Homemade lamb chops with mint sauce. Very easy to make and full of flavor!

8 lamb chops
2 tablespoons olive oil, divided
2 teaspoons chopped fresh rosemary
salt and ground black pepper to taste
¼ cup mint leaves
3 tablespoons extra-virgin olive oil
1 tablespoon lemon juice
1 teaspoon lemon zest

Steps:

  • Brush lamb chops with 1 tablespoon olive oil; season with rosemary, salt, and pepper. Marinate in the refrigerator, 15 minutes to 2 hours.
  • Heat remaining 1 tablespoon olive oil in a skillet. Cook lamb chops until browned, 2 to 3 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
  • Combine mint leaves, 3 tablespoons extra-virgin olive oil, lemon juice, and lemon zest in a blender; blend until smooth. Drizzle over lamb chops.

1/3 cup extra-virgin olive oil
1/2 cup packed fresh mint leaves, chopped, plus more for sprinkling
1/4 teaspoon red pepper flakes
Sea salt
12 small rib lamb chops (about 2 1/3 pounds)
2 cloves garlic, smashed

Steps:

  • Preheat a grill to medium high. Mix the olive oil, mint, red pepper flakes, and salt to taste in a bowl. Rub the lamb chops all over with the garlic. Transfer a few tablespoons of the mint oil to a small bowl and brush on the chops.
  • Grill the chops until charred, 3 to 4 minutes per side. (Press the middle of a chop with your finger: It should be slightly firm with a little give for medium-rare doneness.) Transfer to a platter and brush with some of the remaining mint oil. Sprinkle with mint and serve with more mint oil.

  • While chops are under the grill, prepare the sauce:.
  • Melt butter in pan; add finely chopped onion, saute until tender.
  • Add lemon rind, lemon juice, sugar and mint, heat gently.

2 tablespoons of either prepared sweet corn relish or 2 tablespoons chutney

Steps:

  • Place lamb chops on tray.
  • Put 1/2 tablespoon of chosen topping on each chop and spread to cover.
  • Put in oven at 180 degrees celcius for 15 mins.
  • Also works well with beef steak, chicken breasts and turkey chops.

2 tablespoons lemon juice
1/2 teaspoon lemon zest, grated
2 tablespoons fresh oregano (or 2 tsp. dried oregano)
6 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper
8 lamb chops (4 oz. each)

Steps:

  • In a small bowl mix together first 7 ingredients. Pour marinade over chops and let marinade 20 min-1 hours.
  • Preheat grill pan and grill to desired done-ness (I prefer mine med-rare which takes 3-4 minute on each side).
  • Note: You can cook the lamb however you prefer, grill pan, broiler, saute pan etc.

1/2 cup red wine

  • Trim fat from chops.
  • Place lamb chops in shallow dish.
  • Pour over marinade.
  • Refridgerate for several hours or overnight.
  • BBQ chops, brushing with marinade, until chops are tender.

I made this dish as a modification on Deity's Easy Mint Chops with the help of Jewelies from the Australia/New Zealand Forum. I would use 1/4 cup water if using the mint sauce or 1/2 cup water if using the mint jelly.

6 lamb chops or 6 lamb shanks
1 cup mint sauce or 1 cup mint jelly
1 tablespoon soy sauce
1/4-1/2 cup water
seasoned flour

Steps:

  • Heat slow cooker on high but turn to low when lamb goes in.
  • Toss the chops or shanks in seasoned flour and brown in a pan then place in slow cooker.
  • Deglaze pan with water, add sauces and pour over lamb.
  • Cook on low for 6 to 7 hours.

Steps:

  • Rub dijon mustard on both sides of chops and roll chops in breadcrumbs.
  • Then sprinkle rosemary on a paper plate and place chops in it.
  • Stand in baking dish and bake at 350 degrees for approximately 30 minutes.
  • Serve with Mint Jelly.
