Often called Arroz con Leche, this is a sweet custard-like pudding. I haven't had a single person not love this traditional Mexican rice pudding. You might want to double the recipe!

1 cup uncooked long-grain white rice
2 tablespoons unsalted butter
2 cups water
2 cups whole milk
1 tablespoon all-purpose flour
⅓ cup white sugar
1 egg
1 ½ teaspoons vanilla extract
1 cup whole milk
⅔ cup heavy cream
½ cup raisins
½ teaspoon ground cinnamon

Steps:

  • Bring the rice, butter, and water to a boil in a large saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes.
  • Whisk together 2 cups of milk, flour, sugar, egg, and vanilla extract in a bowl, and pour the milk mixture over the cooked rice. Stir to combine, and simmer over low heat for 15 minutes. Stir in 1 cup whole milk, the cream, raisins, and cinnamon until thoroughly mixed, and allow to cool for a few minutes. Serve warm or cold.

Whoops. We're out of milk and the kids want breakfast. What's fast, good, at least as nutritious as Fruity Pebbles, and warm to boot? Breakfast rice! It's the cinnamon that really convinced my dubious children they were getting a treat.

1 cup rice
2 1/2 cups water
2 tablespoons brown sugar
1/4 cup raisins
1 dash cinnamon

Steps:

  • Place rice and water in uncovered medium saucepan. Heat on high until it threatens to boil and the water turns milky.
  • Cover pan and reduce heat to simmer rice for 20 minutes.
  • Your rice is done! Uncover and stir to fluff.
  • Add sugar, raisins, and cinnamon to taste. Stir together for a warm and tasty treat.

This recipe was given to me, upon request! We have a fresh Mex grill place here that uses sweet rice. This recipe is very similar to this restaurants. Use it on your fresh tortilla salads, or in burritos, on the side, any way you have it, it is darn good (and sweet!) NOTE: The amount of sugar makes it very sweet. You can alter the amount of sugar if you would like, just remember it is supposed to be sweet! Also, let the sugar dissolve in the stock so you won't have sugar that has sunk to the bottom of the pan.

1/2-1 tablespoon vegetable oil
1/2 of a white onion, chopped (add more or less to your taste)
1/2 bunch fresh cilantro
1 1/3 cups white rice
3 cups chicken broth
1/4-1/2 cup white sugar

Steps:

  • Put a little oil in bottom of pan (maybe about 1/2-1 tablespoon).
  • Saute chopped onion until translucent. Add the chopped cilantro (no big stems) and saute a minute more.
  • Add the rice, cooking until it is light brown (being careful not to burn).
  • Combine the chicken broth and sugar, letting sugar dissolve. Then stir into rice until combined. Bring to a boil.
  • Cover and let cook on low, med-low until rice is done, about 25-30 minutes. Fluff with a fork before serving.

1 cup rice
1/4 teaspoon yellow food coloring
3 tablespoons oil
4 cloves
1/2 teaspoon cardamom seed (crushed)
1/2 cup low calorie sweetener
1/2 cup water
20 g almonds, blanched cut into sliver
20 g golden raisins
20 g pistachio nuts, cut into slivers
2 tablespoons nonfat milk

Steps:

  • Rinse rice well; soak it in cold water for about 30 minutes and drain.
  • In a large, heavy skillet bring plenty of water to boil. Add washed rice, cardamom seeds and yellow color, bring it back to boil, reduce heat and cook for about 12-15 minutes until the rice are almost cooked, Drain and keep aside.
  • Heat oil in a heavy saucepan; add cloves and cardamom seeds. Stirring all the time, fry them for a couple of minutes. Add sugar and water. Bring to boil and simmer for few minutes or until sugar is dissolved.
  • Add rice, Stir gently, cook for 3-5 minutes on medium heat. Add almond, raisins, pistachio nuts and milk.
  • Stir gently and cover with a tight fitting lid. Reduce heat and cook for 12-15 minutes or until all the moisture has evaporated.
  • Transfer to a serving dish and decorate with silver leaf, if desired.

  • Know Your Rice. Sticky rice can be purchased at Asian food stores. Also known as glutinous rice or sweet rice, this type of grain sticks together when cooked.
  • Measure and Soak. Measure out 2 cups of sweet rice and place it in a pot. Add 3 1/2 cups water, stir and leave to soak for at least half an hour. An ideal soaking time ranges between 30 minutes and 6 hours.
  • Stove or Steamer. After the rice has soaked, add 3/4 teaspoons of salt and stir. You have two options for cooking: On the stove: Place the pot on the stove and turn the heat on high.
  • Simmer. Once the rice is simmering, place the lid askew, allowing some of the steam to escape. Simmer for 10 minutes. Continue to 5 of 7 below.
  • Check the Rice. After 10 minutes have passed, use a fork to pull the rice aside. Look down into the gap you've made. If all the water has been absorbed, turn off the heat.
