HIDDEN VALLEY RANCH SAUSAGE STARS
Found this recipe a long time ago in McCalls Magazine, December 1992 issue. They look really cute when served and taste delicious.

Steps:
- 1. Lightly grease muffin tin and press one wonton wrapper in each cup. Brush or spray with oil. Bake 5 minutes, or until golden brown, at 350 degrees. Remove from tins, place on baking sheet.
- 2. In bowl, combine cooked sausage, cheeses, dressing, olives, and red pepper.
- 3. Fill wontons with sausage mixture. Bake at 350 degrees for 5 minutes or until bubbly.

- Brown sausage and drain off any grease, set aside. Mix ranch dressing according to package directions. Mix the sausage, prepared dressing, bell pepper (if using) and cheese together and chill for 30 minutes. Preheat the oven to 350 degrees. Place one wonton wrapper in a lightly greased standard size muffin tin. Bake 5-7 minutes until lightly golden brown. Watch them carefully so they don't get too brown. Remove from oven and let cool a bit. When cooled add two tablespoon of the sausage mixture. Return to the oven and bake an additional 5-7 minutes until cheese melts. Let cool just a bit and serve.

- Lightly press wonton wrappers onto the bottoms and up the sides of greased miniature muffin cups. Bake at 350° until edges are browned, about 5 minutes., In a large skillet, cook sausage over medium heat until no longer pink, breaking into crumbles; drain. - In a skillet, cook sausage until no longer pink; drain. Add cheeses, peppers, chilies, olives and dressing mix; mix well. Set aside. Brush both sides of wrappers with oil; press onto the bottom and up the sides of greased muffin cups. Bake at 350° for 5 minutes or until golden brown. Transfer to a baking sheet. SAUSAGE-FILLED STARS
This is a fabulous appetizer; it does take a little time to prepare, but the taste is well worth it. If you want to freeze them for later use, they turn out just as good; just pop them in the freezer after filling the cups and then bake a bit longer then in the original recipe.

- Preheat oven to 350 degrees F (175 degrees C).
- Line each cup a mini-muffin pan with a wonton wrapper, carefully pressing each into the shape of a cup. Take care to not tear the wrapper as they will tear easily.
- Bake in preheated oven until golden brown, 8 to 10 minutes. Transfer 'cups' to a baking sheet; repeat until remaining wontons are all baked.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned completely, 5 to 7 minutes; drain and discard grease. Set sausage aside to cool.
- Stir cooled sausage, Colby cheese, green onions, red bell pepper, green bell pepper, and ranch salad dressing together in a bowl; spoon into the wonton cups.
- Bake in oven until cheese has melted and is beginning to bubble, 15 to 20 minutes.

I had these at a baby shower and fell in love. They are super easy to make and EVERYONE will be impressed! You can use either hot or sweet sausage or even ground beef. To add more flavor, you can also add some green onion to each. There are many different additions you can make.

- Preheat oven to 350°.
- Lightly spray mini muffin tins with cooking spray.
- Lightly brush wonton wrappers with olive oil on both sides and press into mini muffin tins, creating a cup.
- Bake until golden brown (approximately 7 minutes).
- Remove wrappers from muffin tins and place on baking sheet.
- Blot cooked sausage with paper towels to remove excess grease.
- Fill each won ton cup with a small amount of sausage.
- Put a dab of ranch dressing on top of the sausage.
- Add 2 olive slices.
- Add a dab of salsa.
- Top with cheese and bake until melted.

SAUSAGE STARS

- Use mini muffin pans to form the "won ton cups". Spray your mini muffin pan with non stick spray and place one won ton wrapper over each space and press into pan with fingers. (Pampered Chef makes a little wooden dowel with round ends on each just for this and works great!) Bake in 350 degree oven till lightly browned and then take out of oven and put on cookie sheet. Repeat until all your won ton wrappers are gone.
- While your baking the shells brown the sausage and onion together till onion is almost caramelized. Drain grease. Let cool a little bit and add the cheese, dry ranch package, sour cream, chopped jalapeños and salsa. Stir together till all ingredients are well combined. Spoon mixture into shells and bake in 350 degree oven till bubbly. Approximately 10 to 15 minutes.
- Serve with salsa and sour cream on top!

EASY SAUSAGE CUPS (LIKE SAUSAGE STARS)
This is a variation of Sausage Stars/Sausage Cup recipes that use wanton wrappers and ranch dressing. My version uses Tostitos Scoops (bowl shaped corn chips) and cream cheese for some of the ranch dressing. I made these for Christmas Eve and Super Bowl Sunday, and they were a huge hit on both occasions! You can make the filling in advance and refrigerate until you are ready to assemble and bake. If I am taking these to a party, I fill the shells before I leave home and bake when I arrive at the party. They are also great with regular ranch dressing, but we prefer parmesan peppercorn flavor.

Steps:
- Preheat Oven to 375.
- Brown sausage and drain well on paper towels.
- Return sausage to skillet and stir in cream cheese until melted.
- Remove from heat and cool slightly.
- Stir in ranch dressing and sharp cheddar cheese.
- Fill scoops with sausage-cheese mixture. Arrange the filled scoops on a cookie sheet or baking pan. For less greasy cups, bake on a wire rack set on top of the cookie sheet.
- Bake 8 to 12 minutes, or until cheese is melted and bubbly.
