SHAKSHUKA WITH CHICKPEAS AND SWISS CHARD

Shakshuka with Chickpeas and Swiss Chard image

Shakshuka is a dish in which eggs are cooked in a spiced tomato sauce with aromatics, such as onion and garlic. This take on shakshuka includes canned cherry tomatoes, chickpeas and Swiss chard. For the perfect even cook on the egg, be sure to use room temperature eggs.

Provided by Food Network Kitchen

Time 40m

Yield 4 servings

Number Of Ingredients 12

8 large eggs
2 tablespoons extra-virgin olive oil
1 onion, thinly sliced root to tip
2 cloves garlic, finely chopped
3 tablespoons mild harissa, plus more for serving
2 teaspoons ground cumin
Kosher salt and freshly ground pepper
1 15-ounce can cherry tomatoes
1 15-ounce can chickpeas, not drained
1/2 bunch Swiss chard, leaves only, chopped (about 2 1/2 cups)
8 slices sourdough bread
1/3 cup chopped fresh parsley

Steps:

  • Preheat the oven to 400˚ F. Add the eggs (in their shells) to a large bowl of warm water and set aside. This will bring the eggs to room temperature and make for more even cooking.
  • Heat the olive oil in a large cast-iron skillet over medium heat. Add the onion and cook, stirring, until softened, 6 to 7 minutes. Stir in the garlic and cook until softened, about 1 minute. Add the harissa, cumin, 3/4 teaspoon salt and a few grinds of pepper; toss to coat the onion. Add the cherry tomatoes, chickpeas with their liquid and 1/4 cup water. Increase the heat to medium high, stir to combine and bring to a simmer. Add the Swiss chard in batches, stirring until wilted before adding more. Continue cooking until slightly thickened, about 3 minutes. Remove from the heat.
  • Remove the eggs from the water and crack them into a bowl or large spouted measuring cup. Make 8 wells in the tomato mixture and gently slip 1 egg into each well.
  • Transfer the skillet to the oven. Bake until the egg whites are fully set and firm to the touch, 8 to 12 minutes. Meanwhile, put the bread on a baking sheet and toast in the oven until browned, 10 to 12 minutes.
  • Top the shakshuka with the parsley. Divide among shallow bowls or plates; serve with the bread and more harissa.

QUINOA WITH CHARD AND CHICKPEAS

Quinoa With Chard and Chickpeas image

This is based on a recipe from "Wild About Greens" by Nava Atlas with some changes so it better fits our Nutritarian eating style. Quinoa is a new grain for me. I enjoy it more each time I make it. The quinoa and chard complement each other well. You can reduce prep time by using pre-chopped or frozen vegetables.

Provided by Anne Sainz

Categories     Vegan

Time 1h

Yield 4 serving(s)

Number Of Ingredients 10

16 ounces chard leaves, chopped (red or green)
4 garlic cloves, minced
1 onion, chopped
4 mushrooms, sliced
1 (15 ounce) can low-sodium chickpeas, drained
1/2 teaspoon ground cumin
2 teaspoons Mrs. Dash seasoning mix (or AHA you mix yourself)
2/3 cup quinoa, rinsed in a fine sieve
1 1/3 cups low sodium vegetable broth
1/2 teaspoon oil (to coat pan)

Steps:

  • Chop chard and set aside. I like to cut it into crosswise strips, then cut the strips into 2 inch pieces.
  • Chop garlic, onion and mushrooms, then add chickpeas and set aside.
  • Combine quinoa and broth in medium saucepan and bring to a simmer. Cover and simmer gently for 15 minute.
  • Coat large covered non-stick frying pan or Dutch oven (at least 5 quarts) with oil. Add chickpeas, garlic, onion and mushrooms. Saute until soft, adding small amounts of water as needed to prevent sticking.
  • Mix in cumin and seasoning mix.
  • Add as much chard as will fit. Cover and allow greens to wilt down briefly, mixing so chard wilts evenly. Add water as needed to prevent burning. Continue to add the chard until all of it is in the pan and cook until chard is tender, mixing well.
  • Mix in the cooked quinoa and cook another 2 or 3 minutes more and serve.

