HASH BROWN, SAUSAGE, AND CARAMELIZED ONION CASSEROLE



Hash Brown, Sausage, and Caramelized Onion Casserole image

Makes 8 to 10 servings

Number Of Ingredients 10

2 tablespoons butter
2 large sweet onions, thinly sliced
1 pound ground pork sausage
1 (8-ounce) package sliced baby portobello mushrooms
1 (30-ounce) package frozen shredded hash brown potatoes, thawed
2 cups shredded white Cheddar cheese, divided
1 (10¾-ounce) can cream of mushroom soup
1 (8-ounce) container sour cream
1 teaspoon dried rosemary
1 teaspoon ground black pepper

Steps:

  • In a large skillet, melt butter over medium heat. Add onions, and cook, stirring occasionally, for 10 minutes or until tender. Increase heat to medium-high, and cook, stirring frequently, until onions are browned. Remove onions, and set aside.
  • To skillet, add sausage and mushrooms. Cook, stirring occasionally, over medium heat until sausage is browned and crumbly; drain.
  • Preheat oven to 350°. Spray a 13x9-inch baking dish with nonstick cooking spray.
  • In a large bowl, stir together onions, sausage mixture, hash browns, 1 cup cheese, and remaining 4 ingredients. Spoon mixture into prepared pan, and top with remaining 1 cup cheese.
  • Bake for 30 minutes or until hot and bubbly. Let stand for 10 minutes before serving.

1 (2 pound) package frozen hash brown potatoes
2 cups shredded Cheddar cheese
1 (7 ounce) can green chile peppers
8 large eggs
2 cups milk
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon onion powder
½ teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch dish with cooking spray.
  • Cook sausage in a large skillet, stirring occasionally, until no longer pink, 6 to 8 minutes. Drain fat and transfer to a bowl.
  • Cook and stir hash browns to the same skillet until lightly browned, about 8 minutes. Place hash browns in the baking dish; top with sausage, shredded Cheddar cheese, and green chile peppers.
  • Whisk eggs, milk, salt, pepper, onion powder, and garlic powder in a bowl. Pour over hash brown mixture.
  • Bake uncovered in the preheated oven until bubbly and the top is golden brown, 35 to 40 minutes.

1 lb country sausage, jimmy dean
2 cups cheddar cheese
2 cups parmesan
2 1/4 cups milk
8 large eggs
8 cups french bread cubed

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter and saute the onions and the hashbrowns for 7-10 minutes until soft.
  • Cook sausage and drain.
  • In a large bowl, mix the eggs, milk, salt, and pepper.
  • In a greased baking dish, layer bread, hashbrowns & onions, sausage, and cheese.
  • Pour egg mixture on top.
  • Top with additional cheddar cheese and bake for 50-60 minutes until hot and bubbly.
