GERMAN PLUM CAKE

German Plum Cake image

This cake is actually known as Zwetschgendatschi in Bavaria, where it is most popular. Roughly translated from Bavarian to German, it would be called Pflaumenkuchen or plum cake in English. BUT Zwetschgen aren't ordinary plums, a Datschi isn't really a Kuchen, and a Kuchen is most definitely not a cake! Or at least not a tall, spongy cake -- it's flatter. Ideally, for this dessert you want the slightly tart Italian plums. If you do have to use another type of plum, be careful the variety you choose isn't too juicy.

BAVARIAN CREAM CAKE

Bavarian Cream Cake image

Provided by MarylandMom

Time 5h

Yield 12

Number Of Ingredients 18

1 envelope unflavored gelatin
1/2 cup cold water
4 eggs, separated
1 pint milk
1 cup sugar
2 tablespoons flour
1 pinch salt
1 teaspoon vanilla extract
1 teaspoon almond extract
1 1/2 pint whipping cream
1 angel food cake, torn into chunks
Optional Garnishes
additional whipped cream
coconut
almonds
strawberries
bananas
peaches

Steps:

  • Dissolve gelatin in cold water. To make custard, combine egg yolks, milk, sugar, flour, and salt in top of double boiler and cook until it thickens on spoon. While hot, dissolve the gelatin and water mixture in the custard and stir until well distributed through the custard. Cool. When cold, add vanilla and almond extract. Beat egg whites until stiff and dry, then fold into the custard. Beat the whipping cream and fold into mixture. Rinse an angel food cake pan with cold water and leave a few drops in it; pour 1/3 of custard on bottom. When it is thick enough, drop bits of angel food cake into it. Completely cover this layer of custard with cake (approximately half the cake). Cover cake with another 1/3 custard. Repeat cake layer and remaining 1/3 custard. Set this in the refrigerator overnight, or make in the morning to serve at night. Turn mold out onto plate. After it is firm, you may "ice" it with whipped cream, which has been sweetened with sugar to taste. This may be topped with coconut, almonds, strawberries, bananas, or peaches, if desired.

CHOCOLATE RASPBERRY BAVARIAN CAKE

Chocolate Raspberry Bavarian Cake image

Categories     dessert

Yield 1 10-inch cake, about 12 servings

Number Of Ingredients 23

1/4 cup sugar
1/3 cup water
1/4 cup raspberry liqueur
1/2 cup heavy whipping cream
4 ounces semisweet chocolate, cut into 1/4-inch pieces |
2 tablespoons (1/4 stick) unsalted butter
Two 10-ounce packages frozen raspberries
3/4 cup sugar
3/4 cup raspberry liqueur
1 1/2 envelopes unflavored gelatin
2 cups heavy whipping cream
One 9-inch round Chocolate Genoise, baked and cooled (recipe below)
1 cup heavy whipping cream
Chocolate shavings
1/2 -pint basket raspberries
Confectioners' sugar
CHOCOLATE GENOISE
1/3 cup cake flour
1/3 cup cornstarch
1/4 cup alkalized (Dutch process) cocoa powder
3 large eggs plus 3 large egg yolks
3/4 cup sugar
Pinch salt

Steps:

