SPAGHETTI WITH PROSCIUTTO, PEAS AND ARTICHOKES



Spaghetti with Prosciutto, Peas and Artichokes image

8 ounces spaghetti
1 tablespoon extra-virgin olive oil
1 small shallot, finely chopped
1/2 teaspoon chopped fresh rosemary
1 9-ounce package frozen artichoke hearts, thawed and halved
Freshly ground pepper
1/4 cup dry white wine
1 cup heavy cream
1/2 cup grated fontina cheese (about 2 ounces)
2 ounces thinly sliced prosciutto, roughly chopped
1 cup frozen peas, thawed
1/4 cup grated Parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the shallot and rosemary and cook, stirring occasionally, until the shallot is slightly softened, about 2 minutes. Add the artichoke hearts, 1 teaspoon salt and a few grinds of pepper; cook, stirring occasionally, until softened, about 2 minutes.
  • Reduce the heat to medium and add the wine; cook, stirring occasionally, until evaporated slightly, about 1 minute. Add the heavy cream and bring to a boil, stirring occasionally. Continue to cook until the sauce thickens slightly, about 1 minute. Stir in the fontina and cook until the sauce is thick and creamy, about 1 minute. Add the prosciutto.
  • Reduce the heat to low and add the spaghetti to the skillet along with the peas and Parmesan. Stir until well coated, adding the reserved cooking water as needed to loosen. Season with salt and pepper.

1 CAULIPOWER® Margherita Pizza
2 ounces prosciutto, sliced
½ (6 ounce) can marinated artichoke hearts, drained and chopped
2 cloves garlic, minced
½ teaspoon red pepper flakes
¼ cup shaved Parmesan cheese

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Remove the plastic wrapping and cardboard from pizza and place on a clean surface. Top with prosciutto, artichokes, garlic, and red pepper flakes.
  • Place pizza in the preheated oven, either on a baking sheet or directly on the rack, and bake for 13 to 15 minutes.
  • Remove from the oven and top with Parmesan cheese.

1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
1 medium sweet red pepper, julienned
1 medium onion, halved and thinly sliced
1 tablespoon canola oil
3/4 cup shredded Parmesan cheese
1/3 cup mayonnaise
1/3 cup sun-dried tomatoes (not packed in oil)
8 slices Italian bread (1/2 inch thick)
8 spinach leaves
1/4 cup butter, softened

Steps:

  • In a large skillet, saute the artichokes, pepper and onion in oil until tender; stir in cheese. Remove from the heat., In a food processor, combine mayonnaise and tomatoes; cover and process until finely chopped., Spread four bread slices with half of the mayonnaise mixture; layer with a spinach leaf, artichoke mixture and remaining spinach. Spread remaining bread with mayonnaise mixture; place on top. Butter outsides of sandwiches., On a griddle, toast sandwiches for 2-3 minutes on each side or until bread is lightly browned.

If you prefer to serve prosciutto without the mayonnaise, the spread here can be replaced by tomato slices sprinkled with a little chopped rosemary.

1/2 cup mayonnaise or low-fat mayonnaise
1 tablespoon minced fresh rosemary or 1 teaspoon dried
1 tablespoon fresh lemon juice
4 6-inch long sections crusty Italian bread, split lengthwise
2 6-ounce jars quartered marinated artichoke hearts, drained
12 thin prosciutto slices
8 ounces Bel Paese cheese rind removed, sliced

Steps:

  • Preheat broiler. Mix mayonnaise, rosemary and lemon juice in small bowl. Season generously with pepper. Spread mayonnaise over cut sides of bread. Place bottom slices on broilerproof pan. Arrange artichokes over bread, dividing equally. Top with prosciutto slice, then with cheese slices.
  • Broil sandwiches about 6 inches from heat source until cheese melts and is golden, about 3 minutes. Close sandwiches; cut sandwiches in half and serve.

1 fresh baguette (warmed)
12 slices fresh mozzarella cheese, from 2-3 fresh balls (1/4-inch slices)
9 slices prosciutto
15 basil leaves
olive oil

Steps:

  • Cut the baguettes into thirds and then down the middle. I buy baguettes par baked then finish them off at home so they're nice and warm, soft and crisp.
  • Brush both sides of the sandwich bread with good olive oil.
  • Lay out about 3 slices of prosciutto on bottom side of each sandwich. (or however much meat you'd like).
  • Make sure you squeeze out the excess water from the mozzarella balls with a paper towel. Place 3-4 slices of sliced mozzarella on top of the prosciutto.
  • Cover the tops of the mozzarella with basil leaves, and place tops of the sandwich bread.
  • YUM!

4 ciabatta* rolls (about 4 inches square) or a long loaf (about 20 inches) French or Italian bread
about 1/2 cup rosemary fig confit
1/4 pound thinly sliced prosciutto
1/4 pound Brie, cut into thin slices
For rosemary fig confit
1 cup dried Calimyrna figs, chopped fine
1/2 cup dry white wine
1/2 cup water
3 tablespoons honey
1 teaspoon chopped fresh rosemary leaves
*Ciabatta rolls are available at some specialty bakeries.

Steps:

  • Make sandwiches:
  • With a serrated knife halve rolls horizontally or cut loaf diagonally into 4 pieces, halving each piece horizontally.
  • Spread cut sides of bread with confit and make 4 sandwiches with prosciutto and Brie.
  • Make rosemary fig confit:
  • In a 1 1/2-quart heavy saucepan stir together ingredients and simmer, covered, 20 minutes. Remove lid and simmer mixture, stirring occasionally, until most liquid is evaporated and mixture is thickened. In a food processor coarsely purée fig mixture. Confit may be made 5 days ahead and chilled, covered.
  • Bring confit to room temperature before using. Makes about 1 1/4 cups.
