Why harden your arteries with mounds of sausage when you could make a lighter, healthier alternative? This turns out fantastic and is a lot easier on the waistline than the traditional favourite.

8 slices multigrain bread, crusts removed and cubed
1 cup grated low-fat cheese (the sharper the better)
1/2 cup onion, minced
1/2 cup green pepper, chopped
1/2 cup red pepper, chopped
8 eggs (omega 3)
2 cups skim milk
1 teaspoon mustard powder
1/2 teaspoon Worcestershire sauce
1/2 teaspoon salt
8 ounces crab, chopped (artificial is fine)
1 cup corn flakes or 1 cup muesli
cooking spray

Steps:

  • In a greased 9x13 pan, toss bread cubes with cheese.
  • Top with onion and peppers.
  • In a medium bowl, beat together eggs, milk, mustard powder, salt and worcestershire sauce.
  • Pour egg mixture over bread and cheese.
  • Top with chopped crab (you could substitute lean ham as well).
  • Let sit overnight in the refrigerator.
  • In the morning, preheat the oven to 400°F Sprinkle the cereal overtop the casserole, and spray lightly with cooking spray.
  • Bake for 55 minutes (or until set).

Our slimmed down version of this classic offers the creamy mushroom flavor, the sweet tang of onions, and the crunch you expect from Green Bean Casserole, with 60 percent less calories and 80 percent less fat.

Number Of Ingredients 12

3 to 4 medium shallots, in their skins
Kosher salt, plus 1 1/2 teaspoons
1 pound fresh green beans, stemmed, and halved crosswise
1 tablespoon extra-virgin olive oil
8 ounces cremini mushrooms, sliced (about 4 cups)
2 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 1/2 cups mushroom, vegetable, or chicken broth (see Cook's Note)
3 teaspoons fresh thyme leaves
Freshly ground black pepper
Vegetable cooking spray
1 cup fresh bread crumbs

Steps:

  • Preheat the oven to 400 degrees F. Put the shallots (in their skins) on a small baking dish, roast until soft, about 30 minutes. When cool enough to handle, skin and coarsely chop the shallots. Set aside.
  • Bring a medium-large saucepan of water to a boil over high heat. Add kosher salt, to taste. Add the green beans, and cook, uncovered, until crisp-tender and bright green, about 3 minutes. Drain the beans in a colander and rinse with cold water. Transfer the beans to a large bowl.
  • In the same saucepan, heat the oil over medium heat. Add the mushrooms, season with 1 teaspoon salt, cook, stirring occasionally, until browned, about 7 minutes. Add the mushrooms to the beans.
  • Melt the butter in a small saucepan over medium heat. Add the flour and cook, stirring with a wooden spoon, until golden, about 2 minutes. Slowly whisk in the broth, increase the heat to high, and bring to a boil. Add the shallots, 1 teaspoon of the thyme, and remaining 1/2 teaspoon of salt. Reduce the heat to maintain a simmer and cook until thickened, stirring occasionally, about 5 minutes. Pour the sauce over the vegetables and stir to combine evenly.
  • Spray a 2-quart baking dish with vegetable cooking spray. Transfer the vegetable mixture to the pan. Add the remaining 2 teaspoons of thyme to bread crumbs and scatter over the vegetables. Bake uncovered until the sauce bubbles and the crumbs brown, about 20 minutes.

I got this recipe from a very good friend of mine. I needed something quick and easy for Christmas Morning and Wow this was it. It tastes great. I left the Tabasco sauce out.