  • Finishing:
  • You will need 1 10-inch springform pan.
  • For the syrup, combine the sugar and water, bring to a boil and cool. Stir in the liqueur.
  • For the chocolate filling, bring the cream to a boil. Remove from heat, add the chocolate, and allow to stand 2 minutes. Whisk in the butter until smooth and cool.
  • To make the Bavarian, combine the raspberries and sugar in a saucepan. Bring to a boil and simmer 10 minutes. Use a food mill or a fine sieve to puree and strain away seeds. Cool. Combine the liqueur and gelatin in a small, heatproof bowl and soak 5 minutes. Place the bowl over simmering water to make liquid again, then whisk into cool puree. Whip cream and fold it in.
  • Slice the genoise into two layers and place one in the bottom of a 10-inch springform pan. Moisten with half the syrup. Whip the cooled chocolate filling to lighten and spread half over cake layer; pour on half the Bavarian. Repeat with remaining cake layer, syrup, chocolate filling, and Bavarian. Chill to set.
  • To unmold, run a small knife between dessert and mold and lift off side of pan. Whip the cream and spread over sides of dessert. Press some of the chocolate shavings into cream. Arrange raspberries on top in two concentric circles around the top rim, then sprinkle center with shavings and confectioners' sugar.
  • One 9 by 2-inch round layer pan, or a 9-inch springform pan, buttered and the bottom lined with a disk of parchment or wax paper Set a rack at the middle level of the oven and preheat to 350 degrees. Sift together the cake flour, cornstarch, and cocoa through a fine-meshed strainer over a piece of waxed paper to break up any lumps in the cocoa. Set sifted ingredients aside with the strainer. Whisk together the eggs yolks, sugar, and salt in the bowl of an electric mixer. Place the bowl over a pan of simmering water and continue whisking gently until the mixture is lukewarm, about 100 degrees. This should take only a minute or two. Whip with the electric mixer on high speed until the mixture is cooled and increased in volume, about 3 to 4 minutes. Remove bowl from mixer and sift in dry ingredients, in three additions gently folding each third in with a rubber spatula. Pour the batter into the prepared pan and spread the top even with a spatula. Bake the layer about 30 minutes until it is well risen and the center is firm to the touch. If necessary, loosen the layer from the side of the pan with a small knife or spatula and invert the cake onto a rack. Place another rack on the cake and invert again. Remove the top rack, so that the layer cools right side up, still on the paper. Yield: 1 round layer, 9 inches in diameter by 2 inches deep

SANDRA'S GERMAN APPLE CAKE

Sandra's German Apple Cake image

My mother sent me this unusual recipe back in the 70's. I was baking rolls in a health food restaurant at the time. The restaurant wanted me to come up with a dessert for the menu, so I made my mother's recipe using wholewheat flour, turbinado sugar and organic walnuts*. It was an enormous success! You should note there is no liquid in this recipe. The moisture that binds the ingredients comes from the eggs, oil and fresh apple slices. A pretty good electric mixer and/or strong arm is required to incorporate all the flour no matter what kind of flour you use. The result is more like a stiff dough than any cake batter I've ever seen. I continue to make this cake with wholewheat flour and turbinado sugar because I like the result. You, of course, may use any flour and sugar you want. *Nostalgia Note: In 1974, organic walnuts came from a tree in their original packaging called a shell. To use the nut, the shell had to be broken with something hard called a nut cracker and then the nutmeat was picked out; repeat until the amount of nutmeats equal what the recipe calls for. Today, walnuts come in a bag and if there are any shells involved you can lodge a complaint.

Time 1h45m

Yield 16 serving(s)

Number Of Ingredients 14

2 large eggs
1 cup oil (I use peanut oil)
2 cups sugar (I use turbinado sugar)
1 teaspoon vanilla
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
2 cups flour (I use wholewheat)
4 cups peeled cored and sliced baking apples (I use Granny Smith)
1 cup coarsely chopped walnuts
8 ounces cream cheese
2 tablespoons butter
1 teaspoon vanilla
3 cups powdered sugar

Steps:

  • Cake: Beat the eggs until light.
  • Add and beat after each ingredient: oil, sugar, vanilla, baking soda, cinnamon, salt.
  • Add the flour in 1/2 cup increments. It will be stiff.
  • Fold in the walnuts.
  • Fold in the apple slices.
  • Pat the dough into an oblong cake pan that's been oiled and dusted with flour.
  • Bake at 350°F for 45 to 60 minutes (or until a knife inserted in the middle comes out clean).

