COUNTRY HAM BREAKFAST CASSEROLE

Number Of Ingredients 12

Butter, for buttering the baking dish
6 slices country white bread, torn into 2-inch pieces
1 1/2 cups heavy cream
1 1/2 cups shredded sharp white Cheddar
1 1/2 cups cubed country ham
1 cup milk
1/2 cup chopped scallions
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
12 large eggs
1 teaspoon paprika
1/4 cup chopped chives, for garnish

Steps:

  • Butter a large baking dish and evenly spread out the torn bread to cover the bottom of the dish.
  • In a large bowl, beat to combine the heavy cream, cheese, ham, milk, scallions, salt, pepper and eggs. Pour the egg mixture over the bread and top with the paprika. Cover and refrigerate for at least 1 hour and up to overnight.
  • Remove the dish from the refrigerator 30 minutes before baking. Preheat the oven to 350 degrees F.
  • Uncover the dish and bake until puffed, golden and cooked through, about 45 minutes. Let cool 5 minutes, sprinkle with the chives and serve.

1 cup instant grits
1 1/4 cups boiling water
1 cup grated sharp cheddar cheese (about 4 ounces)
1 tablespoon butter
1/2 cup diced smoked ham (about 3 ounces)
1/8 teaspoon cayenne pepper
2 large eggs

Steps:

  • Preheat oven to 425°F. Butter 4- to 6-cup soufflé dish or casserole. Place grits in large bowl; whisk in 1 1/4 cups boiling water. Add cheese and butter; whisk until melted. Whisk in smoked ham and cayenne pepper. Season with salt and pepper. Mix in eggs. Pour batter into prepared dish. Bake spoon bread until set at edges but barely set in center, about 18 minutes.

Every Southern family has their own favorite version of spoon bread. This one is my favorite with genuine cured country ham.

3 cups milk
1 1/2 cups white cornmeal or 1 1/2 cups yellow cornmeal
1/2 cup butter, softened and cut into pieces
2 teaspoons baking powder
5 large eggs, separated
1 cup diced cooked country ham

Steps:

  • Lightly coat the inside of a 2-quart casserole with butter, set aside.
  • In a large pan, add the milk; bring to a boil.
  • Gradually add the cornmeal to the milk and stir quickly with a spoon as you slowly pour the cornmeal inches.
  • Lower the heat to low setting and cook, stirring continuously, until the mixture is thick--10 minutes or so.
  • Take the pan off the burner.
  • Add in the butter and baking powder; stir until the butter is all melted.
  • Set pan aside to cool.
  • In a mixing bowl, beat the egg yolks until light and frothy.
  • Stir egg yolks into the cooled cornmeal mixture.
  • Add the ham; stir to combine.
  • In a big mixing bowl, add the egg whites.
  • Beat using an electric mixer until stiff peaks form; fold egg whites into the cornmeal mixture (should see no trace of egg whites).
  • Transfer mixture to the prepared casserole dish.
  • Bake at 350° for 40 minutes or so, or until pick comes out clean.
  • Best when served hot.

1 package (8 ounces) cream cheese, softened
1/3 cup sugar
1 cup 2% milk
2 large eggs
2 tablespoons butter, melted
1 teaspoon salt
1/4 teaspoon ground nutmeg
Dash pepper
2-1/3 cups frozen corn, thawed
1 can (14-3/4 ounces) cream-style corn
1 package (8-1/2 ounces) cornbread/muffin mix

Steps:

  • In a large bowl, beat cream cheese and sugar until smooth. Gradually beat in milk. Beat in the eggs, butter, salt, nutmeg and pepper until blended. Stir in corn and cream-style corn. Stir in cornbread mix just until moistened. , Pour into a greased 3-qt. slow cooker. Cover and cook on high until center is almost set, 3-4 hours.

Creamy and comforting side dish that goes well with a hearty beef stew or winter-time soup. My grandfather made this and shared his recipe with me. Dish out with a spoon and serve with plenty of real butter. Enjoy!

2 ¾ cups milk
1 cup white cornmeal
2 tablespoons butter, softened
1 teaspoon salt
4 large eggs, separated
1 tablespoon white sugar
½ teaspoon cream of tartar
⅛ teaspoon cream of tartar
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an oven-proof cast iron Dutch oven or a deep baking dish.
  • Heat milk and cornmeal in the top of a double boiler over simmering water, stirring frequently, until thick and creamy, about 5 minutes. Remove cornmeal mixture from heat and stir in butter and 1 teaspoon salt until well combined.
  • Beat egg yolks, sugar, and 1/2 teaspoon cream of tartar together in a bowl until smooth; stir into cornmeal mixture.
  • Beat egg whites, 1/8 teaspoon cream of tartar, and 1 pinch salt together in a separate bowl using an electric mixer until soft peaks form. Lift your beater or whisk straight up: the egg whites will form soft mounds rather than a sharp peak. Gently fold egg white mixture into cornmeal mixture until well mixed and fluffy; pour into prepared Dutch oven.
  • Bake in the preheated oven until golden brown with a moist center, about 30 minutes. Allow to rest for 10 to 15 minutes before serving.

This is a lovely side dish to accompany most any dinner, but especially prime rib.

2 ¾ cups 1% milk
¼ cup whipping cream
1 ¼ cups finely ground white cornmeal
3 eggs, well beaten
3 tablespoons unsalted butter, divided
3 tablespoons white sugar
1 ¾ teaspoons baking powder
1 teaspoon salt
1 cup corn

Steps:

  • Combine milk and cream in a heavy saucepan and bring to a boil over high heat, whisking occasionally. While whisking, pour in cornmeal in a steady stream. Whisk vigorously to incorporate the cornmeal, about 1 minute. Remove from heat and set aside to cool to room temperature.
  • Transfer cornmeal mixture to the bowl of a stand mixer fitted with a paddle attachment. Add eggs, 2 tablespoons butter, sugar, baking powder, and salt. Mix on medium speed until uniform and aerated, about 15 minutes. Mix in the corn by hand.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Lightly butter a round 1 1/2-quart casserole dish with remaining 1 tablespoon butter. Pour batter into the casserole dish.
  • Bake in the preheated oven until golden brown and puffy and a toothpick inserted in the center comes out clean, about 30 minutes.
