8 ounces thin spaghetti
One 8-ounce bag julienne/fine-cut carrots (about 1 1/2 cups)
One 6-ounce bag baby sweet peppers, seeded and sliced thinly into rings (about 1 cup)
One 4-ounce bag bean sprouts (about 1 cup)
3 English cucumbers, halved, seeds removed and sliced
3 scallions, sliced
Up to 1 bunch fresh cilantro, chopped
1/2 head or more napa cabbage, sliced
1/2 head or more purple cabbage, sliced
1/2 bunch kale, leaves torn off the stalks and shredded
2 cups peanuts, chopped
1/2 cup olive oil
1/3 cup low-sodium soy sauce
1/4 cup oyster sauce
1/4 cup rice wine vinegar
1/4 cup brown sugar
3 tablespoons chopped fresh ginger
2 tablespoons sesame oil
2 to 3 cloves garlic, chopped

Steps:

  • For the salad: Bring a pot of water to a boil. Cook the spaghetti to al dente according to the package directions. Drain, rinse and let cool.
  • Mix together the cooked spaghetti, carrots, peppers, bean sprouts, cucumbers, scallions, cilantro, napa cabbage, purple cabbage and kale. Add the peanuts and toss together.
  • For the dressing: Whisk together the olive oil, soy sauce, oyster sauce, rice wine vinegar, brown sugar, ginger, sesame oil and garlic in a medium bowl.
  • Pour the dressing over the salad and mix together with tongs or your hands. If the salad seems a little dry, just mix up a little more of the wet ingredients of the dressing and throw it in. It's a very organic process.
  • Transfer to a large platter and serve.

Kosher salt
1/2 pound thin spaghetti
1 pound sugar snap peas
1 cup vegetable oil
1/4 cup rice wine vinegar
1/3 cup soy sauce
3 tablespoons dark sesame oil
1 tablespoon honey
2 garlic cloves, minced
1 teaspoon grated fresh ginger
3 tablespoons toasted white sesame seeds, divided
1/2 cup smooth peanut butter
2 red bell peppers, cored and seeded, and thinly sliced
4 scallions (white and green parts), sliced diagonally
3 tablespoons chopped fresh parsley leaves

Steps:

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions. Drain and set aside.
  • Meanwhile, bring another large pot of salted water to a boil, add the sugar snap peas, return to a boil, and cook for 3 to 5 minutes, until crisp tender. Lift the sugar snap peas from the water with a slotted spoon and immerse them in a bowl of ice water. Drain.
  • For the dressing, whisk together the vegetable oil, rice wine vinegar, soy sauce, sesame oil, honey, garlic, ginger, 2 tablespoons sesame seeds and peanut butter in a medium bowl.
  • Combine the spaghetti, sugar snap peas, peppers and scallions in a large bowl. Pour the dressing over the spaghetti mixture. Add the remaining 1 tablespoon of sesame seeds and the parsley and toss together.

8 kaffir lime leaves (from supermarkets and oriental food stores)
4 tbsp blocks egg noodle
4 tbsp sesame oil
2 red peppers , deseeded and finely sliced
2 carrots , sliced into batons
large knob ginger , finely chopped
bunch spring onion , finely sliced
6 tbsp soy sauce
2 large handfuls beansprouts
250g block tofu , cut into cubes
1 large bunch coriander , stalks finely chopped, leaves roughly chopped
2 garlic cloves , finely chopped
150ml rice wine vinegar
2 sticks lemongrass
1 small piece fresh red chilli (about one-third)
2 tbsp golden caster sugar

Steps:

  • To make the dressing, tip all the ingredients and 4 of the torn lime leaves in a small saucepan and bring to a simmer. Boil for 1 min, then remove from the heat to infuse.
  • Cook the noodles according to pack instructions, then drain and toss with 3 tbsp of the sesame oil. Leave to cool, tossing occasionally so they don't stick. Set aside.
  • Heat the rest of the oil in a wok and stir-fry the peppers, carrots, ginger and garlic for just 1 min, then set aside. To serve, tip the noodles into a bowl and drain over the dressing. Finely shred the remaining lime leaves and toss in with all the other ingredients, setting aside a small handful of coriander leaves. Taste the noodles, adding a splash more vinegar, soy or sesame oil to suit your taste. Pile the noodles onto a platter or into a large bowl. Scatter over the rest of the coriander and serve.

