- In 12-inch nonstick skillet, heat oil over medium heat. Cook ham steak in oil 6 to 8 minutes, turning once, until browned and hot. Remove steak to deep serving platter; cover to keep warm.
- In same skillet, cook bell pepper and onion over medium heat 2 to 4 minutes, stirring frequently, until crisp-tender. Stir in beans and barbecue sauce. Heat until bubbly. Pour beans over ham.

- 1. In a deep Skillet, heat olive oil at med heat. Add diced onion and diced garlic. Stir until onion is clear, and garlic is fragrant. Toss in diced Ham. Stir.
- 2. Reduce heat, and add drained beans and canned tomatoes. Stir in Chili powder, add salt to taste. Bring up the heat to med. Cover. Cook to reduce liquid.
- 3. Add in Rice. Stir. Slowly add in chicken broth. Heat skillet to boiling, then reduce to a simmer until liquid is absorbed. As soon as that happens, sprinkle with shredded cheese of your choice. cover until cheese has melted.

- Combine the beans, 3 cups water, the onion, ketchup, maple syrup, brown sugar, mustard, molasses, Worcestershire sauce, vinegar and 1/4 teaspoon pepper in a 6-quart slow cooker. Set the ham on top, then cover and cook on high, 8 hours.
- Transfer the ham to a platter and skim off the excess fat from the beans. Slice the ham and serve with the beans.

- Heat the oil in a large lidded skillet (about 4.5 quart/11 inch) over medium-high heat. Add the ham and lightly brown.
- Add the onion, bell pepper, and celery; cook and stir until vegetables are tender, about 5 minutes.
- Add the garlic, fresh parsley, Cajun seasoning, pepper and bay leaf.
- Add stock/broth.
- Drain, rinse, and mash one can of the beans and stir in.
- Add the remaining can of drained beans, green onion and rice.
- Mix well, bring to a boil, cover and reduce heat to a medium-low simmer.
- Cook, covered, for about 8 to 10 minutes, or until liquid is absorbed and rice is tender.
- Fluff with a fork, taste and adjust seasonings as needed; serve immediately.

- Combine first 6 ingredients in a medium saucepan, stirring well and bring to a boil.
- Reduce heat, and simmer, uncovered, 5 minutes; stir frequently.
- Remove sauce from heat, and set aside.
- Trim excess fat from ham slices.
- Grill over medium coals 20 to 25 minutes or until desired degree of doneness.
- Turn ham slices and baste every 5 minutes with reserved sauce.
- Grill pineapple slices over medium coals 1 minute on each side.
- Garnish ham with pineapple, and serve with remaining sauce.
- Variation Use orange juice and lime juice instead of pineapple juice and lemon juice.

This is an inexpensive, easy to make meal that I came up with one night when I was in a hurry. It is very versatile and can be made to fit your family's taste. I like to brown the shredded hash browns first, but a friend of mine likes to put her's in right from the bag. This will satisfy the meat and potatoes lover in all of us.

- Fry shredded hash browns in skillet.
- While hash browns are frying, brown ground beef in a large, deep skillet or stock pot. As beef is browning, add diced onion. After beef is browned, drain (if needed) and sprinkle with beef bouillon. Add cream of mushroom soup and 1/4 can of milk. Stir until everything is well blended. Add green beans and let simmer until heated through.
- Add hash browns. If you like it to be a little thinner, add more milk. That's all there is too it.
- This dish is very versatile and can be changed to suit anyones taste. You could add/change any vegetables you like such as green peppers, corn, peas, etc., as well as experiment with different seasonings. You can even top off the dish with your favorite kind of shredded cheese and let it melt on top. I make this dish three or four times a month because it is so fast, easy and versatile.
