PROVENçAL RACK OF LAMB WITH CRUSHED PEAS
A French inspired Provençal rack of lamb recipe from Raymond Blanc. The rich lamb recipe is cooked in herby breadcrumbs and served with crushed minted peas.

- Preparing the peas: Crush the peas in a food processor, using the pulse button. Do not purée them; you need to retain a lot of texture. Transfer the peas to a medium saucepan and stir in the olive oil, chopped herbs, 6 pinches of salt and a pinch of white pepper. Set aside (you will be cooking the peas and adding the lemon juice just before serving). Preparing the breadcrumbs: Crumble the stale bread into the clean food processor and use the pulse button again to process it to crumbs, ensuring that they have a coarse texture and are not powdery (if they are too fine, you will lose the texture). Transfer to a bowl and add the parsley, thyme and rosemary. Stir in the olive oil and season with 2 pinches of salt and a pinch of black pepper. Cooking the lamb: Pre-heat the oven to 190C / 375F / gas mark 5. Season the racks of lamb with two pinches of salt and two pinches of black pepper. On a medium heat, in a large ovenproof frying pan, heat the olive oil and butter. Add the lamb and colour the meat of the fillet for 3-4 minutes. Turn it onto its back (fat side) and colour for 3-4 minutes, until golden brown. Transfer the lamb to the oven and roast for 10 minutes. Finishing the lamb: Remove the lamb from the oven and brush the mustard all over it, avoiding the bones. Press the racks in the Provencal breadcrumbs, so that every part is coated (this can be done 1-2 hours in advance). Return the lamb to the oven and cook for 8 minutes for medium rare. Turn off the oven, leave the door ajar and allow the lamb to rest for 5 minutes so the meat relaxes and becomes tender. Finishing the peas: While the lamb is resting, cook the crushed peas on a medium heat, with a lid on, for 4 minutes. Stir in the lemon juice, then taste and correct the seasoning if necessary. Carve the racks of lamb and serve with the hot crushed peas.
PROVENçAL RACK OF LAMB

- Preheat oven to 400°F with rack in middle.
- Mince and mash garlic to a paste with 1/2 teaspoon salt and 1/2 teaspoon pepper. Stir together with herbs and 1 tablespoon oil.
- Put tomatoes cut sides up in an oiled small baking dish and drizzle with a third of garlic mixture. Roast until tender, 30 to 40 minutes.
- Meanwhile, pat lamb dry and season with 1/4 teaspoon salt and 1/4 teaspoon pepper.
- Heat 1 tablespoon oil in a 10-inch ovenproof skillet over medium-high heat until it shimmers. Brown lamb on all sides, 4 to 6 minutes total. Transfer lamb to a cutting board and discard oil from skillet.
- Heat remaining tablespoon oil in skillet over medium heat and cook shallots and potatoes, stirring occasionally, until edges are browned, 3 to 5 minutes. Stir in water and half of remaining garlic mixture and remove from heat.
- Rub remaining garlic mixture on fat side of lamb racks. Arrange lamb over potatoes and roast in oven until an instant-read thermometer inserted into center of meat (do not touch bone) registers 130°F for medium-rare, 20 to 25 minutes.
- Let stand, loosely covered, 5 to 10 minutes. Serve with tomatoes.
EASY PROVENCAL LAMB
Steps:
- Preheat the oven to 450 degrees F.
- Place the leg of lamb in a large roasting pan fat side up and pat it dry with paper towels. Combine the mustard, 1 tablespoon of the garlic, the rosemary, balsamic vinegar, 1 tablespoon salt, and 1/2 teaspoon pepper in a mini food processor and pulse until the garlic and rosemary are minced. Spread the mixture on the lamb.
- Place the tomatoes, olive oil, 1/4 cup of the honey, the onion, the remaining 2 tablespoons garlic, 2 tablespoons salt, and 2 teaspoons pepper in a bowl and toss well. Pour the tomato mixture around the lamb and tuck in the thyme and rosemary sprigs. Drizzle the lamb with the remaining 1/4 cup of honey.
- Roast for 20 minutes. Turn the heat down to 350 degrees F and roast for another 1 to 1 1/4 hours, until a meat thermometer registers 130 to 135 degrees F for medium-rare. Place the lamb on a cutting board, cover with aluminum foil, and allow to rest for 15 minutes. Discard the herb stems and return the tomatoes to the oven to keep warm. Slice the lamb, arrange on a platter, sprinkle with salt and pepper, and serve with the tomatoes and pan juices spooned on top. Garnish with a branch of rosemary.

