GREEK HONEY AND ANISE TWISTS (KOULOURAKIA)



Greek Honey and Anise Twists (Koulourakia) image

Traditionally, these Greek cookies, known as koulourakia, are formed into rings, twists and half circles. In this recipe, they are shaped into bow ties and twists, then glazed with anise-flavored honey. These are delicately sweet and nice with coffee.

Yield Makes about 5 dozen

Number Of Ingredients 12

1/3 cup honey
4 tablespoons anise-flavored liqueur, such as Marie Brizard
2 tablespoons fresh lemon juice
4 1/4 cups all purpose flour
1 1/2 teaspoons salt
1 teaspoon baking powder
1 cup (2 sticks) unsalted butter, room temperature
1 cup sugar
3 large eggs
1 1/2 tablespoons aniseed
2 teaspoons finely grated lemon peel
Sesame seeds

Steps:

  • Mix honey, 2 tablespoons liqueur and juice in small bowl. Set glaze aside.
  • Preheat oven to 350°F. Lightly butter baking sheets. Combine flour, salt and baking powder in medium bowl. Using electric mixer, beat butter and sugar in large bowl until fluffy. Add eggs 1 at a time, beating well after each addition. Beat in remaining 2 tablespoons liqueur, aniseed and lemon peel. Gradually mix in dry ingredients.
  • Working with 1 tablespoon dough at a time, roll dough between palms and work surface into 7-inch ropes. Form into bow ties or twists. Place on prepared baking sheets, spacing evenly. Brush glaze over cookies. Sprinkle with sesame seeds. Bake cookies until pale golden, about 15 minutes. Transfer cookies to racks. Lightly brush cookies again with glaze. Cool. (Can be made ahead. Store in airtight container at room temperature up to 1 week, or freeze up to 1 month.)

Here's what you need: puff pastry block, flour, red bell pepper, green bell pepper, yellow bell pepper, onion, cooked chicken, fajita spice mix, cheddar cheese, egg

18 oz puff pastry block
1 sprinkle flour
⅓ cup red bell pepper
⅓ cup green bell pepper
⅓ cup yellow bell pepper
½ cup onion, about 1/2 an onion, diced
5.3 oz cooked chicken, shredded
1 tablespoon fajita spice mix
1 ½ cups cheddar cheese, grated
1 egg, beaten

Steps:

  • Dust a clean work surface with a sprinkling of flour, and roll half of the puff pastry into a large circle.
  • Place the largest plate you have (a pizza tray also works) on top of the pastry and tear around the edges to create a clean circle. Repeat with the other half of the pastry.
  • Preheat the oven to 200°C (400°F) (Gas Mark 6).
  • Fry the onions and mixed peppers until the onions are translucent.
  • Add the pre-cooked shredded chicken (to make shredded chicken, simply season and bake some chicken breasts, put it into a bowl and tear it up with 2 forks). Stir in the fajita spice mix and allow to cool while you do the next step.
  • Transfer one of the sheets to a baking tray, and spread the chicken fajita mix in an even layer, leaving about 1 cm (½ inch) free from the edge. Sprinkle a layer of cheese.
  • Cover with the second layer of puff pastry. Place an egg cup (or a shot glass) in the center of the pastry and make 8-10 even cuts all the way around the pastry.
  • Brush the beaten egg over the puff pastry.
  • Twist each segment twice to make it resemble a sun-like shape.
  • Bake for 18-22 minutes in the center of the oven, until deep golden brown and no grey patches remain on the pastry.
  • Enjoy!

1 sheet frozen puff pastry, thawed
1/2 cup unsalted butter, melted
3/4 cup sugar
2 1/2 teaspoons cinnamon
1 cup milk
8 ounces semisweet or milk chocolate, chopped
1/4 cup smooth peanut butter

Steps:

  • Preheat the oven to 400 degrees F. Line a sheet pan with parchment or buttered waxed paper.
  • Unroll the puff pastry on a work surface. Brush the pastry generously with melted butter.
  • In a small bowl, toss together the sugar and cinnamon. Sprinkle evenly over the pastry.
  • Working lengthwise, cut the pastry in half and then cut each half into 6 even strips, each 3/4-inch wide. Twist the strips to make long twisted "straws".
  • Transfer to the prepared pan, pushing the ends down with your thumb to help them stay in place on the pan and remain twisted. Bake until puffed and golden brown, about 20 minutes.
  • To make the sauce, heat the milk in a saucepan. Pour the hot milk over the chocolate and whisk to melt it. Whisk in the peanut butter until smooth. Keep sauce warm until ready to serve.
  • To serve, place the twists on a tray and serve with the sauce along side for dipping.

