14 pitted dried plums (prunes)
3 tablespoons confectioners' sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream, whipped

Steps:

  • Place plums in a saucepan; cover with water. Cover and cook until tender; drain. Puree in a blender or food processor. Add sugar and vanilla; mix well. Pour into a bowl; cool. , Fold in whipped cream. Spoon into parfait glasses or dessert dishes. Chill for at least 2 hours.

1 ⅓ cups pitted prunes
⅓ cup water
⅓ cup white sugar
1 teaspoon lemon juice
1 teaspoon vanilla extract
6 egg whites
¼ teaspoon cream of tartar

Steps:

  • In a medium saucepan, simmer the prunes in water until soft, drain and puree. Combine the puree in a saucepan with the sugar and heat until the sugar dissolves. Add the lemon juice and vanilla.
  • Beat the egg whites until frothy, add the cream of tarter, and beat until stiff. Fold the prune puree into the egg whites.
  • Pour into a buttered and sugared 2 quart baking dish and bake in a preheated 300 degrees F (150 degrees C) oven until nicely browned. Refrigerate and serve chilled with whipping cream.

1 cup vegetable oil
3 eggs
1 ½ cups white sugar
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup buttermilk
1 ¼ teaspoons vanilla extract
1 cup prunes, pitted and chopped
1 ½ cups chopped pecans
¾ cup butter
¾ cup buttermilk
1 ½ teaspoons dark corn syrup
1 ½ cups white sugar
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour Bundt or tube pan.
  • In a medium bowl, mix together flour, soda, salt, allspice, cinnamon and nutmeg. Set aside.
  • In a large bowl, combine oil, eggs and 1 1/2 cup sugar. Beat 2 minutes at medium speed.
  • Add flour mixture, alternating with 1 cup buttermilk, starting and ending with dry ingredients. beat well after each addition. Stir in prunes, pecans and 1 1/4 teaspoon vanilla.
  • Pour into greased and floured bundt or tube pan and bake at 350 degrees F (175 degrees C) for 1 hour or until a toothpick comes out clean when inserted in the center.
  • Make large, deep holes in hot cake and pour topping in holes and on top of cake a little at a time, giving it time to soak in.
  • For the topping: In saucepan, over medium heat, cook butter, 3/4 cup buttermilk, corn syrup and 1 1/2 cup sugar until sugar and butter melt. Remove from heat and add 2 teaspoons vanilla and stir.

My Grandma's Natural Remedy for Constipation (Stewed Prunes) image

My sweet grandma used stewed prunes as a natural laxative, but my mom likes to eat them as a simple and healthy dessert because slow simmering softens and thickens dried plums into a sweet syrupy goodness. Healthier than taking Ex-lax.

15 pitted prunes (dried plums)
1 1/2 cups water
1 -2 tablespoon orange juice (optional)
milk, as desired (optional)

Steps:

  • In a small saucepan, place prunes, water, and orange juice. Bring to boil, cover, and simmer for 30 minutes.
  • Prunes will absorb most of the water, and the remaining water will thicken into a consistency of syrup. If there is a lot of liquid remaining, simmer, uncovered, for a few minutes until sauce reduces.
  • Transfer hot prunes and syrup to a bowl. Pour cold milk over the prunes to cover. Eat with a spoon.
  • HINT: This remedy should work within 24 hours and can be safely eaten as often and as long as needed.
  • NOTE: If you do not have constipation and just like the taste of stewed prunes, you may add 1/8 teaspoon of ground cinnamon to the prunes mixture before cooking (Cinnamon, oranges, and prunes pair well together.) However, do not add the cinnamon if you are using this for constipation because cinnamon is used as a natural cure for diarrhea and will have the opposite effect of a laxative.
  • One cup prunes contains 1274 mg of potassium, which prevents muscle cramps, and 12 grams of fiber to relieve constipation.

3 egg whites (save the yolks for the custard)
1/4 teaspoon salt
6 tablespoons sugar
1 (8 ounce) jar prune baby food
1 tablespoon lemon juice
1 cup milk
3 egg yolks
3 tablespoons sugar
1/2 teaspoon vanilla

Steps:

  • Beat together 3 egg whites with salt.
  • Add the 6 Tbsp.
  • sugar and beat until stiff.
  • Fold in the prunes and lemon juice.
  • Place in a casserole dish and place the dish in a pan of water.
  • Bake at 350F for 30 minutes.
  • Custard: Scald the milk in a double boiler.
  • Beat together egg yolks, sugar and vanilla.
  • Add this egg mixture slowly to the milk.
  • Continue cooking to thicken.
  • Serve the prune whip with the custard on top.

12 pitted prunes
24 freeze-dried raspberries
2 ounces bittersweet or semisweet chocolate, chopped

Steps:

  • Stuff a whole almond into the space where each prune pit was. Fold and press the prunes around the almonds (it's fine if the almonds peek through a bit). Put the prunes on a baking sheet lined with waxed paper and refrigerate 30 minutes.
  • Put the raspberries into a resealable plastic bag and crush into a fine powder. Place the powder in a small shallow bowl.
  • Put the chocolate in a small microwave-safe bowl. Microwave at 70 percent power for 1 minute. Remove from the microwave; the chocolate will still look solid but will be softened. Stir until smooth.
  • Dip one end of a prune in chocolate, let any excess drip back in the bowl, and then dip the chocolate end into the crushed raspberries to coat. Put the prune back on the baking sheet, almond-side down, and repeat with the remaining prunes. Let the prunes stand until the chocolate hardens enough to come away cleanly from the paper, about 15 minutes.

1 (.3-oz.) pkg. sugar free lemon gelatin

1 (8 oz.) container sugar free frozen whipped topping, thawed

Steps:

  • PLACE pineapple with juice in microwave-safe medium bowl. Microwave on HIGH for 1 minute. Add both flavors gelatin powder and stir for 1 minute or until dissolved. Chill 15 minutes.
  • STIR in preserves. Fold in 2 cups whipped topping. Chill for 1 hour or until firm.
  • SERVE in small custard cups topped with a dollop of whipped topping.

  • Cover prunes with water and simmer 15 minutes or until tender. Combine 1/2 cup liquid from cooking prunes, sugar, lemon juice, cinnamon, and salt in a saucepan and bring to boil continue to boil about 2 minutes. Remove from heat. Soften gelatin in cold water and stir into hot liquid, until dissolved. Beat egg whites until stiff. Pour hot liquid over egg whites and beat well. Add vanilla and prunes mix thoroughly but lightly. Portion fluff into 10 dessert cups. Chill until firm, about 2 hours. Top with whipped cream.