16 slices bread, crust removed
sliced ham
sliced cheese
6 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
1/2-1 teaspoon dry mustard
1/4 cup minced onion
1/4 cup green pepper, finely chopped (green capsicun)
1 -2 teaspoon Worcestershire sauce
3 cups whole milk
1 dash Tabasco sauce (optional)
1/4 lb butter, melted
enough crushed corn flakes, to cover

Steps:

  • In a 9"X 13" buttered pan, put 8 slices of bread that the crust has been removed.
  • Add ham layered over bread.
  • Lay cheese over ham.
  • Cover with rest of bread.
  • In bowl beat eggs, salt and pepper.
  • To egg mixture add dry mustard, onion, green pepper, worcestershire sauce, milk and Tabasco (optional) Pour over bread, cover and let stand in fridge overnight.
  • In the morning cover with crushed corn flakes.
  • Melt 1/4 1b butter and pour over top of flakes.
  • Bake uncovered for 1 hour at 350 degrees F.
  • When baked let sit for 10 minutes before serving.

I certainly cannot take credit for this recipe but it is a Christmas classic. There are lots of little things to personalize this recipe. I have suggested using red and green bell peppers because they are Christmas colors! I also use grated cheese and spread it over the Canadian bacon instead of cheese slices. I have used regular bacon in this recipe, but I find that it overpowers the rest of the flavors. Make this tasty breakfast dish the night before and just pop it in the oven on Christmas morning; let it cook while you open gifts and sip your rum-spiked coffee!

16 slices bread, crusts removed - divided
16 slices Canadian bacon
16 slices sharp Cheddar cheese
6 large eggs
½ teaspoon salt
½ teaspoon ground black pepper
1 teaspoon dry mustard
¼ cup minced onion
2 tablespoons diced green bell pepper
2 tablespoons diced red bell pepper
2 teaspoons Worcestershire sauce
1 dash hot sauce
3 cups whole milk
½ cup butter, melted
1 cup crushed corn flakes cereal

Steps:

  • Butter a 9x13-inch baking dish. Cut and fit 8 slices of bread to fit over entire bottom of dish. Cover bread with slices of Canadian bacon and sharp Cheddar cheese. Cut and fit remaining 8 slices of bread to completely cover bacon and cheese.
  • Whisk eggs with salt and black pepper in a bowl. Whisk dry mustard, onion, diced green and red bell pepper, Worcestershire sauce, and hot sauce into eggs. Whisk in milk until egg mixture is smoothly combined. Pour egg mixture evenly over the casserole. Cover the dish and refrigerate overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour melted butter evenly over the casserole and sprinkle corn flake crumbs over the top.
  • Bake in the preheated oven until set and lightly browned, about 1 hour. Let casserole stand for 10 minutes before serving.

24 ounces chicken breasts, boneless, skinless cut into 1/2-inch cubes
30 ounces potatoes, cut into 1/2-inch cubes (I leave the skin on)
2 tablespoons olive oil
1 1/2 teaspoons salt
1 tablespoon fresh ground pepper
1 tablespoon paprika
2 tablespoons garlic powder
6 tablespoons hot sauce
8 ounces weight watchers reduced-fat shredded mexican-style cheese
4 slices turkey bacon, diced and pan fried until crispy
1 cup diced green onion

Steps:

  • Preheat oven to 500°F In a large bowl mix together the olive oil, salt, pepper, paprika, garlic powder & hot sauce. Add the cubed potatoes and stir to coat. Carefully scoop the potatoes into a cooking spray coated 9 x 13 inch baking dish, leaving behind as much of the olive oil/hot sauce mix as possible. Bake the potatoes for 45-50 minutes, stirring every 10-15 minutes, until cooked through and crispy & browned on the outside. While the potatoes are cooking, add the cubed chicken to the bowl with the leftover olive oil/hot sauce mix and stir to coat. Once the potatoes are fully cooked, remove from the oven and lower the oven temperature to 400°F Top the cooked potatoes with the raw marinated chicken. In a bowl mix together the cheese, cooked turkey bacon & green onion and top the raw chicken with the cheese mix. Return the casserole to the oven and bake for 15 minutes or until the chicken is cooked through and the topping is bubbly delicious. Serve with extra hot sauce and/or ranch dressing.
