1/2 cup butter, room temperature
1 (8-ounce) box of cream cheese, room temperature
1 egg
1 tablespoon lemon juice
1 box lemon cake mix (I use Duncan Hines lemon supreme)
1 cup powdered sugar

Steps:

  • Preheat oven to 350°F. Cream butter and cream cheese with mixer. Add egg and lemon juice and mix until combined on low. Add the lemon cake mix in three parts mixing until combined after each part. Refrigerate dough for 2 hours. Roll into 1 inch balls and roll through the powdered sugar. Place on cookie sheets covered with parchment paper. Bake 10-12 minutes. Cool for two minutes and remove to cookie cooling racks. When fully cool dust with more powdered sugar.

1 package (18.25 ounces) plain yellow cake mix
8 tablespoons (1 stick) butter, melted
1 large egg
2 large lemons
1 package (8 ounces) cream cheese, at room temperature
2 large eggs
8 tablespoons (1 stick) butter, melted
2 tablespoons white or yellow cornmeal
3 3/4 cups confectioners' sugar, sifted

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350 degrees F. Set aside an ungreased 9- by 13-inch pan.
  • For the crust, place the cake mix, melted butter, and egg in a large mixing bowl. Blend with an electric mixer on low speed for two minutes. Stop the machine and scrape down the sides of the bowl with a rubber spatula. The batter should come together in a ball. With your fingertips, pat the batter evenly over the bottom of the pan, smoothing it out with your fingers until the top is smooth. Set the pan aside.
  • For the filling, rinse and dry the lemons well. Grate the zest from the lemons and set aside; you should have about 2 teaspoons. Cut the lemons in half, and squeeze into a small bowl; you should have about 6 tablespoons. Set the juice aside.
  • Place the cream cheese in the same mixing bowl that was used to make the crust, and with the same beaters (no need to clean either) blend with an electric mixer on low speed until fluffy, 30 seconds. Stop the machine and add the lemon juice, lemon zest, eggs, melted butter, and cornmeal and beat on medium speed for 1 minute. Stop the machine and add the confectioners' sugar. Beat on medium speed until the sugar is well incorporated, 1 minute more. Stop the machine and scrape down the sides of the bowl with the rubber spatula so that the filling covers the entire surface and reaches the sides of the pan. Place the pan in the oven.
  • Bake the cake until it is well browned but the center still jiggles when you shake the pan, 45 to 47 minutes. Remove the pan from the oven and place it on a wire rack to cool, 30 minutes. Cut into squares and serve.
  • Store this cake, covered in aluminum foil, at room temperature for up to 4 days, or in the refrigerator for up to 1 week. Or freeze it, wrapped in foil, for up to 6months. Thaw the cake overnight in the refrigerator before serving.

Steps:

  • Put the butter into a large mixing bowl.
  • Cream the butter until soft and creamy.
  • Add the cream cheese and beat until mixture is smooth.
  • Beat in the egg, lemon extract and lemon zest until combined.
  • Add the cake mix and beat just until well mixed.
  • If the dough is too soft to roll into balls, cover the bowl and refrigerate the dough for 1-2 hours or until it's easy to handle.
  • Preheat the oven to 350°F.
  • Place some granulated sugar and confectioners' sugar into separate bowls.
  • Roll the dough into 1-inch to 1 1/4-inch balls.
  • Drop each dough ball into the bowl of granulated sugar and roll it in the sugar to coat completely.
  • Immediately drop the sugared dough ball into the confectioners' sugar and roll it to coat heavily with the sugar.
  • Rolling the dough balls in the granulated sugar first helps the confectioners' sugar coating not sink into the baked cookies.
  • Place the dough balls 2″ apart on ungreased cookie sheets; flatten slightly. Bake at 350 F for 10-12 minutes. DO NOT overbake.
  • Take the cookies out of the oven when they look a little underdone.
  • Let the cookies cool on the pan for 1-2 minutes, then remove them from the pans to wire racks and cool completely.
  • Store the cookies in an airtight container. Makes about 2 1/2-3 dozen.

1/2 cup honey
1/3 cup butter or 1/3 cup margarine, softened

Steps:

  • Preheat oven to 350°F

2/3 cup butter, at room temperature
2 tablespoons finely grated lemon zest, from about four lemons
1/2 cup sugar
one egg
one vanilla bean, or 1/2 teaspoon pure vanilla extract
2 1/4 cups flour
1/4 cup powdered sugar for garnish

Steps:

  • 1. in a mixing bowl, cream the butter with the back of a fork until it is smooth, about five minutes. Add the lemon zest and continue to blend until well mixed. Add the granulated sugar and mix until smooth, about two minutes longer. Add the egg and beat vigorously until lemony yellow batter forms, another five minutes.
  • 2. Split the vanilla bean in half lengthwise. Using the tip of a sharp knife, scrape the tiny vanilla seeds into the batter and then stir to distribute evenly.
  • 3. Slowly stir in 2 cups of the flour, and mix until the dough pulls away from the sides of the bowl, and a ball forms. Remove the dough from the bowl, flatten into a small disk, and wrap in plastic or foil wrap. Chill for 15 minutes.
  • 4. Preheat the oven to 375°.
  • 5. Generously flour a work surface and a rolling pin with part of the remaining 1/4 cup flour. Roll out the dough into a 1/4 inch thick sheet. Using a 2 inch round cookie cutter, cut out the cookies and transfer them to an ungreased baking sheet, about 3/4 inch apart. Gather up the scraps, apply more flour to work surface and rolling pin, and roll them out. Continue to cut out cookies until no dough remains.
  • 6. Bake the cookies until Golden Brown edges appear around each cookie, 7 to 8 minutes. Remove from the oven and transfer to a wire rack. Let cool completely, about 30 minutes, then lightly dust with powdered sugar. Store in an airtight container at room temperature for up to one week. Makes about three dozen cookies.

8 ounces cream cheese (soften)
1/4 teaspoon vanilla
1 egg
1 (18 1/2 ounce) box butter recipe cake mix
8 ounces powdered sugar

Steps:

  • Mix the butter ( I melt it in the microwave) and cream cheese ( I mix by hand with a wooden spoon, but any spoon would work).
  • Add vanilla and the egg mix together.
  • Add the Butter flavor cake mix.
  • Put in the frig overnight.
  • The next day.
  • Preheat oven to 350.
  • Spray cookie sheet very lightly ( if you use parchment paper don't spray cookie sheet, I prefer the parchment paper).
  • Roll dough into balls (about the size of a walnut), roll into powdered sugar.
  • Put onto cookie sheet ( I put them 3 in a roll and space out, and only have 4 rolls).
  • Bake 10 to 12 minutes.
  • Remove from oven, sprinkle with powdered sugar.
  • Let stand on cookie sheet for a few minutes.
  • Then remove and let cool.
