½ cup butter, softened
⅓ cup masa harina
¼ cup water
1 ½ cups frozen whole-kernel corn, thawed
¼ cup cornmeal
⅓ cup white sugar
2 tablespoons heavy whipping cream
¼ teaspoon salt
½ teaspoon baking powder

Steps:

  • In a medium bowl beat butter until it is creamy. Add the Mexican corn flour and water and beat until well mixed.
  • Using a food processor, process thawed corn, but leave chunky. Stir into the butter mixture.
  • In a separate bowl, mix cornmeal, sugar, cream, salt, and baking powder. Add to corn flour mixture and stir to combine. Pour batter into an ungreased 8x8 inch baking pan. Smooth batter and cover with aluminum foil. Place pan into a 9x13 inch baking dish that is filled a third of the way with water.
  • Bake in a preheated 350 degree oven F (175 degrees C) oven for 50 to 60 minutes. Allow to cool for 10 minutes. Use an ice cream scoop for easy removal from pan.

1 cup corn kernel (fresh is better but may substitute drained canned corn kernels)
1 cup buttermilk
2 large eggs
2 tablespoons butter, melted

Steps:

  • In a big mixing bowl, sift the cornmeal, flour, sugar, baking soda, and salt.
  • Add in the corn kernels; toss to coat.
  • In a smaller bowl, add the buttermilk, eggs, and butter; whisk until blended.
  • Add the buttermilk mixture to the dry ingredients; stir until just blended (don't overmix).
  • Heat a large nonstick skillet or griddle over medium heat.
  • Brush a thin film of vegetable oil or spray with cooking spray.
  • Pour 1/4 cup batter (for each pancake) onto heated skillet; lower heat to medium-low.
  • Cook until the tops of cakes are covered with small bubbles and the bottoms are lightly browned; flip pancake and cook until other side is lightly browned.
  • Serve warm with maple syrup or powdered sugar and berries.

Steps:

  • Combine the eggs, sugar and salt in a stand mixer fitted with the whisk attachment and mix until combined.

  • Combine the cornmeal, flour, baking soda and baking powder in another bowl and mix with a fork until combined.
  • Add the buttermilk mixture to the egg mixture and mix until combined. Remove from the stand mixer and fold the flour mixture in by hand, followed by the melted butter, until combined.
  • Heat a griddle (or skillet) with 1/2 teaspoon vegetable oil until hot.

Steps:

  • In a large bowl combine flour, cornmeal, sugar, baking powder, and 1 teaspoon salt.
  • In a medium bowl, whisk the thawed corn, egg, milk, and vegetable oil. Pour into the bowl with the dry ingredients and combine. Allow to rest for 5 minutes.
  • Preheat the oven to 200 degrees F.
  • In a cast iron pan on medium-high heat, add enough vegetable oil to fill the pan about 1/2-inch deep. When the oil begins to swirl, add the batter in batches to the pan using a small ice cream scoop or 1/4 cup measure to make each hoecake. Gently spread into a circle, if needed. Flip the hoecakes when the air pockets begin to pop on the surface of the batter and a peek underneath the cake reveals a golden rim and surface, about 2 minutes.

2 sticks (1 cup) unsalted butter, at room temperature, plus more for greasing pans
4 cups all-purpose flour, plus more for pans (see Cook's Note)
One 15-ounce can creamed corn
One 12-ounce bottle pilsner
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
1 cup sugar

Steps:

  • For the frosting: Whisk the sugar and flour together in a small saucepan. Mash 2 containers (about 2 1/2 cups) blackberries with the lemon juice in a small bowl with a fork. Strain through a fine-mesh strainer into the saucepan and whisk with the sugar-flour mixture until evenly combined. Bring the mixture to a boil, then reduce the heat to medium and cook, stirring constantly, until the jam is thickened to the consistency of thick pudding, about 3 minutes. Scrape the frosting base into a bowl and place a piece of plastic wrap directly on the surface of the mixture. Refrigerate until chilled, about 1 hour.
  • For the cake: Meanwhile, preheat the oven to 350 degrees F. Butter two 9-inch round cake pans, then line the bottoms with parchment paper and butter and flour the paper. Set aside.
  • Pour the corn and beer into a blender and puree until smooth, at least 1 minute. Reserve the puree in the blender.
  • Whisk the flour, baking powder, baking soda and salt in a bowl until evenly combined. Combine the butter, sugar and vanilla in the bowl of a stand mixer fitted with the paddle attachment and beat on medium speed until pale and fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition, until smooth. Alternately, add the flour mixture and the beer-corn puree, beginning and ending with the flour mixture, until the batter is smooth. Divide the batter between the prepared pans, smoothing the tops with an offset spatula, then bake until a cake tester inserted in the center of the cakes comes out clean, 45 to 50 minutes.
  • Let the cakes cool in the pans for 20 minutes, then invert them onto a cooling rack and remove the parchment paper. Let the cakes cool completely, then split each in half horizontally so you have 4 even thin cake layers.
  • Beat the butter, vanilla and salt for the frosting with an electric mixer on medium speed until lightened and creamy, about 1 minute. Stir the frosting base with a rubber spatula, then add a third of it to the bowl and beat on medium-high speed until incorporated. Add the remaining base and beat until fluffy, lightened and whipped, about 3 minutes more.
  • Center a cake layer on a cake plate and spread about 1/2 cup frosting over the cake with an offset spatula or butter knife. Repeat with 2 more cake layers and frosting, then top with the last cake layer. Scrape the remaining frosting onto the cake and spread it evenly over the top and sides. Halve the remaining blackberries and decorate the top of the cake with them. Refrigerate the cake until the frosting has firmed, at least 30 minutes or up to overnight, before serving.

