GIANT MOLASSES COOKIES
My family always requests these soft molasses cookies. These chewy molasses cookies are also great for shipping as holiday gifts or to troops overseas. -Kristine Chayes, Smithtown, New York

Steps:
- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and molasses. Combine the flour, ginger, baking soda, cinnamon, cloves and salt; gradually add to creamed mixture and mix well. Fold in pecans. , Shape into 2-in. balls and roll in coarse sugar. Place 2-1/2 in. apart on ungreased baking sheets. Bake 13-15 minutes or until tops are cracked. Remove to wire racks to cool.

FROSTED MOLASSES COOKIES
This was one of my favorite cookies growing up and now it's one of my daughter's favs. A nice moist cookie that tastes fantastic with butter/confectioner's sugar frosting.

Steps:
- Cream shortening and brown sugar.
- Stir in eggs and molasses.
- Stir together the flour and spices in a separate bowl.
- Add the milk alternately with flour mixture until blended, but don't overmix.
- Drop by tablespoonfuls onto greased baking sheet.
- Bake at 350 degrees 10-12 minutes.
- Cool and frost with buttercream frosting.

Bake at 375 degrees F for 8 minutes or until edges are lightly browned. Do not overbake.

- To your stand mixer add the butter, Crisco, brown sugar, sugar and egg on medium speed until smooth.
- Add in the molasses until fully mixed in, about 30 seconds.
- Sift the flour, baking soda, salt, cinnamon, cloves and ginger, then add it into the stand mixer on low speed until just combined.
- Cover bowl with plastic wrap and refrigerate for 1 hour.
- Preheat the oven to 375 degrees.
- Roll 2 tablespoon sized scoops of dough in coarse sugar and place on cookie sheets at least 2 inches apart.
- Bake for 10-12 minutes until the tops are cracked then cool for 5 minutes before removing gently from cookie sheets.

- Preheat oven to 375.
- Grease baking sheets.
- Sift together flour, soda, salt, ginger and cinnamon.
- Cream together shortening and sugar until fluffy.
- Add molasses and egg and beat well.
- Add flour mixture to creamed mixture alternately with water and vinegar combined, mixing thoroughly.
- Drop by tablespoons 2 inches apart on baking sheets.
- Sprinkle with sugar if desired.
