EASY CRUSTLESS SPINACH QUICHE



Easy Crustless Spinach Quiche image

This Spinach Quiche is easy to make and full of delicious flavor! You'll love the combination of spinach, sweet onion, mushrooms, and cheddar and feta cheeses.

1 tablespoon extra virgin olive oil
1 small sweet onion (, diced)
4 ounces mushrooms (, sliced)
2 cloves minced garlic
10 ounces chopped frozen spinach (, thawed and drained)
6 ounces crumbled feta cheese
8 ounces shredded cheddar cheese
5 large eggs
1/2 cup milk ((1%, 2%, or whole))
1/4 teaspoon table salt
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 350 degrees Fahrenheit and lightly grease a 9-inch deep dish pie plate.
  • Heat olive oil in a large skillet over medium high heat. Add in onion and mushroom and saute until softened, about 5 to 7 minutes. Add in garlic and cook 1 minute more. Turn off heat and stir in spinach, feta, and cheddar cheese. Spoon mixture into the prepared pie plate.
  • In a mixing bowl, whisk together eggs, milk, salt, and pepper. Pour egg mixture over the spinach mixture in the prepared pie plate.
  • Bake in the preheated oven for 40 to 45 minutes, until eggs are set. Let cool 10 minutes before slicing and serving.

3 tablespoons unsalted butter
6 ½ ounces mushrooms, chopped
½ cup chopped onion
3 tablespoons minced garlic
1 (10 ounce) package fresh spinach, chopped
1 cup egg whites
1 cup skim milk
1 (8 ounce) package shredded fat-free Cheddar cheese
6 ounces crumbled fat-free feta cheese
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Heat butter in a skillet over medium heat. Saute mushrooms, onion, and garlic in the hot pan until onion is tender, about 7 minutes. Add spinach to the onion mixture and cook over low heat until spinach is limp and most of the water has evaporated, 5 to 7 minutes.
  • Place egg whites into a bowl and add milk; whisk together. Add 1/2 cup Cheddar cheese and feta cheese. Stir in spinach mixture until thoroughly mixed. Season with salt and pepper. Pour mixture into the prepared baking dish.
  • Bake in the preheated oven for 15 minutes. Remove from the oven and sprinkle remaining Cheddar cheese over quiche. Return to the oven and continue to bake until center is set, about 40 minutes.

1/2 large onion, chopped
1 (10 oz) package frozen chopped spinach, thawed and drained
1 1/4 c egg beaters (or 5 eggs)
3 c pepper jack cheese
1 Tbsp minced garlic
1/4 tsp ground black pepper

Steps:

  • 1. Preheat oven to 350 degrees F (175 degrees C). Lightly spray (with Pam) muffin tin (for minis) or 9 inch pie pan (for large pie).
  • 2. Heat large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in minced garlic, add spinach and continue cooking until excess moisture has evaporated. Drain any liquid when done.
  • 3. In a large bowl, combine egg beaters, cheese, and pepper. Add spinach mixture and stir to blend. Scoop into prepared tins or pie pan. If using muffins tins, fill tins to tops - should make no more than 12 per recipe.
  • 4. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.

1 cup sliced fresh mushrooms
1 tablespoon vegetable oil
1 package (10 ounces) frozen chopped spinach, thawed and well drained

1/2 medium onion (diced)
1/3 cup chopped bell pepper
2 garlic cloves (crushed)

4 large egg whites
1/3 cup fat free milk (or milk of choice)
1/3 cup all purpose flour*

Steps:

  • Preheat oven to 350°F. Spray a nonstick muffin pan with olive oil spray.

  • Sauté onions and salt for 5 minutes, until soft, add bell peppers, garlic, tomato, kielbasa sauté for another 5 to 7 minutes. Add spinach and cook until wilted, about 1 minute. Set aside.

1 10-ounce package frozen spinach, thawed and squeezed dry

1/2 teaspoon freshly grated nutmeg
6 to 8 scallions, chopped
1 tablespoon grated parmesan cheese

2 heads endive, sliced lengthwise

Steps:

  • Position a rack in the upper third of the oven, place a baking sheet on the rack and preheat to 450 degrees F. Lightly grease a 9-inch round or 8-inch square baking dish with olive oil.
  • Pulse the gouda in a food processor until finely chopped. Add the spinach, whole eggs and egg whites, ricotta, flour and nutmeg and process until well combined, about 30 seconds. Add the scallions and pulse to mix.

I found this on the Food Network website and it was just what I was looking for: a flexible quiche recipe that doesn't have a crust. The original recipe calls to add the solid ingredients to the top of the quiche mixture in the pan, but there's no real reason why to do this, unless you think it's easier (I mixed it all together in a bowl and spooned it in). I have listed specific ingredients, but you are more than able to change those up to your taste. I prep/chop all the ingredients the night before if I'm making them for breakfast (I even saute the veggies in advance). The mini quiches keep really well and are good little snacks even when cold. They make a nice presentation when arranged on a plate. Inexpensive, healthy, easy and fast - that's what I like about this recipe!

1/4-1/2 cup cooked ham, chopped really small
8 -10 ounces fresh mushrooms, sliced
1 small shallots or 1 small onion, finely minced

Steps:

  • Preheat oven to 375ºF. Lightly coat (3) nonstick mini muffin pans with cooking spray or butter.
  • In a skillet, saute the mushrooms until dry and lightly browned, about 10 minutes. Add the shallots to the skillet and saute until they are translucent. Place in a mixing bowl. In the same skillet with a little bit of butter, saute the spinach until it is just wilted but still bright green, about 2 minutes. Add to mixing bowl.
  • In a separate bowl, whisk the eggs, eggs whites, milk and salt and pepper.Add in the cheese, the ham and the other sauteed ingredients. Mix well and spoon into muffin pans until they are about 1/2 full.
  • Bake until the quiches are well risen and golden brown, about 20 or 25 minutes. When done cool in the muffin pan for 5 minutes.
