WHITE CHICKEN CHILI
This White Chicken Chili is hearty, warming, creamy and perfectly comforting. It's a great alternative to traditional beef chili and makes a simple, yet completely delicious dinner! Makes about 8 cups.

Steps:
- Heat olive oil in a large pot over medium-high heat. Add onion and saute 4 minutes minutes. Add garlic and saute 30 seconds longer.
- Add chicken broth, green chilies, cumin, paprika, oregano, coriander, cayenne pepper and season with salt and pepper to taste. Bring mixture just to a boil then reduce heat to medium-low and simmer 15 minutes.
- Drain and rinse beans in a fine mesh strainer or colander then measure out 1 cup. Set whole beans aside, transfer 1 cup beans to a food processor along with 1/4 cup broth from soup, puree until nearly smooth**.
- Add Neufchatel cheese to soup along with corn, whole beans and pureed beans and stir well. Simmer 5 - 10 minutes longer.
- Stir in chicken, fresh lime juice and cilantro. Serve with Monterrey Jack cheese, more cilantro, avocado slices and tortilla chips if desired.

WHITE ROTISSERIE CHICKEN CHILI
This chili won a local soup contest and it very popular with children. The use of rotisserie chicken adds a lot of flavor. Garnish with a dollop of extra sour cream if you like. Doubling the amount of chicken makes a very hearty chili.

- Heat the oil in a large Dutch oven or pot over medium heat. Add the onion, garlic, both jalapenos, the poblano, cumin, coriander, oregano and allspice. Cook, stirring occasionally, until the vegetables are softened and the spices are toasted, about 7 minutes. Add the chicken, 1 teaspoon salt and a few grinds of pepper. Cook, stirring and breaking up the meat with a wooden spoon, until it starts browning, about 5 minutes.
- Add the beans, canned chiles, broth and 1 1/4 cups water; bring to a boil. Add the torn tortillas to the pot; reduce the heat to medium low and simmer, stirring occasionally, until slightly thickened, about 40 minutes.
- Remove the halved jalapeno from the chili and stir in all but a few tablespoons of the cilantro; season with 1/2 teaspoon salt and a few grinds of pepper. Serve with assorted toppings, the reserved cilantro, lime wedges and more tortillas.
ROTISSERIE CHICKEN CHILI
Delicious chili made with rotisserie chicken and white beans. Serve with tortilla chips and sour cream. Freezes great!

- Heat oil in a skillet over medium-high heat. Saute onion in the hot oil until soft, about 5 minutes. Remove from heat. Add 1 can of beans and smash into the onion using a potato masher.
- Transfer onion mixture to the bottom of a slow cooker and add remaining beans, chicken broth, shredded chicken, tomatoes, chiles, garlic, cumin, oregano, and cayenne.
- Cover and cook on High until reduced and thickened, about 4 hours. Garnish with Monterey Jack cheese.

- in a soup pot over medium high head put in the olive oil and cook the onions, peppers & carrots; stir frequently and cook until they're al dente.
- add the garlic and cook another 3-4 minutes (don't let the garlic brown).
- turn the heat down to medium low and add the chicken, chicken stock, bouillon granules, beans and salsa verde. add water for a thinner consistency, if desired. salt & pepper to taste.
- simmer for an hour and then float the bay leaf on top. simmer another half hour, remove the bay leaf and serve.
WHITE CHICKEN CHILI

- Drain and rinse the canned white beans. In a medium bowl, mash half of the beans with a potato masher until chunky. Reserve the beans until needed.
- Add the canola oil to a large Dutch oven and heat it over medium-high heat. Add the peppers, onions, and garlic and saute until soft and fragrant, about 5 minutes. Season the vegetables with salt, and pepper, to taste. Add the cumin, coriander, and chili powder and continue to saute for 1 more minute to toast the spices. Stir in the chicken stock, and lime juice and bring to a simmer. Add the beans and continue to simmer for 20 more minutes.
- After 20 minutes of simmering, taste for seasoning, and adjust if necessary. Stir in the shredded rotisserie chicken and cilantro and simmer until heated through, about 5 more minutes. Serve the chili in individual bowls topped with a dollop of sour cream, crushed tortilla chips, and lime wedges.

Steps:
- Mix water, lemon pepper and cumin seed in large saucepan and heat to a boil.
- Add chicken breast halves, reduce heat to low, cover and simmer until chicken is fork tender and juices run clear, about 20-25 minutes.
- Remove chicken from pot and cut into 1 inch pieces.
- Add chicken back to liquid in saucepan.
- Heat olive oil in skillet and cook onions and garlic for a minute or two and then add to saucepan with the chicken.
- Stir in corn, green chilies, ground cumin and lime juice and heat to a boil.
- Add beans and cook until thoroughly heated.
- To serve- place crushed tortilla chips and some shredded cheese into each bowl and ladle hot soup over them.

- Heat oil over medium high heat in large sauce pan, add onion, bell pepper, celery and jalapeno chile. Cook, stiring often for about 3 to 4 minutes, until vegetables are translucent.
- Add cumin, corn, green chilies, milk and beans. Bring to a near boil, reduce heat and cover, simmer about 10 minutes, until flavor meld - stirring occasionally.
- Stir in chicken.

- Heat oil in large pot over medium-high heat.
- Add chicken and cook until no longer pink.
- Remove chicken and set aside.
- Add onion and garlic to skillet and cook until tender.
- Place chicken, onion, and garlic in pot.
- Add chicken stock, beans, Rotelle tomatoes salt and pepper.
- Cook about 30 minutes on medium heat or until the chicken is the desired tenderness.
