CHICKEN FAJITAS

Chicken fajitas image

This quick fajita recipe is a feast of flavours and colours - get stuck in!

Provided by Jamie Oliver

Categories     Chicken Recipes     Jamie's Ministry of Food     Chicken     Chicken breast     Sandwiches & wraps

Time 25m

Yield 2

Number Of Ingredients 22

1 red pepper
1 medium red onion
2 skinless free-range chicken breasts
1 teaspoon smoked paprika
1 small pinch of ground cumin
2 limes
olive oil
4 small flour tortillas, or 2 large
150 ml fat-free natural yoghurt
50 g Cheddar cheese
SALSA
½-1 fresh red chilli, to your taste
15 ripe cherry tomatoes
1 bunch fresh coriander, (30g)
1 lime
extra virgin olive oil
GUACAMOLE
1 small handful of mixed-colour rip cherry tomatoes
½-1 fresh red chilli
a few sprigs of fresh coriander
1 ripe avocado
1 lime

Steps:

  • Put a griddle pan on a high heat.
  • Halve, deseed and slice the pepper into thin strips, then peel, halve, and finely slice the onion. Slice the chicken lengthways into long strips, roughly the same size as the pepper strips.
  • Put the peppers, onion, and chicken into a bowl with the paprika and cumin. Squeeze over the juice of half a lime, drizzle over 1 tablespoon of oil, season with a good pinch of black pepper and mix well. Put aside to marinate for 5 minutes or so while you make your salsa.
  • For the salsa, finely chop the chilli, roughly chop the tomatoes and the coriander (stalks and all), then place in a clean bowl with a pinch of sea salt and black pepper. Squeeze over the juice of 1 lime, and stir in the coriander.
  • Using tongs, place the pepper, onion, and chicken onto the griddle and cook for 6 to 8 minutes, or until the chicken is golden and cooked through. As the pan will be really hot, keep turning the pieces of chicken and vegetables over so they don't burn - you just want them to lightly chargrill to give you a lovely flavour.
  • To make the guacamole, squeeze the cherry tomatoes onto a board, then finely chop with ½ -1 red chilli and a handful of coriander leaves, including the top part of the stalks.
  • Halve and destone the avocado, then squeeze it over a board so the flesh comes out of the skin. Discard the skin. Squeeze over the lime juice and chop everything together until fine. Taste and adjust the flavours, if needed.
  • Warm the tortillas in a microwave or warm, dry frying pan, then divide between serving plates. Squeeze the remaining lime juice over the sizzling pan.
  • At the table, carefully help yourselves to the chicken and vegetables straight from the hot grill pan. Just be sure to put it down on top of something that won't burn, like a chopping board.
  • Serve with bowls of natural yoghurt and guacamole, alongside the Cheddar, a grater, and the lovely fresh salsa.

QUICK AND EASY CHICKEN FAJITAS

Quick and Easy Chicken Fajitas image

This is a recipe I recently adapted from Cooking Light - I was a little iffy at first about it b/c it didn't have any Mexican spices, but it ended up being really, really good. We used a Frontera (Rick Bayless's brand) salsa, and it worked really well with this. This is a super easy recipe and while you do have to wait for the marinade to marinate, the hands on time is pretty low.

Provided by larchie

Categories     Chicken Breast

Time 2h

Yield 2-3 serving(s)

Number Of Ingredients 17

3/4 cup beer, they say to use Mexican dark but I used Budweiser
2 tablespoons soy sauce
1 lime, the juice of the lime
1 tablespoon canola oil
1 tablespoon Worcestershire sauce
3 garlic cloves, crushed
1 lb chicken breast, skinless, boneless, cut into 1/2 inch strips
1 onion, sliced thinly
1 green bell pepper, seeded and sliced
1 red bell pepper, seeded and sliced
1/4 teaspoon salt
1/4 teaspoon red pepper
1 tablespoon canola oil
6 flour tortillas
1 jalapeno, thinly sliced
1 tablespoon cilantro, chopped
salsa

Steps:

