Quick and Easy Spicy Sausage & Bean Soup image

It was pouring rain today and cold; perfect soup weather, but not having a full pantry this is what i came up with using leftovers from Easter. Most of the ingredients were already cut and sausage was cooked. (bagged cut carrots from the grocery store) Also having my toddler daughter literally clinging to me all day it had to be super quick and simple. This is a very thrown together recipe and im sure could use improvements and / or changes but for as simple as it was it tasted very good to me. prep time doesnt include cooking the sausage.

1/2 lb hot Italian sausage, cooked and cut into small pieces (use mild sausage if you don't like spicy soup)
1 tablespoon olive oil
1 tablespoon garlic powder
1/2 medium vidalia onion (no need to cut it up)
1 cup pre-cut carrot
2 (8 ounce) cans beef broth
2 tablespoons tomato paste
1 (8 ounce) can cannellini beans, drained and rinsed
1 teaspoon crushed red pepper flakes (optional for added heat)
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups water

Steps:

  • In a large soup pot, put olive oil and garlic powder.
  • Cook on low for about 3 minutes.
  • Add everything else to the pot.
  • Bring to boil.
  • Simmer for 25 minutes.
  • Using a slotted spoon, take out all veggies meats and most of the beans and place in blender to puree. you may need to put some of the broth in the blender too to help it along.
  • Return puree back to soup pot.
  • Simmer 10 minutes more stirring well to blend puree and liquid well.

1 carrot, peeled and cut into 1/2-inch pieces

1 tablespoon ground coriander
1 tablespoon ground cumin

1 (11 1/2-ounce) can tomato juice
1 (6-ounce) can tomato paste
1 (3-inch) piece Parmesan cheese rind, optional
2 teaspoons salt, plus more to taste
8 cups vegetable or chicken broth
2 (15 1/2-ounce) cans garbanzo beans, drained and rinsed
2 (15-ounce) cans cannellini beans, drained and rinsed
1/2 cup dried green lentils
3 cups broccoli florets
2 zucchini, cut crosswise into 1/2-inch thick rounds
2 yellow crookneck squash, cut crosswise into 1/2-inch thick rounds
1/2 cup freshly shredded Parmesan
1/4 cup thinly sliced fresh basil leaves

Steps:

  • Heat the oil in a heavy large stockpot over medium-high heat. Add the onions, celery, carrot, bell pepper, and garlic, and saute until the onions are translucent, about 15 minutes. Add the chili powder, coriander, cumin, oregano and crushed red pepper, and cook for 2 minutes. Stir in the tomatoes with their juices, tomato juice, tomato paste, cheese rind, and 2 teaspoons of salt. Add the broth, garbanzo beans, cannellini beans, and lentils. Stir in the broccoli, zucchini, and yellow squash. Bring to a simmer over high heat. Decrease the heat to medium. Simmer, uncovered, until the lentils are tender and the mixture thickens slightly, stirring often, about 20 minutes. Season the stew to taste with more salt, if desired.
  • Ladle the stew into bowls. Sprinkle with the shredded cheese and basil, and serve.

1 tbsp vegetable oil
1 onion , thickly sliced
8 Cumberland sausages
1 fat garlic clove , crushed
2 x 400g cans kidney beans in chilli sauce
2-3 sprigs curly parsley , chopped

Steps:

  • Heat the oil in a large frying pan. Cook the onion and sausages over a fairly high heat for 8-10 mins, turning the sausages often so they brown all over.
  • Add the garlic to the pan with the kidney beans and their sauce. Half-fill one of the cans with water, swirl and then add this to the pan. Stir everything together and bring to the boil. Turn down to simmer and cook for 10 mins, or until the sausages are cooked through. Season and sprinkle with the parsley.

1 medium sweet onion, chopped
2 minced garlic cloves
1/2 cup diced celery
1/2 cup diced carrot
1/2 cup diced bell pepper, red, green whatever
1 (28 ounce) can diced tomatoes, do NOT drain
3 -4 cups beef broth, depending how liquidy you like it
1/2 teaspoon sugar
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon thyme
1/4 teaspoon pepper
1 (19 ounce) cannellini beans, rinse and drain, Progresso makes 19 oz size
salt, as needed to taste

Steps:

  • In a large soup pot, brown the sausage with the onion, breaking up the sausage as it cooks. Drain off fat and rinse and drain again well.
  • Return cooked drained sausage and onions to pot.
  • Add the garlic, celery, carrots, bell pepper, undrained tomatoes, beef broth, sugar, oregano, basil, thyme, and pepper.
  • Bring to a boil; reduce heat and gently simmer for 20-25 minutes or until veggies are tender.
  • Stir in the rinsed and drained cannellini beans. Cook for an additional 5 minutes until heated through.

5 cups canned low-salt chicken broth

1 diced red pepper
30 -40 ounces chicken broth (if you like it thicker or thinner)

1/2 cup hot salsa (I get the fresh kind in the Deli)
chopped fresh cilantro
1 -2 tablespoon olive oil

  • Saute onion in olive oil for 2-3 minutes.
  • Add sausage and saute for 2-3 minutes.
  • Add yellow and red pepper, saute for 2-3 minutes.
  • Add 30 oz of chicken broth and bring to boil.
  • Add tomato, beans, and salsa. Reduce heat to low. Add more chicken broth if you like it less chunky.

The original is from Southern Living 1983 cookbook and is credited to Mrs. Frank Patton from Johnson City, Tenn. This is a favorite of ours that we often double and freeze in lunch size portions for DH. The original recipe calls for canned beans, but we process dried beans. If you don't have a pressure cooker, it will take longer, so if you're in a hurry, use the canned variety. We also tend to increase the spices and herbs and use hot sausage to increase the impact. (time does not include soaking)

1 1/2 cups dried kidney beans (or 2 cans, 16 oz. each kidney beans, un-drained)
2 cups beef stock (or water, enough to cover beans by 2 inches)
1 lb bulk pork sausage
1 large onion, chopped
2 garlic cloves, minced
1 (28 ounce) can diced tomatoes, un-drained
1 bay leaf
1 quart beef stock (or water)
1 teaspoon salt (to taste)
1 1/2 teaspoons seasoning salt
3/4 teaspoon dried thyme
1/2 teaspoon salt
1 red bell pepper, chopped
1 cup potato, in 1/2-inch dice

Steps:

  • Pick over dried beans and soak for at least 4 hours. If not using a pressure cooker, soak beans overnight.
  • Place beans in pressure cooker with enough beef stock or water to cover by 2 inches and process 12-15 minutes, depending on how long they've been soaked. (Feel free to add extra garlic or a bay leaf if you so desire.) Allow to come down from pressure naturally. If not using a pressure cooker, place in pot and simmer for 2-3 hours until almost tender, adding more liquid if necessary.
  • In a large Dutch oven brown sausage, stirring to crumble the meat. Drain pan drippings if desired. Add onion and garlic and saute until transparent. Add tomatoes, bay leaf, stock or water, salt, seasoned salt, thyme and beans with their liquid whether canned or processed dry. Cover and simmer for 1 hour, stirring occasionally. Add bell pepper and diced potato; cover and simmer 20 more minutes until potatoes are tender. Remove bay leaf before serving.
