SPAGHETTI WITH TOMATO AND BASIL

1/3 cup extra-virgin olive oil
20 ripe plum tomatoes, peeled and seeded
Pinch crushed red pepper
Kosher salt and freshly ground black pepper
6 fresh basil leaves, chiffonade
1 pound spaghetti
1 tablespoon unsalted butter
1-ounce freshly grated Parmigiano-Reggiano, (about 2 tablespoons)

Steps:

  • In a wide pan over medium-high heat, heat 1/3 cup of olive oil until quite hot. Add the tomatoes, red pepper flakes, and season lightly with the salt and pepper. (I always start with a light hand with the salt and pepper because as the tomatoes reduce, the salt will become concentrated.) Using a potato masher, mash the tomatoes finely. (This will be easier to do as the tomatoes begin to heat up.) Cook the tomatoes for 20 to 25 minutes, until the tomatoes are tender and the sauce has thickened.
  • Meanwhile, stack and roll the basil leaves into a cylinder and cut thinly crosswise into a chiffonade.
  • Bring a large pot of amply salted water to a boil. Cook the spaghetti until just shy of al dente. Reserve a little of the pasta cooking water. Add the pasta to the sauce and cook over medium-high heat, gently tossing the pasta and the sauce together with a couple of wooden spoons and a lot of exaggerated movement (you can even shake the pan) until the pasta is just tender and the sauce, if any oil had separated from it, now looks cohesive. (If the sauce seems too thick, add a little pasta cooking liquid to adjust it.) Take the pan off of the heat and toss the butter, basil and cheese with the pasta in the same manner (the pasta should take on an orange hue) and serve immediately.
  • Cook's Note: Here is a good tip for peeling and seeding tomatoes: Bring a large pot of water to a boil. Have a large bowl of ice water nearby. Cut a small shallow X on the bottom of each tomato. Ease about 5 tomatoes into the pot and cook for about 15 seconds, and then promptly move them to the ice water. (Do this with the remaining tomatoes.) Pull off the skin with the tip of a paring knife. If the skin sticks, try a vegetable peeler using a gentle sawing motion. Cut the tomatoes in half and use your finger to flick out the seeds.

Steps:

  • In a saucepan of boiling water blanch tomatoes, 2 or 3 at a time, 10 seconds and transfer to a bowl of ice and cold water. Peel, seed, and dice tomatoes.
  • In a large heavy kettle steam clams in water, covered, over moderately high heat 5 to 10 minutes, checking after 5 minutes and transferring them as they open to a bowl. (Discard any clams that are unopened after 10 minutes.) Remove kettle from heat, reserving liquid.
  • In a 6-quart kettle bring 4 quarts salted water to a boil and cook linguine until al dente. Drain linguine in a colander.
  • While linguine is cooking, with a small knife remove meat from the largest 24 clams, discarding shells, and in a food processor pulse just until chopped coarse. Into reserved clam liquid stir chopped clams, tomatoes, garlic, oil, and red pepper flakes and simmer 2 minutes. Add linguine, basil, remaining 12 clams in their shells, and any liquid in bowl and toss well with salt and pepper to taste.

2 cups oyster mushrooms (chopped)
1 big onion, diced
400 g tomatoes (1 can chopped and peeled tomatoes)
1/2 glass red wine
1 -2 pinch chili powder (optional)

2 teaspoons dry basil leaves
sea salt, to taste
ground pepper, to taste
1 -2 tablespoon olive oil

Steps:

  • Cook spaghetti as per package directions. Rinse and set aside.

This is a great dish when you have little time to cook but something fulfilling and with great taste. The original recipe calls for 1 lb of spaghetti, but since I like more sauce I decreased the amount to 3/4 lb. It's up to you how much pasta you'd like to use. The sauce comes together quickly and the results are always excellent. Begin the sauce as soon as you turn the pasta water on to boil. It's that fast! Recipe courtesy of Eva Longoria.

