible.
- wash out your jars, lids and rings. put jars into canning kettle and bring to a boil. place rings and lids in a bowl of hot water.
- Measure your juice, and the pulp you get from the juicer (here's where the marked measuring bowl comes in handy :-) ). You want 4 cups of juice. Add a little fruit juice or water if necessary.
- Pour raspberry juice into your large, stainless steel stock pot, and add your dry pectin, stirring the whole time you are adding it.
- Place pot on stove on high heat, and bring to a full rolling boil, stirring often.
- pour sugar slowly into boiling rhubarb (a second pair of hands is useful for this step!), stirring as you go.
- Keep stirring to prevent sticking and burning, until mixture returns to a full boil. Continue to boil for 3 minutes, stirring constantly. Remove from heat when done.
- pour jelly into processed jars, putting on lids and rings, tightening to finger tight.
- process in water bath in your canner for 5 minutes.
- remove and place on a dry towel to cool for 24 hours. Lids should pop down fairly quickly. Enjoy!
