CRUNCHY VEGGIE RANCH EGG SALAD



Crunchy Veggie Ranch Egg Salad image

6 hard-boiled eggs
2 green onions, chopped, greens only
1/2 small red pepper, finely chopped
1 carrot, peeled and finely chopped
1 large celery stalk, finely chopped
1/2 cup peas, cooked and cooled
2 tablespoons sweet pickle relish
1/3 cup Hidden Valley® Original Ranch® Dressing
Salt and pepper

Steps:

  • Place chopped eggs in a medium bowl, and mash gently with a fork until pieces are small and uniform. Add green onions, carrot, celery and peas and toss with a spoon. Top with relish and Hidden Valley® Original Ranch® Dressing and stir. Season with salt and pepper to taste. For school lunch: pack in small reusable container with a side of whole grain crackers or melba toasts for dipping, spreading, or scooping. Or make it into a sandwich with whole grain bread.

An updated version of an old favorite. A wonderfull topping for a luncheon salad, on finger rolls for baby or bridal showers or as an appetizer spread for crackers or cocktail bread. Another recipe from Hidden Valley.

6 hard-boiled eggs, coarsely chopped
1/4 cup diced celery
3 tablespoons crisp-cooked crumbled bacon
1 tablespoon diced green onion
1/4 cup bottled ranch dressing
8 slices pumpernickel bread
tomatoes or sliced pimento stuffed olive (optional)

Steps:

  • Combine chopped eggs with celery, bacon, green onion and dressing in a mixing bowl.
  • Chill until just before serving.
  • Spread salad evenly on 4 pieces of bread, arrange lettuce, tomato or sliced olives on top, if desired.
  • Top with remaining slices of bread.

1/4 cup chopped green onion (4 medium)
1/4 teaspoon salt
1/4 teaspoon fresh coarse ground black pepper
1/2 cup ranch dressing
6 plain croissants, split
3 cups torn lettuce

Steps:

  • Cut each egg in half.
  • Remove yolk; place in large bowl. Mash yolks with fork.
  • Stir in onions, salt, pepper and ranch dressing.
  • Chop egg whites; stir into yolk mixture.
  • To make each sandwich, top bottom half of 1 croissant with about 1/2 cup lettuce and 1/2 cup egg mixture. Cover with top half of croissant. Repeat for remaining sandwiches.
