2 cups (4 sticks) butter, softened
1 cup sugar
4 cups flour
1-1/2 pkg. (4 oz. each) BAKER'S White Chocolate (6 oz.), chopped
1-1/2 cups dried cranberries

Steps:

  • Heat oven to 350°F. Beat butter and sugar in large bowl with mixer until light and fluffy. Add flour; mix well. Stir in chocolate and cranberries.
  • Drop rounded tablespoons of dough, 2 inches apart, onto baking sheets; flatten slightly.
  • Bake 10 to 14 min. or until lightly browned. Cool 5 min. on baking sheets. Remove to wire racks; cool completely.

1 1/2 teaspoons grated orange peel

2 cups Gold Medal™ all-purpose flour
1/3 cup cornstarch
1/4 teaspoon salt
1/2 cup sweetened dried cranberries, chopped

Steps:

  • Heat oven to 350°F. Line bottom and sides of 13x9-inch pan with foil, leaving foil overhanging at 2 opposite sides of pan; spray foil with cooking spray.
  • In large bowl, beat butter, powdered sugar, granulated sugar and orange peel with electric mixer on low speed until blended. Add vanilla. Beat on medium speed until light and fluffy. Stir in flour, cornstarch and salt. Stir in cranberries. Press dough evenly in pan.
  • Bake 30 to 32 minutes or until set. Cool completely in pan on cooling rack. Use foil to lift out of pan. Cut into 8 rows by 4 rows.

1/4 cup unsalted butter, softened (no substitute)
1/4 teaspoon vanilla extract
1/2 cup all-purpose flour
1/4 cup powdered sugar
1 -2 tablespoon baking cocoa

Steps:

  • Preheat oven to 300 degrees F.
  • In a mixing bowl, cream the butter, then add vanilla & mix well.
  • In another bowl, whisk together flour, sugar & cocoa, then add to creamed mixture, beating about 3 minutes or until dough holds together.
  • Pat the dough into a 9-inch by 4-inch rectangle, then cut into 2-inch by 1 1/2-inch strips.
  • Place strips 1 inch apart on ungreased baking sheets.
  • Prick each strip several times with a fork.
  • Bake 20-25 minutes or until set.
  • Set sheets on wire rack(s) to cool for 5 minutes, then remove shortbreat to wire rack(s) to cool completely.

Here's a favorite shortbread recipe, prepared in the traditional pan method. I've ramped them up a bit by adding orange zest, mini chocolate chips, and cranberries! We tried several combinations one day, and this was the standout!

1/2 cup unsalted butter, softened
1/2 cup sugar
1 teaspoon vanilla
1 teaspoon orange zest
1 cup all-purpose flour
1/4 teaspoon salt
1/3 cup mini chocolate chip
1/4 cup chopped dried cranberries

Steps:

  • Preheat the oven to 375 degrees F.
  • With an electric mixer, beat the butter, sugar vanilla and orange zest until light and fluffy. Add the flour and salt. Beat until just combined.
  • Then add the chocolate chips and cranberries.
  • Divide the dough until two pieces. Press them evenly into 2- 8 inch round cake pans. Bake for 11-12 minutes-until golden around the edges.
  • With a small sharp knife, score the shortbread into 8 wedges per pan.
  • Allow to cool in the pans another 10 minutes. Then flip out of the pans the gently separate in to wedges.

They are also very easy to make - I usually substitute a bag of white chocolate chips for the Baker's chocolate to make it even easier.

1/2 cup granulated sugar
1/4 teaspoon salt
1 cup unsalted butter (no substitute)
1/2 cup dried cranberries, finely chopped

Steps:

  • Preheat oven to 325 degrees F.
  • Stir together flour, sugar & salt, then cut in butter until mixture resembles fine crumbs.
  • Stir in cranberries, then form into a ball & knead until smooth.
  • Divide dough in half.
  • On a lightly floured surface, pat or roll each dough portion to a 1/2-inch thickness.
