Bing Cherry Daiquiri Food

HEMINGWAY DAIQUIRI

Steps:

• Place the cherries in a small bowl and add enough maraschino liqueur to cover. Allow the cherries to soak for 24 hours.
• Squeeze 1 ounce of grapefruit juice from half of the grapefruit and place it in the bottom of a cocktail shaker. Add the simple syrup, lime juice, 1/2 ounce of maraschino liqueur, and the rums to the cocktail shaker. Add ice, attach the top of the cocktail shaker and the shake vigorously. Double strain the drink into cocktail glasses and place three of the cherries on a toothpick on the side of each glass for garnish.
• Using a sharp knife, slice a small section of grapefruit peel from half of the grapefruit. Light a kitchen match, and holding the match over a cocktail glass, squeeze the grapefruit peel twice over the flame to release the oil for aromatics. Repeat the process for the other cocktail.

BING CHERRY DAIQUIRI

Steps:

• Shake all ingredients until well chilled, strain into a cocktail glass, garnish with a lime wheel.

BING CHERRY MOJITO

Steps:

• Bring sugar and plain water to a boil in a small saucepan, stirring until sugar has dissolved. Remove from heat and let cool completely.
• Put lime juice into a medium non-reactive bowl. Halve and pit the cherries; add to lime juice. Stir in syrup. Refrigerate at least 1 hour, up to overnight.
• Stir cherry mixture and vodka in a large serving bowl. Fill 12 glasses with ice. Spoon 1/2 cup cherry-vodka mixture into each glass, top off with sparkling water and serve immediately.

BING CHERRY ICE CREAM SAUCE

Steps:

• Drain cherries, reserving juice. Place juice and cornstarch in a saucepan. Cook, stirring constantly, until thickened. Stir in extract and cherries. Serve warm over ice cream or Old-Fashioned Frozen Vanilla Custard (recipe also found in Recipe Finder).

BING CHERRY DELIGHT

Steps:

• Combine milk and lemon juice. Fold in cherries. In another bowl, beat cream until stiff peaks form. Gently fold cream and pecans into cherry mixture., Spread into an ungreased 11x7-in. dish; sprinkle with wafer crumbs. Freeze, covered, until firm. Remove from freezer 15 minutes before cutting. May be frozen up to 2 months.