- To Make Garlic Confit:.
- Separate garlic into cloves. Slice root end off each clove but do not peel.
- Place in saucepan, cover with water and bring to boil.
- Boil 5 minutes. Drain and slip garlic out of its skin; it will come out easily.
- Heat butter in skillet on low heat, add garlic cloves, cover and cook, shaking pan occasionally, until garlic is golden (about 10 minutes). Reserve garlic and skillet for sauce.
- To Pepare the Lamb Racks:.
- Cut away last 2 inches of fat and meat from bones. Trim remaining fat; cut racks in half.
- In a small bowl, combine Dijon mustard, rosemary, thyme, parsley, breadcrumbs, oil, salt and pepper. Pat over lamb racks.
- Preheat oven to 400 deg. F.
- Place lamb on a rack over roasting pan and bake for 35 to 40 minutes or until juices are slightly pink. Let rest for 10 minutes before carving.
- To Make Sauce:.
- In the reserved skillet, add red wine, vinegar and sugar. Reduce until glazed (about 3 minutes). Add stock and butter and boil until slightly thickened. Scatter in garlic confit and parsley.
- To Serve:.
- Slice lamb down into chops, spoon on a little sauce and garnish with garlic confit.
- Serve with roasted potatoes and vegetables.
- Open your bottle(s) of wine, pour liberally, and enjoy!
RED CURRY RACK OF LAMB WITH WARM PEA SALAD
Packed with red chili pepper, garlic, lemongrass, galangal (Thai ginger) and spices, Thai red curry paste is the secret to the bold, vibrant flavor of these racks of lamb, while a crust of crushed peanuts gives them wonderful texture. The accompanying salad of snap and snow peas rounds out this delicious spring meal.

- Preheat the oven to 425 degrees F. Set a wire rack inside a rimmed baking sheet. Cut the racks of lamb in half crosswise to make 4 mini racks, then season the lamb with salt and pepper.
- Heat 1 tablespoon of the oil in a large skillet over medium-high heat until shimmering. Add the lamb, fat side down, and cook until browned, about 5 minutes. Turn the lamb fat side up and cook for 2 minutes longer. Transfer the lamb to the rack over the baking sheet.
- Meanwhile, in a small bowl, mix the curry paste with 2 tablespoons of the lime juice. Place half the mixture into another small bowl. In a mini food processor, pulse the peanuts until finely ground; transfer to a shallow dish.
- Brush the lamb racks with half of the red curry sauce, then coat them in the ground peanuts. Set the lamb fat side up on the baking rack. Roast in the oven until an instant-read thermometer inserted in the center of the meat registers 125 degrees F for medium-rare, 20 to 25 minutes. Transfer the lamb to a cutting board to rest.
- Meanwhile, thinly slice the shallot and transfer it to a small bowl of ice water. Let stand for 5 minutes, then drain.
- Wipe out the skillet the lamb cooked in and heat the remaining 1 tablespoon of canola oil in it over high heat. Add the snap peas to the skillet and spread them in an even layer. Cook undisturbed until blistered on the bottom, about 3 minutes; transfer to a serving bowl. Add the snow peas to the skillet and cook over high heat, stirring, until just warm, about 2 minutes; transfer to the serving bowl. Add the pea shoots, drained shallots and the remaining 2 tablespoons of lime juice to the bowl and toss well. Fold in the basil and season with salt and pepper.
- Carve the lamb by cutting between the bones. Transfer the ribs to a platter. Spoon any peanuts and juices from the cutting board on top. Serve with the warm pea salad, passing the remaining red curry sauce at the table.
RACK OF LAMB WITH MINTED PEA PUREE
Mint and lamb are made for each other! I found this in an Aussie magazine, and it looks pretty good to me.

Steps:
- Preheat the oven to 200 degrees C.
- Place the lamb on a rack in a baking dish.
- Place the mint, garlic, vinegar and sugar in a food processor and work until a paste forms.
- Add the olive oil slowly to the mixture adding a little more if the mixture seems too thick-if the mixture seems too runny, add a few more mint leaves.
- Season to taste.
- Coat the lamb with the mint paste and marinate for 15 minutes.
- Place in the oven and cook for 20-25 minutes or until done to your liking.
- Minted Pea Puree: Place the potato in a saucepan and boil until tender.
- Add the peas and cook for another 5 minutes.
- Drain and place in food processor along with butter and mint leaves.
- Pulse for a short time so mixture is smooth, but with a little texture.
- Serve with the lamb.