1 ½ teaspoons dark sesame oil
⅓ cup rice vinegar
⅓ cup soy sauce
1 lime, zested and juiced
2 tablespoons brown sugar
2 cloves garlic, minced
2 teaspoons red pepper flakes, or to taste
1 cup finely grated carrot
½ cup chopped fresh cilantro
¼ cup coarsely chopped salted peanuts

Steps:

  • In a large pot, cook soba noodles according to package directions. Drain, rinse noodles with cold water, and set aside.
  • Pour sesame oil, rice vinegar, soy sauce, and lime juice into a large bowl. Mix in lime zest, brown sugar, garlic, and red pepper flakes; stir until sugar dissolves. Toss in carrots, cilantro, and peanuts.
  • Cut noodles into 3-inch lengths. Stir into dressing mixture. Cover, and refrigerate at least 1 hour.
  • Toss salad again before serving. If dry, splash with soy sauce and vinegar. Serve cold.

17 1/2 ounces cellophane noodles, Dangmyeon
2 medium carrots, cut into match sticks
3 celery ribs, thinly sliced
4 cups bean sprouts
4 cups napa cabbage, roughly chopped
10 dried shiitake mushrooms, stems removed
2 scallions, thinly sliced into long pieces
1 cup cilantro, roughly chopped
2 garlic cloves, minced
1/8 teaspoon sesame oil
1 tablespoon extra virgin olive oil
1/4 teaspoon sugar
2 tablespoons oyster sauce
2 tablespoons sesame seeds, toasted
1/4 teaspoon white vinegar
1/2 teaspoon sugar
1 tablespoon mushroom flavored dark soy sauce
2 tablespoons soy sauce
1 teaspoon sesame oil

Steps:

  • Soak the shiitake mushrooms for at least 2 hours in lukewarm water. Wring the water out of the mushrooms, and slice them thinly (approx 1/8 inch thick). Set aside.
  • Stir fry the veggies. Start by heating the garlic, on high heat, with the olive oil for approx 30 seconds.
  • Add in the scallions, carrots, celery, shiitake mushrooms, 1/4 tsp of the sugar, and 1 Tbsp of oyster sauce and continue to stir fry for about 4-5 minutes.
  • Add in the napa cabbage, bean sprouts, and the rest of the oyster sauce, and stir fry for 5 minutes.
  • Turn off the heat and set aside.
  • Bring a large pot of water to a boil.
  • Boil the dangmyeon noodles for 7-10 minutes.
  • Drain the water, and rinse the noodles in cold water.
  • Set aside.
  • Create the sauce for noodles by combining the vinegar, sugar, dark soy sauce, soy sauce, and sesame oil in a bowl and mix until the sugar dissolves.
  • In a large serving bowl, combine the noodles with the sauce and ensure that it is evenly distributed.
  • Add in the stir fried veggies, fresh cilantro, and toasted sesame seeds.
  • Mix well and serve.
  • This dish can be enjoyed hot or cold.

1 teaspoon salt

1/2 cup red bell pepper, julienned
1 cup edamame (japanese soy bean)
2 cups broccoli, blanched
3 tablespoons rice wine vinegar
3 tablespoons soy sauce
1 tablespoon mirin
1 tablespoon hoisin sauce
1 teaspoon sesame oil
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
3 tablespoons extra virgin olive oil

Steps:

  • Add salt to boiling water.
  • Cook soba noodles according to instructions.It normally takes 7-8 minutes.
  • Drain noodles and run cold water through to stop the cooking process.
  • Set soba noodles aside.
  • In a medium bowl, combine vinegar, soy sauce, mirin, sesame oil, garlic powder, pepper. Slowly add olive oil and whick to thicken.
  • Mix noodles with all vegetables and pour sauce over it.
  • Mix well and chill in the fridge.