BAVARIAN SUGAR CAKE

Bavarian Sugar Cake image

This recipe is like one my Grandma use to make when I was a child. It is a yeast dough, covered with a cinnamon-sugar mixture and then cream is poured over that. The cream makes a gooey topping for the sugar cake.

Provided by Carol

Categories     Breads

Time 3h

Yield 1 13x9 pan, 15 serving(s)

Number Of Ingredients 12

1/2 cup whole milk
1/2 cup water
1 egg
1 teaspoon almond extract
1/4 cup unsalted butter
1/3 cup sugar
1 1/2 teaspoons salt
3 cups bread flour
1 tablespoon yeast
1/3 cup sugar
1 teaspoon ground cinnamon
1 cup heavy cream

Steps:

  • Place all of the dough ingredients into the pan of your bread machine. Program the machine for Dough or Manual cycle and press Start. Check the dough after about 10 minutes and adjust the consistency by adding flour or water as needed; the dough should be fairly sticky and slack. (I added a couple Tbsp water).
  • When the machine has completed the cycle, remove the dough and turn it out onto a lightly floured work surface. (I let it rise an extra 40 minutes after the cycle was complete and then I turned it out onto a buttered pastry board not floured and let it rest for about 10 minutes before rolling out).
  • Grease a 9 x 13 inch pan. Press the dough into the prepared pan with your fingers, stretching it to cover the bottom of the pan. (I rolled it out on buttered pastry board first and then fit it into the pan).
  • Cover the pan with plastic wrap and allow the dough to rise until it is doubled in bulk, 30 to 45 minutes. With two fingers, punch deep holes all over the dough. (When punching holes in dough, if holes do not remain, it has not risen enough).
  • In a small bowl, combine sugar and cinnamon; sprinkle it over the dough. Drizzle the cream evenly on top.
  • Bake the cake in a preheated 350º oven for 25 to 30 minutes, or until a light golden color. Remove cake from oven, and serve it warm from pan.

  • Käsespätzle. (Alpian cheese noodles with fried onions) Our first stop is this sinfully delicious Käsespätzle, my favorite! It’s kind of an upgraded mac and cheese from the Alps, it’s not solely a Bavarian/Southern speciality but also Austrian and Swiss.
  • Weisswurst. “white” veal sausage. Second spot goes to the famous weisswurst, or white sausage in english. This time this meal you’ll get only in Bavaria before 12 o’clock.
  • Obaztda and Brezel. Creamy cheese and pretzel. Oh! another favorite of mine, another cheese one, you’ll find it in every single restaurant, biergarten or Bavarian fridge for that matter.
  • Leberkässemmel. Small kind of bologna sandwich with sweet mustard. This one is literally called “liver cheese sandwich” although it contains no cheese whatsoever.
  • Wurst and Sauerkraut. Sausages and sauerkraut. No surprise this one is making the list… unavoidable choice if you ever lay foot in Germany. Okay… this one dish is all over Germany, not solely in Bavaria.
  • Schnitzel and potato salad. Battered and fried meat piece. Those are well know around Germany also, although it’s coming from Austria. There is a wide variety of Schnitzel, some are made with veal, turkey, chicken, etc.
  • The Schupfnudeln. Potato dumplings or noodles. This one is a potato noodle or dumpling quite similar to gnocchi. It’s a popular dish throughout south Germany and Austria, changing slightly it’s form from place to place.
  • Kaiserschmarnn. Scrambled pancake. This one is a sweet one and another one originating from the Alpine region of Austria/Germany. It’s a freshly done scrambled pancake lightly caramelized and serve with a side of apple purée, cherry, almonds or other fruits.
  • Schweinshaxe and Knödel. Roasted Pork knuckle and potato dumpling. This meal is in every Bavarian biergarten and consist of a big pork knuckle which is marinated for a few days, then slowly roasted at low temperature.
  • Zwetschgenkuchen. plum cake. Another sweet seasonal dessert, this one is a sheet cake pinched with those Damson plum, a purple variety of plum growing across Europe.
