Light, fluffy, buttery dinner rolls are impossible to resist. Homemade with just a handful of simple ingredients, the BEST Dinner Rolls can you be on your table in a jiffy. They really are the perfect addition to any meal!

Number Of Ingredients 8

4 -5 cups all purpose flour
2 tbsp rapid rise, instant yeast
1/3 cup granulated sugar
1 tsp salt
1 1/2 cups warm milk (, 110 degrees)
5 tbsp butter, softened
1 egg (, room temperature)
2 tbsp melted butter

Steps:

  • Combine 3 cups of flour, yeast, sugar, salt, warm milk, butter, and egg in the bowl of a stand mixer.
  • Attach the dough hook and turn the mixer on to the lowest speed and mix until flour is incorporated, scraping down the sides of the bowl as necessary.
  • Increase speed to medium and beat for 2 minutes.
  • Add 1/2 cup flour and blend with the dough hook until incorporated. And another 1/2 cup flour and repeat, mixing at medium speed for another 2 minutes until a ball of dough is formed.
  • Add additional flour as necessary. The dough should be slightly sticky and soft and pulling away from the edge of the bowl.
  • Transfer the dough to a lightly greased bowl and cover with a towel or plastic wrap. Let rise for 30 minutes at room temperature.
  • Remove the towel or plastic wrap and deflate the dough by punching down lightly.
  • Pinch off pieces of the dough and form 24 rolls. You can weigh them to keep the rolls close to the same size. Mine were about 2 ounces each but this will vary depending on how much flour you added.
  • Transfer the rolls to a lightly greased quarter baking sheet or 9 x 13 baking dish. Cover with a towel or plastic wrap and let rise for an additional 30 minutes at room temperature.
  • Preheat oven to 375 degrees. Bake the rolls for 12 to 15 minutes or until golden brown and cooked through. If the rolls are getting too brown, just tent the rolls with foil.
  • Remove rolls and brush hot rolls with the melted butter. Serve immediately or store cooled rolls in a plastic bag for up to 3 days.

We have a small close-knit community, so when someone dies, the women get together and prepare dinner for the family. I had taken food to one of these dinners, and helped served. I was lucky enough to get in line before the hot rolls were all gone. They were DELICIOUS! I asked who made them, and found out it was a woman by the name of Alice Ash. I asked her for the recipe, but she didn't have the recipe with her. A few days later, I received the recipe from my mom, who'd gotten it from her neighbor. Alice had given it to the neighbor, to give to my mom, to give to me! That's small town networking!

2 (1/4 ounce) packages dry yeast
2 cups water
4 tablespoons sugar
4 1/2 cups well sifted flour (sift an additional 2 cups or so to knead with when ready to place in pan)
2 teaspoons salt
2 eggs
4 tablespoons soft shortening

Steps:

  • Dissolve yeast in warm water.
  • Stir sugar, salt, and half of the flour into the yeast mixture.
  • Beat in the eggs and shortening.
  • Add the remaining flour and beat until smooth.
  • Scrape down the sides of bowl, and cover with a cloth, and let rise in a warm place, until doubled in bulk (approx. 30 minutes).
  • Stir down the dough.
  • Add more sifted flour until it can be worked with hands (just add gradually until it feels right).
  • Knead a few times, not a lot; just get it worked in and ready to pinch off into rolls.
  • Pinch the rolls off (medium sized), and place in a greased pan.
  • It may take two pans; one small, and one larger, for all the dough.
  • You can also make loaves of bread out of it.
  • Allow it to rise again, until doubled in bulk.
  • Bake at 375-400 for 15-20 minutes .
  • When done, brush with butter (while hot).
  • Note: You can also use this recipe to make bread loaves (it should make 2 loaves in traditional bread pans), or cinnamon rolls.
  • For the cinnamon rolls, roll the dough out, sprinkle with cinnamon and sugar, and roll up like a jelly roll.
  • Slice off, place in a baking pan, and bake at the same temperature as the rolls, until done.
  • Coat with frosting made with powdered sugar, milk, and a dash of vanilla.

1 (1/4-oz.) packet active dry yeast
1/4 cup warm water (110°F)
2 Tablespoons sugar
2 cups all-purpose flour, plus more as needed
1/2 teaspoon salt
1/2 cup whole milk
2 Tablespoons unsalted butter, melted, plus more for brushing
Large-flake sea salt (optional)

Steps:

  • In the bowl of a stand mixer fitted with the dough hook, combine the warm water, yeast and sugar. Let the mixture stand for 5 minutes.
  • Add 1 cup of the flour, as well as the salt, whole milk and melted butter and beat for 2 minutes.
  • Add an additional 1 cup of flour and beat on high speed for 2 minutes until the dough begins to form a ball. (If the dough is still very sticky, add an additional 1/4 cup flour as needed.)
  • Lightly flour your work surface. Scrape the dough onto your work surface, and using the heel of your hand, knead it for 2 minutes then place the dough in a greased bowl and cover the bowl with a towel. Set the bowl in a dark, warm place for 30 minutes until it has doubled in size.
  • Grease an 8-inch round pan with cooking spray or butter.
  • Divide the dough into 12 pieces then roll each piece into a ball and arrange the balls in the prepared pan. Cover the pan with a towel then return it to a dark, warm place for 30 minutes.
  • Preheat the oven to 375°F. Uncover the rolls then bake them for 20 to 25 minutes until they are golden brown and cooked through.
  • Remove the rolls from the oven, brush them with additional melted butter and immediately sprinkle them with the sea salt (optional). Serve them warm.
  • If you want to prepare the rolls in advance, follow the directions up until you place the (unbaked) rolls in the baking pan then tightly cover the pan with plastic wrap. When ready to serve, remove the rolls from the freezer and place them in the fridge overnight then bring them to room temp to rise before baking them as directed.

¼ cup white sugar
2 cups warm water
2 tablespoons vegetable oil

  • In a large mixing bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
  • Add oil, 2 cups of flour and the salt; stir well to combine. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 40 minutes.

1/2 cup water
1/2 cup whole milk
1/2 cup sugar
4 1/2 teaspoons active dry yeast (2 (1/4 ounce) packages)
1/3 cup unsalted butter, melted, plus as needed
1 large egg yolk
1 1/2 teaspoons pure vanilla extract
3 cups all-purpose flour (13 ounces)
3/4 teaspoon fine salt
1/2 teaspoon grated nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/2 cup currants, plumped in the microwave and cooled
1 egg beaten, for brushing
2 cups confectioners' sugar, sifted
2 tablespoons milk
1/4 teaspoon finely gated lemon zest
1 teaspoon pure vanilla extract

Steps:

  • Combine the water and milk in a medium saucepan and warm over low heat until about 100 degrees F (but no more than 110 degrees). Remove from heat and sprinkle the yeast and a pinch of sugar and flour over the surface of the liquid. Set aside without stirring, until foamy and rising up the sides of the pan, about 30 minutes.
  • Whisk the butter, egg yolk and vanilla into the yeast mixture.
  • Whisk the flour, the remaining sugar, salt, nutmeg, cinnamon and ginger in a large bowl. Make a well in the center of the flour and stir in the yeast mixture with a wooden spoon to make a thick, shaggy, and slightly sticky dough. Stir in currants. Turn the dough onto a lightly floured work surface and knead until soft and elastic, about 8 minutes. Shape into a ball.
  • Brush the inside of a large bowl with butter. Put dough in bowl, turning to coat lightly with butter. Cover with plastic wrap. Let rise at room temperature until doubled in size, about 1 hour 30 minutes. (If you have a marker, trace a circle the size of the dough on the plastic, and note the time to help you keep track.)
  • To form the rolls: Butter a 9 by 14-inch baking pan. Turn the dough out of the bowl and pat into a rectangle about 16 by 8 inches. Divide the dough into 12 equal portions, about 2 ounces each, with a pizza wheel or bench scraper. (If you don't have a scale, divide the dough in half lengthwise, then in half crosswise. Cut each of those four sections into 3 equal-sized rolls.)
  • Tuck the edges of the dough under to make round rolls and place them seam-side down in the prepared pan, leaving a little space in between each roll. Cover the pan with buttered plastic wrap and set aside in a warm place until the rolls rise almost to the rim of the pan and have more than doubled in size, about 45 minutes.
  • Meanwhile, position a rack in the center of the oven and preheat to 375 degrees F.
  • Remove the plastic wrap and brush the tops of the buns with beaten egg. Bake rolls until golden brown and puffy, and an instant read thermometer inserted into the center of the rolls registers 190 degrees F, about 25 minutes.
  • For the glaze: Stir together confectioners' sugar, milk, lemon zest and vanilla until smooth. Transfer icing to a zip bag or pastry bag, and make a small cut in the corner of the bag. Ice buns in a thick cross shape over the top of the warm buns.

  • Preheat oven to 375ºF. Bake rolls for about 15-20 minutes. Spread butter on the tops of cooked rolls for a finishing touch. Enjoy!

I have tried many roll recipes and never been completely satisfied but this one finally fits the bill! It is easy, no complicated ingredients, and the rolls rise up to make very fluffy bread. Thanks go to my aunt Joyce in Nova Scotia for this one.

