- Preheat oven to 325 degrees F (165 degrees C). Grease a loaf pan.
- Mash thawed raspberries in a bowl with a fork; press raspberries through a sieve to remove seeds. Mash banana in another bowl with a fork.
- Combine flour, cinnamon, baking soda, salt, and nutmeg in a bowl. Beat sugar, eggs, raspberries, banana, and vegetable oil in a bowl with an electric mixer set on low until smooth, 2 to 3 minutes. Stir flour mixture into raspberry mixture until batter is just moistened; stir in lemon extract. Pour batter into prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

RASPBERRY BANANA PIE RECIPE
Banana cream pie meets raspberry goodness in this Raspberry Banana Pie recipe that is sweet and creamy and perfect. Who would have ever guessed that raspberry and banana were such a perfect match?

Steps:
- Combine the sugar, cornstarch and salt in a medium saucepan and whisk to combine. Stir in the milk. Set over medium-high heat and cook until thickened and bubbly, stirring constantly. Reduce the heat and continue to stir for 2 more minutes. Remove from the heat.
- In a medium bowl, lightly whisk the eggs. Slowly whisk in about 1/2 cup of the hot mixture, whisking constantly. Return all of the mixture to the saucepan and return to the heat. Bring to a gentle boil, then cook and stir for 2 minutes longer.
- Remove the pan from the heat and stir in the butter and the vanilla. Let the mixture cool slightly, then press plastic wrap directly on the surface of the custard. Refrigerate for 30 minutes, or until almost room temperature.
- Slice the bananas. Spread half of the custard in the bottom of the baked pie crust. Top with a single layer of banana slices. Pour the remaining custard over the top of the bananas. Cover with plastic wrap and refrigerate for at least 6 hours.
- Combine the raspberry preserves with 2 tablespoons of warm water. Stir in half of the fresh raspberries.
- Remove the plastic wrap from the pie and spread the raspberry mixture over the top. Sprinkle the remaining fresh raspberries on top.
- Pie can be served immediately or refrigerated until ready to serve.

- Sift together flour, baking powder, baking soda, and salt.
- Cream butter with sugar until fluffy.
- Beat in eggs.
- Puree bananas, sour cream and vanilla.
- Alternate dry ingredients and banana mixture to the egg mixture.
- Beat enough to incorporate.
- Fold in raspberries and toasted nuts.
- Spoon into greased muffin tins and bake in a preheated 350 deg F oven for about 25 minutes, until puffed, browned and springy.

- Preheat oven to 350°. In a large bowl, combine the flour, sugar, baking soda and salt. In another bowl, combine the eggs, bananas, oil and water. Stir into the dry ingredients just until moistened. Fold in raspberries and walnuts. , Pour into two greased 8x4-in. loaf pans. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

- In medium saucepan, combine sugar, cornstarch and salt.
- Blend together egg yolks and milk.
- Stir small amount of milk mixture into dry ingredients, making a smooth paste.
- Gradually blend in remaining milk mixture.
- Cook over medium heat, stirring constantly, until mixture thickens and boils.
- Allow to boil for one minute.
- Remove from heat and stir in Vanilla.
- Cool quickly by setting pan in bowl of ice or cold water and stirring for a few minutes.
- Arrange Strawberries in the bottom of the pie shell, reserving about 1/4 of them for garnish.
- Pour half of the custard over berries.
- Layer bananas over custard layer and top with remaining custard.
- Cover and refrigerate for at least 3 hours.
- Garnish with reserved berries and whipped cream.