  • Whisk together the flour, cornmeal, sugar, baking powder and salt in a mixing bowl.
  • Melt the butter in a large nonstick skillet over medium heat. Set aside to cool slightly while you prepare the wet ingredients.
  • Whisk together the egg and buttermilk in a large mixing bowl. While whisking, pour in the melted butter and stir until combined. Stir in the dry ingredients just until combined. (Be sure not to overwork the batter.) Fold in the Cheddar, corn, if using, and chives.

So incredibly YUMMY! I almost always DOUBLE this recipe, and cook for about 55 minutes

  • Method 2: Place corn cake pan in a larger pan and pour boiling water half way up corn cake pan. Bake at 350 degrees 40 to 50 minutes, checking water level and adding more boiling water, if necessary. When cooked through, remove corn cake pan from water.
  • Let cooked cake stand at room temperature for few minutes before cutting into squares or using a small ice cream scoop to serve.
  • Store any leftovers in refrigerator.

This is more like a corn pudding, but I have known others to fry the dough into a pancake. Masa Harina, one of the ingredients, means corn flour. I have found it at major grocery chains or you can find it at a store that specializes in Hispanic foods. I could eat this for breakfast, lunch , and dinner.

  • Measure 1/2 cup portions of the mixture and form it into 3" wide patties with your hands. Arrange the patties on a baking sheet and bake for 25 to 30 minutes or until the cakes are browned on the bottom.
  • Carefully flip all cakes with a spatula and bake for an additional 5 to 7 minutes or until other side is browned.
  • Assembly: Place all three cakes on a warmed serving platter. Dollop each with one of the three sauces. Garnish with diced avocado, cilantro and a dollop of sour cream.

Steps:

  • Cakes:.
  • Add all ingredients together in a medium bowl until well combined.
  • Refridgerate for 1 hour so the mixture will hold "cake" shape.
  • Using ice cream scoop, shape mixture in to "cake" or patty shape and dust with light coating of bread crumbs. This will give it a crunchy outer crust.
  • Saute in pan with al ittle olive oil until golden brown and heated through, approximately 5 minutes each side.

  • Mix all ingredients together in a small bowl and plate with crab cakes.

No more corn muffin mix! I added chopped jalapenos and lots of grated cheddar cheese to these for last night's dinner of tomato-garlic soup and salad.

2/3 cup uncooked cornmeal
1/3 cup all-purpose flour
3 tablespoons dark brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon table salt
1/2 teaspoon ground cinnamon
2 medium egg whites, lightly beaten
3/4 cup apple juice
1 teaspoon apple cider vinegar
1 1/2 tablespoons canola oil
1 corn on the cob, about 1/2 cup of kernels

Steps:

  • Preheat oven to 400°F (205°C).
  • Coat a 6-muffin tin with cooking spray.
  • Combine ingredients and pour into prepared muffin tins.
  • Bake for 16 to 20 minutes or until a toothpick inserted into cake comes out clean.

½ cup butter, softened
⅓ cup masa harina
¼ cup water
1 ½ cups frozen corn kernels, thawed
¼ cup cornmeal
⅓ cup white sugar
2 tablespoons heavy cream
¼ teaspoon salt
½ teaspoon baking powder

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium bowl, beat butter with an electric mixer until creamy. Beat in the masa harina and water until well combined.
  • Put the corn in a blender or food processor and coarsely chop on low speed. Stir the corn and the cornmeal into the butter mixture. In another bowl, mix together the sugar, cream, salt and baking powder. Combine the two mixtures until well blended. Pour the batter into an ungreased 8x8 pan.
  • Cover the pan with foil and place into a 9x13 inch pan filled 3/4 inch high with hot water. Bake in preheated oven for 50 to 60 minutes, until a toothpick inserted into center of the cake comes out clean. Remove small pan from water and let sit for 10 minutes before serving.
