Quinoa Salad with Toasted Almonds image

Quinoa has a wonderful nutty flavor; here it is blended in a salad with toasted almonds, bell pepper, zucchini, celery, and a lime is squeezed on top.

Number Of Ingredients 12

1/4 cup slivered almonds
1/2 cup (3 ounces) quinoa
4 teaspoons olive oil
1 yellow bell pepper, ribs and seeds discarded, cut into 1/2-inch chunks
2 garlic cloves, minced
2 scallions, thinly sliced
1/8 teaspoon red-pepper flakes
1 teaspoon chopped fresh thyme, plus more for garnish (optional)
1/4 teaspoon coarse salt
1 medium zucchini, halved lengthwise and sliced 1/2-inch thick
1 large celery stalk, diced
1 lime, halved

Steps:

  • Preheat oven to 350 degrees. Toast almonds until crisp, lightly browned, and fragrant, about 7 minutes. Remove from oven and set aside. Meanwhile, place quinoa in a fine sieve and rinse under cold running water until the water runs clear; drain well.
  • In a medium saucepan, heat 2 teaspoons olive oil over medium heat. Add yellow pepper, garlic, scallions, and red-pepper flakes; cook until the pepper is crisp-tender, about 5 minutes.
  • Stir in quinoa, thyme, 1 cup water, and 1/4 teaspoon salt. Bring to a boil, reduce to a simmer, cover, and cook 7 minutes. Stir in zucchini, cover, and cook until quinoa is tender but not mushy, 5 to 8 minutes longer. Remove the saucepan from heat.
  • Stir in celery, almonds, and remaining 2 teaspoons oil, season with salt, and fluff with a fork. Cool to room temperature before packing into 2 containers and refrigerating. When ready to eat, squeeze lime over salad, if desired. Serve with additional lime wedge and thyme, if desired.

1 cup low-sodium vegetable broth
1 cup water
¼ cup fresh orange juice
2 tablespoons fresh lemon juice
2 tablespoons olive oil
1 teaspoon Dijon mustard
2 teaspoons honey
1 tablespoon curry powder
2 tablespoons minced red onion
½ cup raisins
sea salt to taste
½ cup toasted sliced almonds

Steps:

  • Bring the quinoa, vegetable broth, and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes.
  • While the quinoa is cooking, prepare the dressing by whisking together the orange juice, lemon juice, olive oil, mustard, honey, and curry powder in a mixing bowl. Stir in the cooked quinoa, red onion, and raisins; season to taste with sea salt. Cover, and chill in the refrigerator several hours until cold.
  • Stir in half of the toasted almonds immediately before serving. Sprinkle the remaining almonds over top to serve.

1/2 cup blanched slivered almond
1 1/2 cups boiling water
1/2 teaspoon salt
1 stick cinnamon
1 bay leaf
1/2 cup dried cranberries (Ocean Spray Craisins )

Steps:

  • Over med heat stir and toast almond slivers until golden. Add the quinoa and toast until quinoa begins to darken.
  • Transfer the quinoa and almonds to a 2 quart sauce pan. Add the remaining ingredients. Bring to boil covered. Reduce the heat and simmer for 20 minutes. Then let stand for another 5 minutes.
  • To serve fluff gently. There is approximately 5 ounces in a portion.

2 tablespoons unsalted butter
1 shallot, minced
Salt and pepper
1 cup quinoa
1/2 cup toasted unsalted almonds, roughly chopped
1/2 cup fresh parsley, chopped

Steps:

  • In a medium saucepan, melt butter over medium-high. Add shallot and cook until softened, 4 minutes. Season with salt and pepper. Add quinoa and cook 1 minute. Add 1 1/3 cups water, bring to simmer, and cover. Cook until water is absorbed, about 17 minutes. Let stand 10 minutes and then fluff with fork. Stir in almonds and parsley.

1/2 cup carrot, grated
1/2 cup red capsicum, chopped
1/4 cup parsley, chopped
1/4 cup coriander, chopped
1 Spanish onion, chopped
1 tablespoon lemon juice or 1 tablespoon other citrus juice
1 tablespoon tamari soy sauce or 1 tablespoon soy sauce
1 teaspoon fresh ginger, finely chopped
2 garlic cloves, chopped finely
1 teaspoon fresh chili pepper

Steps:

  • Rinse quinoa and drain (as you would with rice). Place in small saucepan with 1½-2 cups of water.
  • Bring to the boil, cover, reduce heat to low and simmer (12-15 minutes) until tender and all water is absorbed. Remove from heat and let stand for 10 minutes. Fluff with a fork and let cool.
  • Mix carrot, capsicum, parsley, coriander and Spanish onion in large bowl. Add cold quinoa and toss to combine. Whisk together citrus juice, tamari, ginger, garlic and chili. Pour over salad and combine well.

1 tbsp olive oil
1 tsp ground coriander
½ tsp turmeric
300g quinoa , rinsed
50g toasted flaked almonds
100g feta cheese , crumbled
handful parsley , roughly chopped
juice ½ lemon

Steps:

  • Heat the oil in a large pan. Add the spices, then fry for a min or so until fragrant. Add the quinoa, then fry for a further min until you can hear gentle popping sounds. Stir in 600ml boiling water, then gently simmer for 10-15 mins until the water has evaporated and the quinoa grains have a white 'halo' around them. Allow to cool slightly, then stir through the other ingredients. Serve warm or cold.