3/4 lb dried spaghetti
1 tablespoon olive oil
1/2 small onion (yellow or white)
4 garlic cloves, minced
2 bunches fresh basil, leaves chopped
ground black pepper and kosher salt, to taste
14 1/2 ounces whole tomatoes with juice
8 ounces tomato sauce
1/4 cup parmigiano-reggiano cheese, grated (about 1 oz)
1 teaspoon dried red pepper flakes (opt. to taste)

Steps:

  • Bring a large pot of salted water to boil. Cook the spaghetti to al dente, about 8 minutes or according to your package directions.
  • Meanwhile, heat the oil in a large skillet over medium heat. Add the onion, garlic, half of the basil and a pinch each of salt and pepper. Cook, stirring occasionally, until translucent - about 5 minutes. Add the tomatoes and the tomato sauce. Bring to a simmer while you break up the tomatoes with the side of a spoon. Simmer gently for about 4 minutes. Season with salt and pepper to taste.
  • Drain the pasta and put in a large serving bowl. Pour over the sauce and add all but a handful of the left over basil. Toss until the pasta is well coated with sauce. top with the remaining chopped basil, grated cheese and dried red pepper flakes. Enjoy!

3 tablespoons extra virgin olive oil
3 garlic cloves, peeled
1/2 teaspoon crushed red pepper flakes
3 lbs littleneck clams, washed and brushed
1/2 cup dry white wine, such as Pinot Grigio
2 cups lidia's flavors of italy tomato sauce, with basil or 2 cups tomato and basil pasta sauce
2 scallions
10 fresh basil leaves, washed, dried, and cut into very thin strips, chopped
salt, to taste

Steps:

  • In a large and wide heavy casserole or dutch oven, over a medium flame, heat 3 tablespoons of the olive oil. Add the garlic and cook until golden brown, stirring for approximately 2 minutes. Add crushed red pepper flakes, stir, than add the clams and wine. Place a lid on the pot, turn flame to high, and cook shaking the pot occasionally for approximately 7 minutes or until clams begin to open.
  • Pour in tomato sauce, add scallions and basil. Stir well and bring mixture to a boil.
  • Using a slotted spoon, transfer clams to a serving platter and discard any unopened shells. Spoon sauce over the clams and serve immediately.

Fast, easy, and very delicious!! I usually have everything that I need for this recipe on hand. Use as much or as little garlic that you like, or, that your family and friends can tolerate. You can throw in a pinch of crushed red pepper flakes, if you want...but, I prefer it without. Served with a salad, some fresh Italian bread, a glass of wine...and, presto, dinner is ready!

2 (6 1/2 ounce) cans minced clams
1/4 cup dry vermouth (red or white wine, your choice) or 1/4 cup dry wine (red or white wine, your choice)
1/4 cup extra virgin olive oil
2 tablespoons butter
4 garlic cloves, minced (more or less, if desired)
3 tablespoons chopped fresh Italian parsley
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon salt (or to taste)
1/4 teaspoon fresh ground black pepper (or to taste)
1 (28 ounce) can san marzano tomatoes (regular canned Italian or crushed tomatoes will do, but San Marzano are the best.)
1 (8 ounce) can tomato sauce
1 pinch crushed red pepper flakes (optional)
1 (1 lb) package spaghetti or 1 (1 lb) package linguine, cooked al dente according to package directions
4 -6 tablespoons freshly grated parmesan cheese (optional)

Steps:

  • Drain the clams and reserve the juices. To the reserved juices, add enough vermouth or wine to measure about 3/4 cup (approximately 1/4 cup of vermouth or wine).
  • In a large saucepan over medium heat, heat the olive oil and butter. Add the minced garlic and simmer for about 3 minutes, or until garlic begins to color; do NOT let the garlic brown or the sauce will taste bitter. Add the parsley, oregano, basil, salt, pepper, tomatoes, tomato sauce, and clam juice/vermouth mixture, and a pinch of crushed red pepper, if desired. Break the tomatoes up with the back of a wooden spoon. Reduce heat and simmer for 45 minutes, stirring occasionally.
  • Add the clams and cook just long enough to heat through, a minute or so.
  • Meanwhile, cook the pasta in boiling salted water until al dente, according to package instructions. Place the spaghetti into serving bowls and pour the sauce over each. Pass the grated Parmesan cheese and sprinkle, if desired.
  • Mangia!

