4 skinless chicken breasts , diced
1 tbsp Moroccan spice seasoning
1 onion , finely sliced
50g butter
300g rice
12 dried apricots , halved
chicken stock cube
410g can chickpeas , drained and rinsed
15g pack flatleaf parsley , chopped

Steps:

  • Coat chicken with the Moroccan spice. Fry the onion in butter until soft.
  • Tip in the chicken, then cook for a few mins more. Stir in the rice and apricots, then pour in the stock cube with 700ml boiling water and the chickpeas.
  • Cover the pan and simmer for 10 mins until the rice is tender and has absorbed most of the liquid. Toss in the chopped flat leaf parsley and serve.

1 cup uncooked medium or long grain rice
2 tablespoons olive oil, or a little more if desired
1 onion, coarsely chopped
1 green pepper, coarsely chopped
1/2 yellow pepper, coarsely chopped
1/2 red pepper, coarsely chopped
3 or more cloves of garlic, pressed or very finely chopped
1 large tomato, peeled, seeded and chopped
1 large tomato, grated
2 1/3 cups chicken, beef or vegetable broth
1 to 2 tablespoons tomato paste
2 to 3 tablespoons chopped cilantro or parsley
1/2 teaspoon salt, or to taste
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper and/or black pepper
1/4 teaspoon turmeric
pinch of saffron threads (optional)
1 small cinnamon stick (optional)

Steps:

  • Gather the ingredients.
  • Heat the broth to nearly boiling, then hold warm over low heat.
  • In a deep skillet or heavy bottomed pot placed over medium heat, saute the rice, onions and peppers in the oil. When the rice begins to brown, add the garlic and tomatoes. Cook for several minutes, stirring frequently.
  • Add the broth, tomato paste, cilantro and spices. Bring the liquids to a boil then reduce the heat, cover the pan, and simmer gently for 25 to 30 minutes without stirring, until the rice is tender and has absorbed most of the liquids.
  • Remove the rice from the heat and lightly stir with a fork to fluff the rice and mix the vegetables throughout. It should still be a little saucy; if not, gently mix in a few tablespoons of hot water. Cover and leave the rice sit for at least five minutes before serving.

Steps:

1 garlic clove
1 medium fennel bulb (sometimes called anise; about 1/2 pound)
1 large zucchini
2 small carrots
1 large vine-ripened tomato
2 tablespoons extra-virgin olive oil
1 teaspoon turmeric
1/2 teaspoon ground cumin
1/4 teaspoon ground ginger
freshly ground black pepper

Steps:

  • Cut enough onion into 1/4-inch dice to measure 1 cup and thinly slice garlic. Trim fennel stalks flush with bulb, discarding stalks. Halve bulb and core. Cut enough fennel bulb into 1/4-inch dice to measure 1 1/4 cups. Cut enough zucchini into 1/4-inch dice to measure 1 1/2 cups. Cut enough carrot into 1/4-inch dice to measure 2/3 cup.
  • Peel tomato (see below), reserving boiling water and ice water, and seed. Cut enough tomato into 1/4-inch dice to measure 3/4 cup. Add carrot to boiling water and cook 1 minute. Drain carrot in a colander. Transfer carrot to ice water to stop cooking and drain.
  • In a large heavy skillet cook onion and garlic in oil over moderately low heat, stirring, until softened. Add fennel, zucchini, and carrot and cook, stirring, until slightly softened, about 5 minutes. Add spices and cook, stirring, 1 minute. Stir in tomato and pepper and salt to taste and cook, covered, over low heat, stirring occasionally, until fennel and carrot are just tender, 10 to 12 minutes. Keep vegetables warm, partially covered. Vegetables may be prepared 1 day ahead and chilled, covered. Reheat vegetables with 1 to 2 tablespoons water.
  • To peel tomatoes:
  • Have ready a bowl of ice and cold water. Cut an X in blossom end of each tomato. In a saucepan of boiling water blanch tomatoes 10 seconds. Transfer tomatoes with a slotted spoon to ice water to stop cooking. Peel tomatoes.

  • Heat the oil in a large wok/pan on medium-high heat. Then add your onion, yellow bell pepper and garlic puree. Stir and fry for a couple of minutes until the onion begins to soften. You can add one tablespoon of water to help the cook the pan ingredients through.
  • Stir in the chopped tomato, cherry tomatoes, and sultanas. Then ass all your spices - the ground coriander, garam masala, turmeric, cayenne pepper (or chilli powder), sea salt and black pepper. At this point, also squeeze in the juice of half a lemon (excluding the pips). Stir the ingredients so everything is well mixed. You can add another tablespoon of water to help. Then continue to fry for approx. 5 minutes until all the vegetables have softened.
  • Finally, add the chopped mint, chopped coriander, spring onions and rice. Combine all of the ingredients together and fry for a couple more minutes. Drizzle over (and mix in) the juice of the remaining half lemon.
