RANCH PIZZA PIE

- Line 2 baking sheets with parchment. Heat 3 tablespoons of the olive oil in a large cast-iron skillet over medium-high heat; add the onions and cook until softened and slightly browned, about 20 minutes. Stir in the oregano, garlic and red and yellow peppers and cook for another 5 minutes. Set aside to cool for 20 minutes.
- Heat the remaining 1 tablespoon olive oil in another large cast-iron skillet over medium-high heat. Add the sausage and cook, using the back of a wooden spoon to break up the sausage meat into small bits, until browned, 10 to 15 minutes. Set aside to cool for 20 minutes.
- On a lightly floured surface, roll out each puff pastry sheet to about 13 inches long and 10 inches wide. Place one of the puff pastry pieces on each lined baking sheet; set aside the other two. Whisk the egg in a small bowl with 1 tablespoon water.
- Sprinkle 2 cups of the Monterey Jack cheese over one of the puff pastry sheets on a baking sheet, leaving a 1/2-inch border around the edges of the pastry. Continue layering with half the caramelized onions and peppers, sausage and pepperoni; finish with half the mozzarella slices. Brush the border of the puff pastry with the egg wash, lay one of the remaining puff pastry pieces over top and use a fork to crimp the edges. Using a sharp paring knife, cut three 1 1/2-inch vents in the top. Put the pie into the fridge to chill for 30 minutes before cooking. Repeat with the other puff pastry pieces and layering ingredients.
- Preheat the oven to 425 degrees F.
- Brush one of the pies with the egg wash. Bake on the bottom rack until the pastry is nicely browned, about 20 minutes.
- Wrap the second pie in plastic wrap on the baking sheet, then in aluminum foil; freeze. When ready to bake, preheat the oven to 425 degrees F. Unwrap the pie and brush it with egg wash. Bake from frozen on the bottom rack until the pastry is nicely browned, about 30 minutes.
SPAGHETTI PIE

- Preheat the oven to 350 degrees F. Grease a 9-by-3-inch cake pan with cooking spray.
- Bring a large pot of salted water to a boil. Add the spaghetti and cook for 3 to 4 minutes less than the package recommends, so that it is very al dente. Drain and reserve.
- In a large skillet over medium-high heat, brown the beef, 5 to 8 minutes; season with salt and pepper. Transfer the beef to a paper towel-lined plate to drain. Wipe the skillet clean with a paper towel. Heat the olive oil in the skillet over medium heat and saute the onions until translucent, 4 to 5 minutes. Set aside.
- In a large bowl, whisk together the marinara, ricotta, parsley, eggs, 1/2 cup of the Parmesan, 1 teaspoon salt and 1/4 teaspoon pepper. Add the cooked spaghetti, beef and onions and toss to evenly coat. Transfer to the prepared pan, top with the mozzarella and sprinkle with the remaining 2 tablespoons Parmesan.
- Bake until the cheese is bubbling and golden brown, 25 to 30 minutes. Let rest for 5 minutes, then cut into wedges and serve.

- Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente, 10 to 12 minutes. Drain.
- While the pasta is cooking, whisk the eggs, yolks, Hidden Valley® Original Ranch® Salad Dressing and Seasoning Mix, a small pinch of black pepper, and cheese together in a mixing bowl. Set aside.

Been on a ranch kick lately, so I visited the Hidden Valley and discovered this recipe. People really seem to enjoy it, and it's certainly different from the traditional spaghetti pie. I haven't tried it yet, but thought I'd share it with you.

- Preheat oven to 350 degrees. Cook pasta according to package directions and drain. In a large bowl, whisk ranch dressing with ricotta cheese and eggs. Add meat and spaghetti, and stir until combined. Place pasta in a 9 inch baking dish and sprinkle evenly with the mozzarella cheese. Cover and bake for 30 minutes. Steps:
- Break spaghetti in half.
- Cook in boiling salted water until done.
- Drain.
- While still warm, combine spaghetti with eggs and Parmesan.
- Pour into a well greased 10 inch pie plate and pat mixture up and around sides with a spoon.
- Melt butter, add onion and saute until limp.
- Stir in sour cream and spoon over spaghetti.
- Remove sausage from casing, crumble and cook in skillet until done.
- Drain.
- Add tomato paste and water to sausage.
- Simmer 10 minutes.
- Spoon sausage on top of sour cream/spaghetti mixture.
- Bake at 350 degrees for 25 minutes.
- Arrange Mozzarella on top and return to oven until cheese melts.
- Note: This is yummy and freezes well before baking, so make 2 at a time.
