PUMPKIN SPICE NO-BAKE COOKIES

Steps:

• Mix sugar, butter, and milk together in a large pan and bring to a boil; continue to boil for 2 minutes. Turn off heat and add pudding mix. Stir very well; add oats and vanilla extract. Let mixture stand for 5 minutes.
• Drop mixture onto waxed paper by the teaspoon. Allow to cool completely, about 30 minutes. Store in an airtight container.

NO BAKE PUMPKIN COOKIES

Steps:

• In a medium saucepan, combine sugars, butter and milk. Over medium heat, stirring occasionally, bring the mixture to a boil and boil for 2 minutes.
• Remove the mixture from heat and add the pudding mix, stirring until well combined.
• Add the pumpkin pie spice and vanilla and mix well. Mix in the oats and then let the mixture sit for about 5 minutes.
• Use a cookie scoop to drop the mixture by tablespoonfuls onto a cookie sheet lined with wax paper. Allow them to cool completely in order to fully set. Store at room temperature or in the refrigerator.

PUMPKIN SPRITZ COOKIES

Steps:

• Pre-heat oven to 400°F.
• In a large mixing bowl beat butter until creamy, about 3 minutes. Beat in sugar and spices until well combined and the granules have begun to melt. Mix in pumpkin, egg and vanilla until well combined.
• In a separate bowl, stir together flour and baking powder. Stir flour mixture into butter mixture until well combined.
• Place into a cookie press and press out shapes onto an ungreased baking sheet.
• Lightly sprinkle cookies with the spiced sprinkling sugar.
• Bake 6 to 8 minutes or until set but not browned. Allow to cool 2 minutes on baking sheet then remove to wire racks to cool completely.

• Blend sugars and butter.
• Add egg, pumpkin and extract,mix in dry ingredients,& stir in raisins.
• Drop by spoonfuls on baking sheet, bake for 23 minutes.
