FANTASY FUDGE
Marshmallow creme is what makes this easy fudge so incredibly airy (hint: the recipe is inspired by the popular recipe on the back of the label). Chopped toasted walnuts, or any of your favorite nuts, add welcome crunch. Share the rich, delightful squares with all your friends and family.

Steps:
- Toast the walnuts in a medium saute pan over medium heat, tossing frequently, until darkened and fragrant, about 5 minutes. Transfer to a cutting board to cool, then roughly chop.
- Line an 8-inch square cake pan with foil, leaving a 2-inch overhang on 2 sides. Coat lightly with cooking spray.
- Combine the chocolate and condensed milk in a large saucepan over medium-low heat. Cook, stirring frequently, until the chocolate is melted and the mixture is thick and smooth, 2 to 3 minutes. Remove from the heat. Add the marshmallow creme and butter and stir until completely combined and no streaks remain. Stir in the walnuts until evenly dispersed.
- Transfer the mixture to the prepared cake pan. Smooth with a rubber spatula into an even layer. Refrigerate until firm, 2 to 3 hours.
- Use the foil overhang to remove the fudge from the pan. Cut into small squares. The fudge can be refrigerated in an airtight container up to 5 days.
DIVINITY FUDGE
My mother was known for her divinty and this recipe always came out perfectly. It melts in your mouth and is a holiday favorite. Also, this makes a great gift.

Steps:
- Stir the first four ingredients together in a saucepan over low heat until the sugar is dissolved.
- Boil without stirring to 265 degrees on a candy thermometer or until a little mixture that is dropped in cold water forms a hard, almost brittle ball.
- Remove syrup from heat and slowly pour over stiffly beaten egg whites, while beating with a mixer until mixture loses its gloss and a small amount that is dropped from a spoon holds its shape.
- Fold in nuts and vanilla.
- Pour into a greased 9"x9"x2" pan or drop by spoonfuls onto waxed paper to cool.
- Store in tins.
CHRISTY'S FAVORITE FUDGE
This has got to be the easiest fudge recipe ever. It has always turned out perfectly! Great for gifts.

- In a saucepan over low heat, melt semi-sweet chocolate chips, 2/3 C sweetened-condensed milk, 1 T coffee creamer, and 1 tsp vanilla.
- Remove from heat.
- Stir in 1/2 C walnuts.
- Spread into 8 x 8 pan.
- In the same saucepan, repeat process with milk chocolate chips, remaining sweetened-condensed milk, creamer, and vanilla.
- Remove from heat.
- Stir in 1/2 C walnuts.
- Spread on top of semi-sweet chocolate.
- Cool.
- Cut into squares.

FOOLPROOF FUDGE
Can't remember where I found this recipe but it makes great fudge at home. I have tried this with butterscotch chips and the verdict is still out on that. Milk chocolate chips work very well too.

- In a sauce pan or double boiler, melt chips with condensed milk.
- Remove from heat.
- Stir in nuts and vanilla.
- Spread evenly into a 8 or 9 inch square pan, lined with wax paper.
- Chill 2 hours.
- Turn out on to cutting board, remove paper and cut into pieces as desired.
