8-pound bone-in pork picnic shoulder
1/3 cup freshly cracked black pepper
3 tablespoons paprika
2 tablespoons granulated garlic powder
2 tablespoons granulated onion powder
1/4 cup salt
1/4 cup chili powder
1/4 cup ground cumin
1/4 cup dark brown sugar
1/4 cup hot dry mustard
1 teaspoon cayenne
Mop Sauce, recipe follows
Wilsons' BBQ Award Wining Eastern Carolina Vinegar Sauce, recipe follows
Fo Slaw, recipe follows
Ciabatta rolls or other crunchy, chewy rolls
1 cup apple cider vinegar
1/2 cup water
2 tablespoons Worcestershire sauce
1 tablespoon freshly cracked black pepper
2 tablespoons cayenne pepper
1 tablespoon salt
2 tablespoons canola oil
1 quart cider vinegar
1 cup water
1/8 cup red pepper flakes
1/4 cup sugar
1 tablespoons Worcestershire
1 tablespoons kosher salt
1 tablespoons black pepper
One 16-ounce bottle ketchup
3/4 cup mayonnaise
2 tablespoons sugar
1 tablespoon Dijon mustard
1 tablespoon horseradish
1 teaspoon salt
2 teaspoons black pepper
2 tablespoons white vinegar
1 head cabbage, cored, tough leaves removed and shredded
2 small carrots, shredded

Steps:

  • Rinse and dry the pork shoulder. Let rest at room temperature for 1 1/2 hours. In a small bowl, combine black pepper, paprika, garlic powder, onion powder, salt, chili powder, cumin, brown sugar, dry mustard and cayenne. Rub mixture all over the pork.
  • Arrange the oven racks in the middle and lower parts of the oven and preheat to 225 degrees F. Put a sheet tray on the lower rack and the pork directly on the middle rack, uncovered. Put the cast iron pan with the hickory chips on the floor of the oven. Remove the chips after 2 hours of cook time. The entire cooking time will be 8 to 10 hours.
  • Apply Mop Sauce every hour throughout the cooking time.
  • In the last hour of cook time, remove pork, wrap it tightly in plastic wrap, and then in aluminum foil and return to the oven for 1 more hour. Remove the pork from the oven to a work surface. Let rest until cool enough to pull the pork from the bones.
  • To serve, cut the buns in half and pile up some pulled pork. Top with the Vinegar Sauce, then a large spoonful of the Fo Slaw and a final spoonful of sauce. Cover with the bun top and serve.
  • Mop Sauce:
  • Combine all the ingredients in a medium bowl and reserve.
  • In a large saucepan, mix together all the ingredients, in the order given, over low heat. Simmer for 30 minutes.

  • Combine all the dressing ingredients together in a large bowl. Adjust seasonings, if necessary. Add the cabbage and the carrots and toss to coat. Cover with plastic wrap and refrigerate for 1 hour.

For the Pork:
4 tablespoons sweet paprika
2 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons dark brown sugar
2 tablespoons salt
1 tablespoon dried oregano
1 tablespoon sugar
2 tablespoons ground black pepper
2 teaspoons cayenne pepper
1 bone-in pork roast, preferably Boston butt (6-8 pounds)
Easy Barbecue Sauce:
2 tablespoons vegetable oil
1 onion, finely chopped
3 garlic cloves, minced
1½ cups ketchup
½ cup cider vinegar
¼ cup Worcestershire sauce
⅓ cup sugar
1 tablespoon chili powder
½ teaspoon cayenne pepper

Steps:

  • Add paprika, chili powder, cumin, brown sugar, salt, oregano, sugar, black pepper, and cayenne pepper to a small bowl and mix to combine. Rub the mixture into the pork roast, then wrap meat tightly with two layers of plastic wrap and refrigerate for at least 3 hours.
  • About 1 hour prior to cooking, unwrap the roast and let it come to room temperature. At the same time, soak 3-4 cups of wood chunks in cold water and then drain.
  • Heat the vegetable oil in a saucepan over medium heat, then cook the onion and garlic for about 5 minutes. Add the ketchup, vinegar, Worcestershire sauce, sugar, chili powder, and cayenne pepper, then reduce the heat and simmer until the sauce has thickened, about 20 minutes. Transfer to a bowl and set aside.
  • Preheat grill to high. Place the wood chips in a smoker box or vented foil pouch and heat until they begin to smoke. Turn the heat down to medium. When your grill is about 250 degrees, place the pork on the grill and cook until it is fork-tender and the internal temperature reaches 165 degrees, about 5-6 hours. Rotate the meat every 45 minutes.
  • Transfer the pork to a rimmed baking sheet. When cool enough to handle, use two large forks to shred the meat into bite-size pieces. Mound the meat onto a platter and toss with 1 cup of the barbecue sauce. Serve the remaining sauce with the buns of your choice.

PORK AND BROCCOLI RABE CIABATTA SUBS

You can make this make-ahead meal in two strategies: Prepare and tie the pork, and trim the rabe and store. Then roast the pork and parboil the broccoli rabe on the day you want to serve. Or roast the pork and parboil the broccoli rabe a few days before and reheat both the sliced pork and rabe in simmering chicken broth.