10 ounces spaghetti or 10 ounces linguine
2 1/2 tablespoons extra virgin olive oil, divided use
4 garlic cloves, minced
4 ounces mixed mushrooms, finely chopped (optional)
2 (6 1/2 ounce) cans minced clams, including juice from 1 can
1/16 teaspoon red pepper flakes (optional)
3/4 teaspoon italian seasoning
2 teaspoons fresh oregano or 1 teaspoon dried oregano
2 tablespoons white wine
1/2 lemon, juice of
fresh ground black pepper
1 bunch fresh Italian parsley, coarsely chopped (or less, if you prefer)

Steps:

  • Start water to boil for pasta.
  • Heat 2 tablespoons oil over medium high heat in a small or medium saucepan.
  • Add garlic and saute until softened, a few minutes. Add mushrooms (if using), clams, and juice from one of the cans of clams. Turn heat to high.
  • Add red pepper flakes, Italian seasoning, oregano, wine, and lemon juice. Let simmer on high until at least three fourths of liquid has evaporated, about 10-15 minutes.
  • Meanwhile, cook pasta until it is al dente.
  • Drain pasta. Add pasta back to empty pot (off heat) and coat with 1/2 tablespoon of oil.
  • Take sauce off heat. Add black pepper to taste, and parsley.
  • Immediately add half of the sauce to the pasta and toss.
  • Plate pasta, top with other half of sauce, and serve.

Spaghetti with Razor Clams, Seaweed, and Tomato-Basil Sauce image

This dish brings back memories of my childhood. I grew up only ten miles from the coast, and spent many Sunday mornings with my friends on the beach digging for clams, which we'd bring home to cook. I love the dense, chewy texture of razor clams, but if they're not available, other clams work great with this recipe, too, including Manila, Asari, and littleneck.

6 Roma tomatoes
1/4 cup extra-virgin olive oil
3 tablespoons minced shallot
1 tablespoon minced garlic
1/2 cup diced red bell pepper
1/4 cup tomato paste
1 1/2 teaspoons sugar
2 teaspoons balsamic vinegar
1/4 cup minced basil leaves
2 teaspoons salt
Pinch of pepper
(makes 2 cups)
1 pound razor clams, alive and in shells (can be found in fish markets or Asian grocery stores; or substitute with any type of shellfish)
3 tablespoons dried wakame
2 cups hot water
12 ounces dried spaghetti
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
Pinch each of salt and pepper

Steps:

  • To make the sauce, prepare a small ice bath and bring a pot of water to a boil. With a paring knife, remove the core from the tomatoes and lightly score an X on the bottoms. Blanch the tomatoes in a two-step process: add 1 tomato to the boiling water for 10 seconds, then remove and submerge in the ice bath for 10 seconds. Now add this same tomato to the boiling water again, this time for 5 seconds, and then submerge in the ice bath until cold. Drain. Repeat with the remaining 5 tomatoes.
  • Once chilled, peel the skins off the tomatoes with a paring knife, then cut the tomatoes into quarters. Use the paring knife to remove and discard the seeds, then chop the tomatoes into small pieces.
  • Heat 2 tablespoons of the olive oil in a pot over medium heat. Add the shallot, garlic, and bell pepper and cook, stirring frequently, for 10 minutes, or until soft. Stir in the chopped tomatoes and the remaining 2 tablespoons olive oil and increase the heat to high. Once the liquid starts to boil (the tomatoes will release a lot of water), cook for 5 minutes, then stir in the tomato paste. Cook for 1 to 2 minutes longer, until tomato paste is well incorporated, then stir in the sugar, balsamic vinegar, basil, and salt and pepper. Adjust the seasonings to taste.
  • To make the spaghetti with razor clams, prepare the clams by cutting the shell with a paring knife. Remove the meat, keeping the pieces as whole as possible. Rinse well in salted water to remove any sand, then wash under cold running water for a few minutes. Cut the clams into 1-inch pieces and refrigerate until ready to use.
  • In a bowl, cover the wakame with the hot water and let sit for 10 minutes. Drain well and set aside.
  • Place a large pot of salted water over high heat and bring to a boil. Add the spaghetti noodles and cook, following package instructions. Drain well and return the noodles to the pot. Stir in the butter.
  • Place a sauté pan over high heat and add the olive oil. When the oil just begins to smoke, add the clams and season with the salt and pepper. Cook for 15 seconds, turn over the clams, season again with salt and pepper, and cook for 15 seconds longer. Remove the pan from the heat.
  • To serve, divide the noodles among 4 plates and top each with 1/2 cup of the sauce, then the wakame and clams.