This is a kid pleaser that is a simple twist on my kids' favorite breakfast dish -- French Toast, and serving the maple syrup as a dipping sauce. There are lots of versions of this simple idea, but this is how we make it in our home. It's so easy that most kids can even help prepare it.

11 ounces refrigerated breadstick dough
1 -2 tablespoon cinnamon
1/4 cup sugar
4 -6 ounces maple syrup

Steps:

  • Preperatory steps - Preheat the oven to 350º. Also, lightly butter or grease a baking baking sheet (for convenience, I usually just use a no-stick spray). And last, pour about 1 to 1 1/2 ounces of maple syrup into 4 separate condiment cups; set aside.
  • Stir together the cinnamon and sugar, and place the cinnamon/sugar mixture in an even layer in a shallow dish.
  • Remove dough from package, and separate dough into 12 individual breadsticks. Roll each breadstick in the cinnamon/sugar mixture until both sides are evenly coated. Twist each coated breadstick 2 or 3 times, to make a spiral.
  • Place twisted breadsticks on the lightly coated baking sheet. Bake in a 350º oven for 12-15 minutes or until breadsticks are puffy and lightly golden brown.
  • Let cool for a minute on the baking sheet.
  • The recipe is intended for 3 French Twists and 1 1/2 ounce serving of maple syrup (for dipping the French Twists) per serving. But feel free to adjust serving sizes to suit your needs.

Brush with butter mixture; sprinkle with cheese. Bake at 400° for 8-12 minutes or until golden brown.

The original idea came from a Taste of Home recipe, Crisp Caraway Twists. Thought I would put a different spin on it and make it Greek. These are just addictive, can't eat just one.

1 package(s) pepperidge farm puff pastry- 2 sheets to a box, and the box is 17.3 oz
6 ounce(s) spinach and artichoke cream cheese spread
4 tablespoon(s) marinated artichoke hearts, chopped fine
2 tablespoon(s) kalamata olives, chopped fine
2 tablespoon(s) parmesean cheese, freshly grated (don't use in the green can)
1 large egg, beaten
1 tablespoon(s) water
2 teaspoon(s) sesame seeds

Steps:

  • Thaw the puff pastry to package directions.
  • Pre heat oven to 375°
  • Open up first sheet of puff pastry.
  • Process the artichoke hearts and kalamata olives in a food procesor.
  • Spread half cream cheese over dough and sprinkle half the olive mixture over cream cheese. Sprinkle half of the parmesean cheese over the filled dough.
  • Fold the pastry over, and press to close all around the edges.
  • Cut 18 strips cross wise through the dough.
  • In a bowl wisk the egg and water together, brush over the top of the filled pastry.
  • Sprinkle about 1 teaspoon sesame seeds over the dough.
  • Take the first strip, holding both ends, twist the dough into a twisty shape.
  • Repeat for second puff pastry dough.
  • Place on a baking sheet sprayed lightly with pam. Bake for 20 to 25 minutes , or until golden.
  • These are at their best warm right out of the oven.

2 tablespoons pitted Greek olives
1 package (17.3 ounces) frozen puff pastry, thawed
1 carton (6-1/2 ounces) spreadable spinach and artichoke cream cheese
2 tablespoons grated Parmesan cheese
1 large egg
1 tablespoon water
2 teaspoons sesame seeds
Refrigerated tzatziki sauce, optional

Steps:

  • Place artichokes and olives in a food processor; cover and pulse until finely chopped. Unfold 1 pastry sheet on a lightly floured surface; spread half of the cream cheese over half of pastry. Top with half of the artichoke mixture. Sprinkle with half of the Parmesan cheese. Fold plain half over filling; press gently to seal., Repeat with remaining pastry, cream cheese, artichoke mixture and Parmesan cheese. Whisk egg and water; brush over tops. Sprinkle with sesame seeds. Cut each rectangle into sixteen 3/4-in.-wide strips. Twist strips several times; place 2 in. apart on greased baking sheets., Bake at 400° for 12-14 minutes or until golden brown. Serve warm, with tzatziki sauce if desired.
