2 red onions, chopped
1 pound tomatillos, husked, rinsed, and halved
3 jalapenos, stemmed, seeded and halved
2 garlic cloves
4 tablespoons canola oil
2 pounds boneless pork shoulder, cut into 1-inch cubes
5 cups chicken stock
1 cup chopped fresh cilantro leaves
Salt
Pepper
10 flour tortillas, warmed

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, toss the onions, tomatillos, jalapenos, and garlic with 1 tablespoon of the olive oil and spread on a baking sheet. Roast until soft and starting to brown, about 20 to 30 minutes, stirring twice during roasting.
  • Meanwhile, in a large Dutch oven over medium-high heat, add the oil and heat. Brown the pork, in batches, until well-browned. When browned, add all of the pork back to the pan and cover with chicken stock. Add the roasted vegetables, cover the pan and place in the oven. Cook until the pork is very tender, about 1 1/2 hours.
  • While pork is cooking, place the cilantro in a food processor. Add 2 tablespoons of water and puree. Remove the pork from the oven and stir in the cilantro puree. Season, to taste, with salt and pepper. Serve with warm flour tortillas.

A classic Colorado green chili, with green chiles, tomatoes and thickened with flour.

2 lbs pork roast
4 tbsp olive oil
8 cups chicken broth (or 4 cans)
2 cups water
2 cups chopped onion
8 cloves garlic, pressed
½ lb tomatillos (about 8 medium), chopped
1-2 serrano chiles, minced
1 14.5 oz can diced tomatoes with juice
2 cups mild diced green chiles
1 cup hot diced green chiles
1½ tbsp ground cumin
½ tsp oregano
½ tsp cayenne pepper
1 cup flour
salt & pepper to taste

Steps:

  • Cut the pork roast in half (to sear more of the surface) and smear with 2 tbsp olive oil. Generously sprinkle salt and fresh ground pepper on all sides. Sear on medium high heat.
  • Put in a crockpot, add the chicken broth and water, and cook on high for 1 hour. Reduce heat to low and cook another 2-3 hours.
  • Meanwhile, sauté onion, garlic, tomatillo, and serrano in 2 tbsp olive oil. Puree 1 cup mild green chiles with ½ cup of the liquid from the crockpot. Set aside.
  • When done (after 3 hours of cooking), fish the pork out of the crockpot and set aside to cool for 15 minutes. Take 3 cups of the broth from the crockpot and set aside to cool for 15 minutes.
  • Meanwhile, add the onion mixture, spices, tomatoes, and all the green chiles (including pureed).
  • Gradually add the broth to the flour, stirring constantly to ensure no lumps. Then pour the flour mixture into the crockpot gradually, stirring constantly to blend in.
  • Shred the pork with a fork and add to crockpot. Cook on low for another hour, stirring occasionally.
  • Serve with tortillas or use as a sauce over eggs, burritos, or whatever!

I grew up in Colorado and so I grew up loving green chili! When I moved to North Carolina 4 years ago I was surprised and very disappointed to learn that NO ONE here had ever even heard of green chili. I have spent the last year going through different recipes, I think I have finally got it nailed through a great mix of about 6 of the recipes I tried. Jalapeños may be added to taste if you like the flavor. Chili can be served over any burritos, served as a dip with tortilla chips, or as a main course with warm tortillas. Recipe makes a lot but it freezes well so you can enjoy it for a few months without having to spend too much time cooking.

2 lbs pork roast
4 tablespoons olive oil
7 (14 ounce) cans chicken broth
13 cups water
1 large yellow sweet onion
1 head garlic
3 anaheim chilies
3 medium tomatillos
4 serrano chilies
1 (14 1/2 ounce) can stewed tomatoes, with juice
6 (4 1/2 ounce) chopped green chilies
2 tablespoons ground cumin
1/2 teaspoon oregano
1/2 teaspoon cayenne pepper
1 cup flour

Steps:

  • Sear pork in 2 Tablespoons olive oil. Add 4 cans chicken broth and 6 cups of water, bring to a boil, and simmer until pork falls apart (aprox 3 hours).
  • Meanwhile, chop onion, garlic, and anaheims. Saute in 2 Tablespoons olive oil. Chop tomatillos, serranos, and stewed tomatoes. Puree 2 cans chopped green chilis. Set all aside.
  • When done, sift pork out of juice and shred, then add back.
  • Add all ingredients except flour and 2 cups water, bring to a boil, reduce heat and simmer for at least one hour.
  • In a separate container mix 2 cups water and 1 cup flour, shake well (grandmas rule was 100 shakes). Add mixture to chili slowly to achieve desired thickness.

