QUICK PULLED PORK SANDWICHES
This tender and juicy pulled pork starts with a surprising choice: pork tenderloin. By simmering large pieces of pork tenderloin in a tangy sauce and then shredding it with two forks the result is tender pork tossed with lots of rich flavorful sauce. The final touch is a crunchy broccoli slaw with a mustardy dressing.

Steps:
- In a large Dutch oven, heat 2 teaspoons of the oil over medium heat. Add the garlic and onion and season with salt and pepper. Cook until softened and lightly browned, about 5 minutes. Add the chili powder, cumin, cinnamon and cayenne and cook until toasted, 1 minute more. Stir in the chicken broth, ketchup, molasses and 1/3 cup of the vinegar. Bring to a simmer and add the pork. Simmer, covered, until the pork is just cooked through and tender, about 20 minutes.
- Meanwhile, in a medium bowl, whisk the mustard with the remaining 1 teaspoon oil and 1 tablespoon vinegar in a large bowl. Add the broccoli slaw and toss well. Season with salt and pepper and set aside.
- Remove the pork to a cutting board and let stand for 5 minutes. Increase the heat under the Dutch oven to medium high and cook the sauce until thickened, about 5 minutes.
- Shred the pork with 2 forks into large chunks and return to the thickened sauce. Toss well to coat and simmer 10 minutes, tossing occasionally, to let the pork absorb the sauce. Serve on the buns with the slaw on the sandwiches or on the side.

PAN SAUCE FOR CHICKEN, PORK, OR STEAK
Steps:
- Gather the ingredients.
- Remove the chicken, pork chops, or steak from the pan and let them rest on a plate or platter covered with foil in a warm spot. Pour off most of the fat from the pan, careful to leave the meat juices. You want a little bit of fat left in the pan.
- Add the chopped shallots to the pan and sauté over medium-high heat until they turn slightly translucent.
- Add the wine and scrape all the little toasty bits away from the bottom of the pan with your wooden spoon.
- Cook for about three minutes or until the wine has reduced by about half.
- Remove from the heat and stir in the mustard and chopped parsley.
- Whisk in the butter one tablespoon at a time. Season to taste with salt and pepper.
- Return the meat to the pan to warm through in the sauce before serving.

QUICK PORK CUTLETS WITH TANGY PAN SAUCE
Tender pork cutlets and a tangy pan sauce. If you want a milder sauce, cut down on the vinegar and mustard. I actually made this using a 2 lb pork roast, sliced into 1/2 rounds.

Steps:
- Cut pork roast into 1/2" rounds.
- Pour the marinade ingredients into a medium size bowl and mix thoroughly.
- Tenderize the meat with a piercing tenderizer (looks like a bunch of nails that stab the meat) or pierce meat 30xs on each side with a fork.
- Place meat in a bowl with marinade as you tenderize each piece, stirring the meat around with each addition so that each piece is covered.
- Heat a large skillet to medium low (4 on my electric stove) and add a tbsp or two of oil (just enough to coat the bottom in a thin layer.).
- Place 2-3 cutlets in the skillet, and cook 3-4 minutes on each side, until they reach 160*F. (Start with the cutlets that were in the marinade the longest.) Remove cooked cutlets to a plate, and place in a warm place (such as a closed microwave.)
- When all the cutlets are done, add the dry chives. Fry for about 30 seconds. The pork should have left a good bit of juice behind. Add the vinegar, and use it to deglaze the pan, scraping up all the good tidbits.
- Add remaining pan sauce ingredients, and simmer for a minute to combine the flavors.
- Spoon the sauce over a few cutlets and enjoy :-).

THAI MARINATED PORK WITH DIPPING SAUCE
This is a great Thai dish, that isn't too spicy. It goes great with sticky rice. Originally it called for meat sliced thinly at 1.5" x 3" and placed on thin skewers like a ribbon. But I just use pork steaks with the bone cut out, and then cut into quarters.

Steps:
- Pork& Marinade:Combine everything (but the pork) untill it's all blended together well.
- Add the pork and let sit for at least 30 minutes.
- I like to let it sit in the fridge overnight.
- Some people like to use dishes or bowls to marinade the meat, but I like to use large zipper seal bags.
- While the meat is soaking we can get going on the dipping sauce: Mix everything together and taste.
- If it's too spicy-hot, just add a little more sugar, fish sauce, and lime juice till the flavor is right.
- When it's time to cook the meat, start your grill (I prefer charcoal).
- Skewer the meat if thats what you are doing, and place the items on the grill.
- Cook both sides evenly for a couple of minutes and make sure it's cooked all the way through.
- When eating, dip the meat into the sauce and enjoy.

- Big Daddy’s Carolina-Style Barbecue Sauce. This sauce is a variation on a classic mustard barbecue sauce. Rather than being thick and sweet like other Southern sauces, it's vinegar-based.
- Memphis Barbecue Sauce. Memphis barbecue means pork. This ketchup-based barbecue sauce is equally good on pulled pork as it is on ribs. What makes it perfect for pork is the vinegar-to-tomato ratio.
- Best Odds Pulled Pork Sauce. This "best odds" sauce uses simple ingredients that you might already have in your pantry and gives you the best chance of making an outstanding and flavorful pulled pork sandwich.
- Piedmont Barbecue Sauce. In the Piedmont area of the Carolinas, barbecue sauce starts with vinegar but gets a touch of tomato to give it an extra savory flavor.
- Southern Vinegar Sauce. This is an old recipe for a barbecue sauce that has no tomato or mustard but does contain butter and lemon. A thin sauce, our recipe is a true example of the classic Carolinas BBQ sauce, a savory and tangy mixture with butter used to keep the meats moist; so it's great if your pulled pork turned out too dry.
- Mustard Barbecue Sauce. In the southern part of South Carolina and the north of Georgia, mustard is king. These barbecue sauces never contain tomato. Here, there's an extra kick thanks to the balsamic vinegar, which adds flavor and also gives this sauce its unique color.
- Best Odds Pulled Pork Sauce. This sauce recipe is specifically designed to be put in a bottle and placed on the table when you're serving pulled pork. Our best odds pulled pork table sauce is a general pulled pork sauce that relies on vinegar, tomato, and mustard to enhance the smoky flavors of your pulled pork and moisten the meat to make a juicy sandwich.
- Southern Barbecue Sauce. This classic sauce uses ketchup as the base and then a good dose of vinegar to give it a proper tang. Add to that a little sweet in the form of sugar, and a little heat from Tabasco, cayenne, and paprika, and you've got a wonderful thick and silky sauce that goes great on anything.
- Wicker's BBQ Sauce. This BBQ sauce comes from Missouri but still has a lot in common with the Carolinas' vinegary sauces. Heavy on the vinegar tanginess, this is a savory barbecue sauce with just a hint of sweet and a touch of heat.

- Put the garlic, pepper, carrots, celery, onions and olive oil in a food process and pulse into a crumbling somewhat fine mixture. Put into a large stock pot over medium high heat and salute about 5 minutes. Blend in the nutritional yeast, Italian seasoning, salt, nutmeg and red chili flakes.
- Add the marinara, Italian tomatoes, water, wine and blend. Try to break up and chop the tomatoes into smaller pieces (if whole Roma tomatoes). Cover with a lid (slightly askew to let steam escape).
