MOM'S FAVORITE BAKED MAC AND CHEESE
This is a macaroni and cheese I first made 3 years ago when I was in California. When I got back to Texas I made it for my mom. This is now her favorite baked macaroni and cheese. She begs me to make it when I come to visit.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a medium saucepan over medium heat. Saute onion for 2 minutes. Stir in flour and cook 1 minute, stirring constantly. Stir in milk, salt, mustard and pepper; cook, stirring frequently, until mixture boils and thickens.
- Meanwhile, bring a pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
- To the milk mixture add the Cheddar and American cheeses; stir until cheese melts. Combine macaroni and cheese sauce in a 2 quart baking dish; mix well.
- Bake in preheated oven for 30 minutes, or until hot and bubbly. Let cool 10 minutes before serving.

ULTIMATE MAC 'N' CHEESE CASSEROLE FOR TWO

- Preheat the oven to 375 degrees F and lightly spray a 2-quart oven-safe casserole dish with nonstick cooking spray. Set aside.
- Bring a large pot of water to a boil and cook the pasta until al dente, following the directions on the pasta package. (You'll want it to still have a bite to it because it will finish cooking in the oven.) Drain well.
- Meanwhile, in a large skillet, melt the butter over medium-high heat. Whisk in the flour and cook, whisking vigorously, 1 to 2 minutes. Continue to whisk as you add the milk, then let the mixture gently come to a simmer and thicken, about 5 minutes.
- Add the Cheddar and gruyere and stir together with a spatula until all the cheese has melted. Add salt and pepper to taste. Remove the skillet from the heat.
- Add the pasta to the cheese sauce and gently toss until everything is covered. Sprinkle half the bacon into the skillet and toss to incorporate. Pour the pasta mixture into the prepared casserole dish. Top with the remainder of the bacon, then bake, uncovered, until the mixture is bubbly and the pasta is cooked through, 30 minutes. Remove from the oven and let sit for 10 minutes before serving.

MOM'S CHEESY CASSEROLE (BAKED MAC AND CHEESE)
My mom always made this when my brothers and I were asking for mac and cheese - no little blue box for us! exceptionally perfect. Easily adapted to an adult taste with meat, or kept simple. I use a cream of cheddar soup but you can make a rouge of butter, flour, milk and cheddar if you prefer a pure homemade feel.

- Cook pasta according to directions; set aside.
- In a large bowl, add can of soup to a can of milk slowly to get the very last of the soup out of the can.

- Prepare macaroni as per pkg. instructions.
- Melt butter on medium high heat, add Wondra flour, whisk until well blended. Add cream cheese and whisk until creamy, add milk, sour cream and bring to slow boil, add 10-12 oz Velveeta. Stir until all cheese has melted. Add a few drops of Tabasco sauce, to give it a little kick.
- Add to macaroni and whaala! Perfect mac n cheese you'll love. If you'd like to bake this version, simply place in baking dish, add thin slices of Velveeta or American to top and bake at 375 degree oven until cheese is scorched and bubbly. (About 30 min.).
- You can add fresh or frozen peas, chunks of ham, sliced cooked brats, brocoli, or anything else your little heart desires to this version of mac n' cheese.