1 cup all-purpose flour
1/2 teaspoon cayenne pepper
1/2 teaspoon cumin
1 teaspoon seasoning salt
1/4 teaspoon black pepper
3 tablespoons butter or 3 tablespoons margarine
1/2 cup red onion, coarsely chopped
red wine
1/3 cup green chili, canned, chopped
1 cup pinto beans, canned, drained
1 cup cheddar cheese, grated

Steps:

  • Cut pork loin into 1 inch slices. Pound slightly.
  • Mix together the flour with cayenne pepper, cumin, seasoned salt and the pepper.
  • Roll pork pieces in seasoned flour.
  • In a large skillet, saute pork, red onion and green or red pepper in butter until golden. Add rd wine to skillet along with chopped green chiles.
  • Cover skilled and simmer for 30 minutes. Add pinto beans and continue cooking for 15 more minutes.
  • Before serving, top hot pork with grated cheese.

These pork chimichangas are delicious and easy to make. I have been perfecting this recipe for the past 15 years. They are baked, instead of deep fried. This recipe makes 10 entree size or 18 lunch sized chimis. They are also an economical choice with only 7 common ingredients. You will love the flavor of these.

3 lbs pork butt (Pork Shoulder)
2 cups water
1 tablespoon oregano leaves
1 tablespoon ground cumin
1 teaspoon ground black pepper
1 teaspoon salt
1 tablespoon white vinegar
2 (7 ounce) cans diced green chilies
10 burrito-size flour tortillas
4 tablespoons butter, softened

Steps:

  • Cut pork butt into 1" cubes. Place cut pork into large dutch oven, cover and cook over medium heat for 10 minutes. Uncover, stir and continue cooking until meat is well browned and juices are almost gone. This will take about 10-15 minutes.
  • Then add water to pan, enough to cover meat completely. Turn heat up to high and cook until water boils, then cover and reduce heat to simmer. Cook for 1 hour and 15 minutes.
  • While meat is cooking, prepare the flour tortillas. Spread a light amount of butter on both sides of each tortilla, set aside in a pile. When you are done buttering them, cover with the plastic bag they came in, so they will remain pliable.
  • Spray a 13" x 9" baking dish with non-stick spray. Set aside.
  • When timer is done for the pork, uncover and turn heat up to high. Cook over high heat until all the water is gone from the pan. When that is done, reduce heat to low and add crushed oregano leaves, cumin, salt, pepper, vinegar and diced green chiles. Stir well and then turn heat off.
  • Shred the meat using to large forks.
  • Set your oven to 500 degrees.
  • To assemble each chimichanga: Place 3-4 tablespoons of meat mixture on lower 3rd of tortilla, spoon meat mixture to within a 1/2″ of each side of tortilla. Then take left side and fold over meat, do the same on right side, like the top flap of an envelope. Then roll up towards 12 o'clock while keeping sides overlapping the filling just slightly.
  • Depending on the size of your tortillas it may take two turns, set them seam side down on a baking sheet. Once they are all in the pan, spread butter on the tops of the chimichangas.
  • Then bake in oven on middle rack at 500 degree for 6-8 minutes.
  • Depending on your oven, start checking the chimi's after 6 minutes. You want them golden brown and delicious.
  • Remove from oven and serve with freshly made guacamole, sour cream and pico de gallo.
  • Cooks Notes: Depending on the size of your flour tortillas and whether you want to make 'Entree' or 'Lunch' size chimichangas, this recipe will make up to 18 chimi's. If you use 3 tablespoons of filling in each you will get 18 smaller, or skinnier, chimichangas.

RAMEN WITH CHARRED SCALLIONS, GREEN BEANS AND CHILE OIL

Scallions can be so much more than a garnish. Raw scallions bring an assertive pungency, but when cooked, they take on a sweet tenderness that is very pleasing to the palate. In this vegan recipe, treat scallions as you would a bunch of greens. Take cues from the Chinese cooking technique used for stir-fries, and add the scallions to very hot oil to let them "bao" (to crack, explode or burst), drawing out their natural aroma. Those packets of ramen noodles stashed in your pantry are perfect for this quick yet intensely satisfying weeknight noodle dish. The chile oil makes just enough for this dish, so if you want extra for future meals, make double.

