1/2 cup butter, softened
2/3 cup white sugar
2/3 cup brown sugar, packed
1 egg
1/4 cup apple juice
2 1/4 cups flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon nutmeg
1 cup apple, peeled, and finely chopped (Granny Smith apples are best)
1 cup chopped walnuts
1/4 cup butter, softened
3 cups icing sugar
1 teaspoon vanilla
3 -4 tablespoons apple juice

Steps:

Set oven to 375 degrees F.
In a mixing bowl cream butter and both sugars together.
Beat in the egg and apple juice.
In a small bowl combine the dry ingredients.
Gradually add the dry ingredients to the creamed mixture; blend well.
Mix in the chopped apples and nuts.
Drop dough by heaping teaspoonfuls onto a greased cookie sheet about 2 inches apart.
Bake for 12-13 minutes, or until golden brown.
Place on wire rack to cool.
For frosting: Beat all frosting ingredients until smooth; frost cookies.

2 cups carrots, grated
1 cup butter
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
2 teaspoons vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1 cup pecans, chopped
4 cups powdered sugar
1/2 cup butter, softened
8 ounces cream cheese
1/2 teaspoon vanilla

Steps:

Heat oven to 350°F.
Combine the butter and the two sugars in a large mixer bowl.Beat until creamy (2 - 3 minutes).Add eggs and vanilla. Add flour, baking soda, salt and cinammon. Stir in pecans and carrots.
Drop dough by tablespoonsfuls onto greased cookie sheets. Bake for 12 to 15 minutes. Let them cool completely.
Meanwhile beat the powdered sugar with the butter, cream sheese and vanilla until creamy.
Frost each cooled cookie with 2 teaspoonfuls frosting.

1 cup shortening
1 cup sugar
1 cup packed light brown sugar
3 large eggs, room temperature
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
2 cups old-fashioned oats
1 cup raisins
1 cup coarsely chopped pecans, optional

Steps:

In a large bowl, cream the shortening and sugars until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda, salt and cinnamon. Add to creamed mixture, stirring just until combined. Stir in the oats, raisins and pecans if desired., Shape into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Flatten with a greased glass bottom. , Bake at 350° until golden brown, 10-11 minutes. Do not overbake. Remove to a wire rack to cool.