One 5-pound pork shoulder, boned, skin-on
3 to 4 tablespoons fresh rosemary leaves, chopped
2 teaspoons fennel seeds, 2/3 palmful
1 1/2 teaspoon crushed red pepper flakes, half a palmful
1 head (8 to 10 cloves) garlic, finely chopped
Kosher salt and coarse black pepper
1 small onion, peeled1 teaspoon baking soda, optional
EVOO, for liberal drizzling
2 bundles broccoli rabe, trimmed into 5- to 6-inch stalks
10 ciabatta rolls, 6 to 8 inches long
1 large ripe lemon, zested and reserved
1/2 cup fresh flat-leaf parsley leaves
2 to 3 cloves garlic, crushed
1 fresh Fresno chile pepper, seeded and finely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • For the pork and broccoli rabe: Butterfly the pork, cut the meat across, but not all the way through, and open the shoulder up like a book. If the meat is a little uneven, then pound it out to even. Sprinkle the pork evenly across the surface with the rosemary, fennel seeds, red pepper flakes, garlic and some salt and pepper. Grate the onion over the meat with the large side of a box grater or with a wide tooth fine grater and spread it around the meat. Roll and tie the pork with kitchen string to secure. If using, rub the skin with the baking soda for extra crispy skin. Drizzle or spray with a little oil and sprinkle with salt and pepper.
  • Roast the pork on the center rack, covered with foil, to an internal temperature of 145 degrees F, about 2 1/2 hours. Remove the foil and broil to crisp the skin, 15 to 20 minutes. Let the pork rest before slicing.
  • Bring a few inches of water to a boil in a deep skillet. Salt the water, then add the rabe and boil to cook out the bitterness, 5 to 7 minutes. Drain.
  • For the gremolta: Place the lemon zest on a cutting board and pile the parsley, garlic and chiles on top. Finely chop them all together to combine them. Cut the zested lemon into 10 wedges.
  • Toast the split ciabatta and drizzle with EVOO. Arrange 3 to 4 thin slices of pork in sandwich and douse with a squirt of lemon juice, top with gremolata and rabe and set tops in place.

CIABATTA DELI SANDWICHES: A HEARTY ITALIAN-STYLE SANDWICH

4 ciabatta rolls, halved lengthwise
mayonnaise, to taste
2 cups iceberg lettuce, shredded
1 large plump beef steak tomatoes, sliced thin
kosher salt & freshly ground black pepper, to taste
1 red onion, sliced thin and separated into rings
1 green pepper, seeded and sliced into thin rings
10 ounces whole-milk mozzarella cheese, thinly sliced
12 fresh basil leaves, rinsed and patted dry
1/2 cup black olives, sliced
hard salami, baked ham, capacolla
italian vinaigrette (Recipe Below)
red pepper flakes, to taste

Steps:

  • Spread desired amount of mayonnaise on each ciabatta's top and bottom.
  • Layer the ciabatta bottoms with shredded lettuce, salt and peppered tomato slices, onion and pepper rings, mozzarella, basil leaves, the deli meats, and sliced olives. (NOTE: You can mix-up the order of these ingredients to your liking.)
  • Drizzle with vinaigrette and sprinkle with red pepper flakes. Cover with the ciabatta tops.
  • Cut the ciabatta sandwiches in half on the diagonal and wrap in plastic wrap or waxed paper. Take a few books and set on top of the sandwiches to weigh them down and soak in the vinaigrette.
  • Unwrap and enjoy!
  • ITALIAN VINAIGRETTE: 1/2 cup olive oil, 1/4 cup vinegar, 1 tablespoon sugar, 1/2 teaspoon garlic powder, 1/2 teaspoon Italian seasoning, 1/8 teaspoon coarse ground black pepper, and 1/8 teaspoon salt.
  • Mix all ingredients in medium bowl with wire whisk until well blended. Cover. Refrigerate until ready to serve. Makes 6 (2-tablespoon) servings. Prep Time: 5 minutes.

4 1/2 lbs boneless pork roast, trimmed of fat
3 tablespoons olive oil
3 garlic cloves, minced
2 tablespoons fennel seeds, lightly crushed
1 1/2 tablespoons finely minced fresh rosemary leaves
1/2 teaspoon ground cloves
1 teaspoon kosher salt
2 teaspoons fresh coarse ground black pepper
2 large bay leaves
1 large white onion, chopped
10 italian ciabatta rolls
softened butter, to serve

Steps:

  • Rub the roast all over with the olive oil, then rub with the seasonings. Place roast in bottom of crock pot, and top with the bay leaves and chopped onion.
  • Cover and cook on HIGH for 1 hour, then reduce heat to LOW and cook 10-12 hours more until meat is falling apart, yet tender, and done.
  • Remove to a large cutting board and let cool slightly, then use two forks to pull apart the meat into chunks, discarding the bay leaves.
  • Stuff into warmed and buttered Italian ciabatta rolls, and dig in!