CURRIED QUINOA AND CHICKPEAS

Curried Quinoa and Chickpeas image

Quinoa contains more protein than other grains, and that protein is of unusually high quality for a plant food. That makes this a great filling main dish and the blend of flavors and colors will bring everyone at the table back for more. -Suzanne Banfield, Basking Ridge, New Jersey

QUINOA SALAD WITH SWISS CHARD AND GOAT CHEESE

Quinoa Salad With Swiss Chard and Goat Cheese image

This versatile salad, or pilaf, may be construed as a home cook's answer to a fast-casual lunch bowl. But it does not need to be piled high with a freewheeling array of additional ingredients. As it is, this could be a stand-alone first course, a lunch dish or a side to serve alongside meat or seafood. Serve it hot, warm or at room temperature. The quinoa adapts well to advance preparation, and letting the salad sit before serving improves the texture. In summer, this dish is prime picnic material.

Time 1h

Yield 4 servings

Number Of Ingredients 10

1 bunch red Swiss chard, about 1 pound
4 tablespoons extra-virgin olive oil
1 medium red onion, chopped
3 large cloves garlic, slivered
1 cup quinoa
1 teaspoon dry mustard
2 cups vegetable broth
Salt and ground black pepper
12 ounces small cremini mushrooms, stems trimmed, halved
4 ounces plain goat cheese, chilled

Steps:

  • Remove stems from Swiss chard and chop in 1/2-inch pieces. Chop leaves and set aside.
  • Heat 2 tablespoons oil in a 3-quart saucepan on medium. Add onion, garlic and chard stems. Sauté until vegetables are tender, about 5 minutes. Stir in quinoa and mustard. Add broth, stir, and season with salt and pepper. Bring to a boil, cover and cook on low 15 to 20 minutes, until the liquid is absorbed. Remove from heat, uncover and let sit 20 minutes.
  • Meanwhile, heat remaining oil on medium-high in a large skillet. Add mushrooms and sauté, stirring, until lightly browned, about 10 minutes. Add chard leaves and continue cooking until greens have wilted and no more liquid remains in the skillet.
  • Fluff quinoa with a fork. Fold mushrooms and leaves into it.
  • The cooked quinoa can be set aside at room temperature for several hours and then served, or reheated to warm or hot. Crumble goat cheese and scatter on top just before serving.

QUIOA WITH SWISS CHARD AND CHICK PEAS

Quioa With Swiss Chard and Chick Peas image

A one pot meal I concocted in an effort to eat less meat. Quinoa is high in protein and has a great flavor. I love the firm texture of chick peas and the crunch of the just cooked swiss chard as well. I keep roasted vegetable stock in my freezer. I think there's some great recipes here for it. It's so easy and a great way to be frugal with your trimmings and peelings. 2-4 servings is a meal or a side dish (this could be either) I hope you enjoy

Provided by CHRISSYG

Categories     One Dish Meal

Time 20m

Yield 2-4 serving(s)

Number Of Ingredients 12

2 teaspoons olive oil
1/4 cup onion, chopped
1 garlic clove, minced
1 large bunch swiss chard (about three cups chopped)
1 cup quinoa (I get pre-washed)
2 cups vegetable stock
1 (14 ounce) can chickpeas (drained & rinsed)
1 teaspoon fresh rosemary, minced
1/2 cup roasted red pepper, chopped (jarred peppers are OK)
3 green onions, chopped
fresh parsley or cilantro
1/2 teaspoon black pepper

Steps:

  • Wash swiss chard well to remove grit. Strip leaves from the stem and chop both separately.
  • In a medium sauce pan, heat olive oil and add quinoa. heat and continue to stir until the quiona develops some color (or if using red quinoa when you smell a nutty browned smell).
  • reduce heat add rosemary, onions and garlic and stir well. When the onons and garlic begin to turn translucent, add the vegetable stock and the stems from the swiss chard. (if your chard is small then add about 5 minutes into cooking).
  • Bring to a boil and reduce heat to a simmer. Cover tightly.
  • Simmer for about 5 minutes and stir in the leaves of the swiss chard and the rinsed chick peas. Re-cover and continue cooking another 5-7 minutes until quiona is tender. (I like mine just a little under-done and chewy).
  • Remove from the heat and just before serving, stir in the roasted peppers and black pepper and top with green onion and parsley or cilantro.
  • I have purposefully omitted salt from this recipe for dietary concerns. Please feel free to salt to suit your taste.
