LEFTOVER RICE CASSEROLE
This leftover rice casserole is perfect to repurpose cooked rice left in the fridge. It's creamy, cheesy, full of vegetables, and so delicious!

Steps:
- Place the cream cheese in a microwave-safe bowl and heat it for about 30 seconds, or until easy to stir. Stir it until creamy.
- Add the milk, egg, egg yolk, mustard, salt, and pepper. Mix everything until the mixture is homogeneous.
- In a separate bowl, add cooked rice. Then add cheese, ham, vegetables, and parsley. Stir everything.
- Add the prepared cream to the rice mixture and stir until all the rice is coated.
- Transfer the rice mixture to a 13"x9" (32x22cm) greased baking dish and cover it with cheese and oregano. Bake it at 350ºF (180ºC) for about 20 minutes, or until the food is hot and the cheese is melted.

USE UP YOUR LEFTOVER MEAT - RICE CASSEROLE
My mother in law made this when raising her kids. I like it now and make it occasionally. It is very easy, just make sure that you have an over proof pot large enough. Sometimes I will add a can of corn, but the recipe doesn't call for it. I used to make it in a dutch oven, until we moved and it was somehow left behind!!! This is easily doubled or even tripled, you just need a large enough pot.

- Saute the onions and celery in the butter in the bottom of your dutch oven.
- Add everything else and and bring to a boil. Reduce heat and simmer for 20 minutes.
- Place in a 350 degree oven for 1 hour, uncovered.

- Transfer to a buttered shallow baking dish.

This is a super-simple concoction of my mom's, and a family favorite. Terrific with some green vegetables or a salad!

- Brown beef with onion (if using) and drain.
- Add rice, soup, water, celery, peppers (if using), salt and black pepper, mix well.
- Place in greased two-quart casserole dish and bake, covered, for 1 hour and 15 minutes at 350 degrees F.

- In a sprayed or buttered casserole dish mix the roast beef, au jus, soup, cooked rice, 1/2 cup of shredded cheese and milk.
- melt the butter. Add the bread crumbs to the butter and mix together.
- Spoon the topping over the roast beef mixture and add 1/2 cup of cheese over the topping.
- Bake in 350 degree oven for 25-30 minutes.