  • Combine the first six ingredients, stirring well. Place chicken in a zip lock bag, and pour about half of the beer mixture to bag; seal and toss around. Place onion, bell peppers, and other half of beer mixture in another zip lock bag; seal and toss.
  • Marinate chicken in refrigerator for at least one hour; marinate veggies at room temperature for at least one hour.
  • Add 1 tbsp of canola oil to grill pan, and heat over medium high heat. Remove onion and bell peppers from marinade, and add to pan. Add red pepper and salt to taste. Cook for 6 minutes, or until beginning to get tender; turn after three minutes. Add chicken to pan; cook 2 minutes each side or until done.
  • Warm tortillas if desired, and divide onion and chicken mixture evenly between tortillas. Add jalapeno, cilantro, and salsa as desired, and serve.

  • Slice Chicken very thinly (you want thin bite-sized pieces). Then sprinkle the chicken with Cayenne pepper and set aside.
  • Cut all the Bell Peppers, Onion, lime, cilantro. I will usually cut all of my toppings (Avocados, jalapeños, and etc.) at this time as well.
  • Heat up 3 Tablespoons of Olive Oil in your Cast iron skillet (you could use a wok or a non-stick pan but the iron skillet produces the best results). Place the chicken in the pan snd spread around the pan to make an even layer. You want a good sear on the chicken. Add spices to chicken including just 1 tsp of Salt. Use tongs to flip the chicken pieces. And watch out for splatter. Cook until chicken looks like it has a good sear (2-3 minutes or so) and almost cooked through. Then add the lime juice from half of a lime. Cook 1 minute then remove chicken from pan with tongs and set aside. Make sure to keep remaining juices in the pan.
  • If you need, add one more Tbsp oil to your pan. Once the oil is heated, add the Onion and Bell Peppers. After 1-2 minutes put in Garlic. Cook for a few minutes allowing some of the veggies to get nice charred look. Then add the chicken again and mix the veggies with the chicken. Add the remaining lime juice and another ½ tsp of salt. Cook a couple more minutes and then keep the Fajita mixture on low while you warm your tortillas. Make sure to watch your chicken so it doesn't over cook! Use corn or flour tortillas and top with cilantro, salsa, black beans, sour cream, or avocados. Enjoy!

  • On the stove, heat 1 tablespoon of oil in a large skillet over medium-high heat. Once hot, add chicken thighs and cook for 3 to 5 minutes per side, until the internal temperature reaches 165°F. If at any time the outside of the chicken begins to cook too quickly and burn, turn the heat down.
  • While your meat cooks, in another large skillet, heat remaining 1 tablespoon of oil over medium-high heat. Once oil is hot, add bell pepper and onion slices. Sprinkle 1/2 teaspoon of taco seasoning or 1/4 teaspoon each of cumin and chili powder over the top. Cook, stirring occasionally, for 4 to 8 minutes, until edges are lightly browned and vegetables are tender-crisp. Salt and pepper to taste.
  • For softer vegetables, turn heat down to medium once the vegetables begin to brown so they don’t burn, and continue to cook until vegetables reach your desired level of doneness. For very soft vegetables, add 1/4 cup of water to the pan at this point, and cook until veggies are soft and water has evaporated, adding more water as necessary.

  • In a small bowl, mix together the seasoning ingredients. You can divide each of them in half and mix them in two different bowls, as I do in the video below. Half will season the veggies and half will season the chicken.
  • Heat 1 tablespoon of the oil in a large, deep skillet over medium-high heat, about 2 minutes. Add the bell peppers, the onions, and half the seasoning mix. Cook, stirring often, until just tender, about 5 minutes. If the bottom of the skillet becomes too dry, add a little water, a tablespoon at a time. You can also reduce the heat to medium.
  • Using a slotted spoon, remove the vegetables to a plate. Add the remaining oil to the skillet, then add the chicken slices with the second half of the seasonings. Stir-fry until the chicken is almost fully cooked, about 4 minutes. Again, if the bottom of the skillet becomes too dry while you cook the chicken, add a little water.
  • Return the vegetables to the skillet. Stir-fry everything together for 1-2 more minutes, until the chicken is fully cooked and the dish is heated through.