6 cups flour
1/2 ounce fast rising yeast
1/2 cup sugar
1/2 teaspoon salt
1/2 cup oil
2 eggs
2 cups warm water
1 egg, beaten (for brushing)

Steps:

  • Proof the yeast with a bit of the warm water and sugar in a small bowl.
  • Meanwhile, mix the flour, remaining sugar and salt together in a large bowl.
  • When the yeast is foaming and bubbling after a few minutes, mix it into the dough along with the two eggs, warm water and oil.
  • Knead the dough (it will be sticky) until smooth and elastic.
  • In a KitchenAid mixer this only takes a couple minutes on speed 3.
  • Let rise in a warm place for 1 1/2 to 2 hours.
  • Punch down and then shape into rolls and let rise again.
  • I like to make cloverleaf rolls with this recipe, which involves placing three balls of dough, no bigger than a ping pong ball, in a greased muffin cup.
  • Once the balls have risen again, brush with the beaten egg for a nice brown finish and bake in a hot oven.
  • The time will depend on the size, but mine take about 15 minutes at 200 C.

2¾ cups Flour

Steps:

  • Mix the yeast, 1 teaspoon sugar, and warm milk and leave to proof-about 5 minutes.
  • Combine two and a half cups of flour, the remaining sugar, and salt. Mix well.
  • Add the proofed yeast, one egg, and melted butter, and use a sturdy spoon to mix until everything comes together in a rough, shaggy mass of dough.
  • Cover with a plastic wrap or a tight-fitting lid and leave to rest for five minutes.
  • Remove the lid, turn the dough to a lightly floured work surface and knead, gradually adding the leftover quarter cup of flour - your dough will still be soft, but don't be tempted to add more flour.
  • Return the dough to the bowl and grease the surface with a bit of oil or melted butter, cover with a plastic wrap or a tight-fitting lid, and leave to rest for 30 minutes.
  • Punch down the dough to remove any trapped air and transfer it back to a lightly floured work surface.
  • Divide the dough into eight pieces, roll each out about 6 inches long, and pinch down the sides and ends.
  • Place the buns, seam-side down, on a parchment-lined baking sheet.
  • Make the egg wash by whisking one egg, then brush the buns with the egg wash.
  • Cover the loaves and leave them to rise for 15minutes. They should become nicely puffy.
  • Place in a 350F preheated oven and bake for 12 to 15 minutes.

  • Switch to the dough hook of your stand mixer, and knead the dough to bring it together. The dough needs to be fairly wet and sticky. Knead for about 5 minutes, until you have a smooth ball of dough.
  • Add the oil or butter and knead for a further 5-10 minutes (I knead it for about 8 minutes), until the dough is shiny, smooth and tacky to the touch.
  • Lightly oil a big bowl and place the dough in it. Make sure the dough is lightly oiled on the surface as well.
  • For best results, cover the bowl with plastic wrap and store in the fridge overnight (8 hours) or for up to 24 hours. Alternatively, if you want to bake it on the same day, you can cover the dough with plastic wrap and let it rise for 1 hour in a warm place, until it has doubled in size.
  • On the day you bake the bread rolls - turn the chilled dough out on to a lightly floured surface and lightly dust the surface of the dough as well. If the dough wasn't chilled, you may need extra flour on your hands and on your work surface to prevent the dough from sticking.

Steps:

  • Preheat oven to 400*F.
  • In a large bowl, combine 1 cup water, oil, sugar, and yeast. Let sit until yeast is bubbly (about 8 minutes). Stir in beaten egg, softened butter, and salt.
  • With a stand mixer or by hand, add flour, one cup at a time until you have a soft dough that isn't sticky. Knead by hand 10 minutes or 5 minutes with a stand mixer.
  • Divide dough into 18 even pieces, and form into balls. Place in a greased pan and cover with parchment paper and a kitchen towel.
  • Let rise 10 minutes in a warm place. (You can allow them to rise up to an additional 30 minutes if time allows).

3 3/4 - 4 1/4 cups all-purpose flour
1/4 cup granulated sugar
1 Tbsp rapid rise yeast
1 1/2 tsp salt
3/4 cup cool water
2/3 cup milk
4 Tbsp unsalted butter, (diced into 1 Tbsp pieces, plus more for tops)
1 1/2 tsp lemon juice

Steps:

  • Preheat oven to 180 degrees Fahrenheit. In the bowl of an electric stand mixer whisk together 3 3/4 cups flour, sugar, yeast and salt.
  • To a medium bowl add water, milk and butter and heat in microwave on HIGH power until it reaches 120 degrees on a thermometer, about 1 minute 15 seconds. Stir to partially melt butter (you just want to make sure it's softened through).
  • Pour milk mixture into dry mixture in bowl of electric stand mixer along with lemon juice.
  • Set mixer with a hook attachment then set mixer on low speed and gradually increase to medium-low, knead about 3 - 4 minutes until smooth and elastic while adding additional flour as necessary (dough should be lightly sticky but manageable).
  • Cover bowl tightly with plastic wrap and rest 5 minutes. Meanwhile butter a 13 by 9-inch baking dish.
  • Drop dough onto a lightly floured surface. Shape into an evenly level square, about 9 by 9-inches. Cut into 16 equal portions (don't have to be exact)
  • Shape dough into 15 balls, while using excess dough from the 16th portion to add to smaller rounds as needed, and place shaped dough portions into prepared baking dish.
  • Dampen hands with water and brush tops of dough with the water (just so they don't dry while rising in oven). Transfer to oven, close oven and turn oven off, allow rolls to rise 20 minutes (don't open oven door).
  • Remove from oven and preheat oven to 375 degrees Fahrenheit (this should take about 5 minutes, so just allow rolls to rest on counter while oven preheats).
  • Bake in preheated oven 14 - 16 minutes until tops are golden brown. Remove from oven and run the top of a stick of butter along tops of rolls just to coat. Serve warm. Store in an airtight container (I recommend rewarming cool rolls in microwave for best results.

  • In the bowl of a stand mixer, combine warm milk, yeast, sugar, salt, butter, and eggs.
  • Add in 5 1/2 cups of flour. Using a dough hook, turn the mixer on to a low speed. Once the flour starts to incorporate into the dough, increase the speed to a medium range. Slowly add the remaining 1/2 cup of flour until the dough pulls away from the sides of the bowl. The dough mixture should be slightly sticky and soft. Add more or less flour until the dough reaches the desired consistency. The amount of flour you add in bread making is always an approximation and you should go by feel.
  • Transfer the dough to a lightly greased mixing bowl. Cover with a towel and let rise 90 minutes.

3 tablespoons potato flakes
1 ½ cups milk
½ cup vegetable oil
½ cup white sugar
1 teaspoon white sugar
2 eggs

1 tablespoon active dry yeast
6 ½ cups all-purpose flour
½ cup boiling water
½ cup warm water (110 degrees F/45 degrees C)

Steps:

  • Pour the boiling water over the instant mashed potatoes and set aside. Scald the milk with the oil and 1/2 cup of the sugar. Add The 1/2 cup very warm water and the teaspoon sugar to the yeast and set aside.
  • Add the potatoes to the milk mixture. Start adding the flour, then eggs, one at a time, beating with a mixer or dough hooks. Add yeast mixture and all but 1 cup of the remaining flour and salt.
  • Use the reserved 1 cup of flour for kneading. Knead the dough for about 5 minutes on a floured board. Place the dough in a large greased bowl, being sure to grease top of dough also. Cover dough with plastic wrap then with a double piece of foil. Refrigerate or let rise once and make into rolls. If made at night knead down dough before going to bed.
  • Once dough has risen once, punch down and shape into about 3 1/2 dozen rolls. Place rolls in a lightly greased baking dish and bake in a preheated 375 degrees F (190 degrees C) oven for about 15 to 20 minutes.

6-7 cups all purpose flour ((you can sub in whole wheat) divided)
1/4 cup granulated sugar
1 tablespoon instant or quick yeast
1 tablespoon salt
2 1/2 cups warm water ((noticeably warm but not hot))
1/2 cup melted unsalted butter

Steps:

  • In a large bowl (the bowl of a stand mixer if you're using one), stir together 1 cup of flour, sugar, yeast and salt.
  • Add water and butter and stir until combined.
  • Add two more cups of flour and stir until combined.
  • Place bowl in stand mixer, and gradually add remaining 3-4 cups flour, 1/2-1 cup at a time. As your dough gets closer to finishing, reduce the amount of flour you add at once so that you don't add too much. You can make this dough by hand as well -- just stir in flour gradually until you can no longer use a spoon, then knead it in by hand, just until a soft and smooth dough forms. We want to stop adding flour when our dough is just past the sticky point.
  • Cover and place dough in a warm spot for 1.5 hours or until doubled (I like to turn my oven on to preheat for a few minutes, then turn it off before placing my dough inside). Punch dough down.
  • Uncover dough and divide into 4 even sections. Divide each section into 5 equal sections so you have 20 pieces. Keep remaining pieces covered to prevent drying out while you roll each bun. (For smaller hot dog buns, divide each section into 6 pieces, for a total of 24 buns)
  • Line a baking sheet with parchment paper. Roll each piece of dough into a smooth ball, pinching the seams in the back and rolling until smooth. Place ball on the counter and roll back and forth with both hands to make a cylinder that is roughly 5-6" by 1-1.5". For hot dog buns that are not as thick, press down to flatten slightly. Line up on baking sheets about 1-1.5" apart.
  • Once your hot dog buns are all rolled, let rise for 45-60 minutes until doubled again.
  • Bake at 400 degrees F for 15-20 minutes, until light golden brown. Optional: brush wth melted butter upon removing from the oven.
  • Let cool to room temperature before slicing and serving.