2 tablespoons red-pepper flakes (see Tip)
1 1/2 teaspoons kosher salt
1/2 cup neutral oil, such as grapeseed, vegetable or canola
1 (1-inch) piece ginger, peeled and finely chopped
2 garlic cloves, finely chopped
2 teaspoons toasted white sesame seeds
1 teaspoon sesame oil
Kosher salt
4 (3-ounce) packages ramen noodles, seasoning packs discarded
2 bunches scallions (10 to 12 scallions), white and green parts separated and cut into 2-inch pieces
2 to 3 tablespoons neutral oil, such as grapeseed, vegetable or canola
10 ounces green beans, trimmed and halved diagonally
1 (2-inch) piece ginger, peeled and julienned
White pepper
1 tablespoon toasted white sesame seeds

Steps:

  • Prepare the chile oil: Add the red-pepper flakes and salt to a heatproof bowl. Place the oil, ginger and garlic in a small saucepan, and heat over medium until it bubbles, 2 to 3 minutes. Remove from the heat and very carefully pour the hot oil over the red-pepper flakes. Add the sesame seeds and sesame oil, and stir well. Set aside while you make the rest of the dish. (Chile oil can be stored in an airtight jar at room temperature for up to a month and indefinitely in the refrigerator.)
  • Prepare the noodles: Bring a large pot of salted water to a boil. Add the ramen and cook according to package instructions, about 3 minutes, until the noodles are just tender. Drain, rinse with cold water and drain well again.
  • Slice the white parts of your scallions lengthwise, in half or quarters, depending on thickness, to make cooking faster.
  • Heat a wok or large (12-inch), deep skillet on high. When smoking hot, add 1 tablespoon of oil, toss in the green beans and season with salt. Cook, tossing the beans, for 2 to 3 minutes, until charred. Remove the beans from the wok, and set aside.
  • Heat the same wok or skillet over high, and when smoking, add 1 to 2 tablespoons of oil, along with the scallions (white and green parts) and the ginger. Allow the scallions and ginger to sizzle for 20 to 30 seconds, to release their aromas, then stir-fry for 2 to 3 minutes, until the scallions have a nice scorch.
  • Add the green beans and noodles back to the pan, along with 2 or 3 tablespoons of the chile oil (reserve some for serving), and season with salt and pepper. Toss well to combine, just until the noodles are heated through. To serve, divide the noodles into bowls, top with toasted sesame seeds and more chile oil.

2 cups stewed tomatoes
3 tablespoons bacon grease
1 (6 ounce) can tomato paste
1/3 cup flour
3 cups water
3 medium onions, chopped
2 1/2 teaspoons salt
6 garlic cloves, minced
1/2 teaspoon dried ground Mexican oregano
2 (16 ounce) cans whole green chilies

Steps:

  • Melt bacon grease in a skillet over med-high heat. Put flour into a paper bag and shake the meat with the flour to coat meat. Add the meat to the bacon grease a little at a time and brown well & evenly.
  • Remove the meat to a 5 quart Dutch oven. Add the onions & garlic to the skillet and sauté until translucent. Add these to the pork in the pot. Stir in the remaining ingredients, bring pot to a boil, and keep stirring every 2-3 minutes.
  • When boiling lower heat to low & simmer for 45 minutes. Taste, adjust seasonings as per personal taste, & cook for 30 minutes or more.
  • A Di-neh recipe.

  • If using freshly roasted green chile, remove the skin, deseed and dice. For frozen green chiles, thaw and dice if they don't come chopped, though most frozen green chiles tend to come diced. You can also used canned green chiles, though fresh or frozen is my preference.
  • In skillet, heat olive oil over medium-high heat. Liberally salt and pepper the pork shoulder roast. Once the oil is hot, cook the pork on all sides until it develops a nice crust. This should take about four to five minutes on each side. Remove the pork, add the onion and turn heat down to medium. Cook for about five minutes. Add the garlic and cook for about 30 seconds.
  • Put the pork back in the stockpot and add the chiles, cumin, spiced paprika, pepper, chicken broth and potato to pot. Bring to a low boil. Reduce heat to low, cover and simmer until the pork is fork tender, about two to three hours.
  • When the pork is tender, remove the roast from the stockpot and shred with two forks once it's cool enough to handle. Discard any bones.
