ASPARAGUS FRITTATA

Asparagus Frittata image

Quick and easy asparagus frittata. Perfect for spring! Eggs, Gruyere or Swiss cheese, shallots, and asparagus.

Provided by Elise Bauer

Categories     Breakfast     Brunch     Quick and Easy     Asparagus     Cheese     Egg     Frittata     Gruyere

Time 35m

Yield 4

Number Of Ingredients 9

2 tablespoons unsalted butter
1/2 cup sliced shallots
1 pound thin spear asparagus, tough ends snapped off, spears cut diagonally into 1-inch lengths
6 large eggs
3/4 cup ricotta cheese (can sub cottage cheese)
1/2 teaspoon salt
1 Tbsp minced fresh chives
1/4 teaspoon dried tarragon
1 cup shredded Gruyere or Swiss cheese (can sub an Italian blend)

Steps:

  • Cook shallots in butter: Heat butter into a 10-inch oven-proof frying pan over medium heat. Add shallots and cook, stirring occasionally, until they soften and turn translucent, about 3 minutes.
  • Add asparagus: and cook for an additional 3 minutes.
  • Add egg mixture: Beat the eggs, ricotta cheese together, and salt, stir in the chives and tarragon. Pour the egg mixture into the pan and cook until almost set, but still runny on top, about 4 to 5 minutes. While cooking, pre-heat oven broiler.
  • Top with cheese and broil: Sprinkle Gruyere cheese over the eggs and put in oven to broil until cheese is melted and browned, and the center is set, about 6 to 8 minutes. Remove pan from oven with oven mitts and slide frittata onto a serving plate. Cut into wedges. (Be very careful with the hot pan handle! I usually ice down the handle of any long handled pan I take out of the oven so that no one mistakenly tries to pick up the pan by the hot handle.) ASPARAGUS FRITTERS

Asparagus Fritters image

Provided by Midwest Living

Yield About 28 fritters

Number Of Ingredients 8

1 pound fresh asparagus spears
1 tablespoon kosher salt or sea salt
3 eggs, lightly beaten
1 cup milk
1 teaspoon vegetable oil
2 ½ cups self-rising flour*
Vegetable oil for deep-fat frying
Lemon Garlic Aioli or honey

Steps:

  • Wash asparagus. If you like, use a vegetable peeler to scrape off the scales from the asparagus about halfway down on spears. Take one spear and starting at the base and working toward the tip, bend the spear several times until you find a place where it breaks easily; snap off and discard woody bases. Cut asparagus tips and only the tender spear ends into 1-inch lengths. Measure 2 cups; set aside. (Use the remaining (less-tender) spears in soup or sauces.)
  • In a 4- to 5-quart Dutch oven, combine 6 cups water and the salt. Bring to boiling. Meanwhile, in a large bowl, combine 8 cups cold water with some ice cubes.
  • To blanch, carefully add asparagus pieces to boiling water; cook for 2 to 3 minutes or until just crisp-tender. Cool quickly by plunging asparagus into ice water for 1 minute; drain well on several layers of paper towels. Set aside.
  • In a medium bowl, use a wire whisk to combine eggs, milk and the 1 teaspoon vegetable oil. Fold in flour, 1/4 cup at time, stirring each time to distribute ingredients. (Batter should be thick enough to scoop with a spoon and hold its shape.) Stir asparagus into batter.
  • In large saucepan or deep-fat fryer, heat 3 to 4 inches oil over medium-high heat to 325°. Use a rounded measuring tablespoon of batter or a small ice cream scoop to carefully drop asparagus mixture into hot oil. (Be cautious of splattering oil.)
  • Fry, a few fritters at a time, for 3 to 5 minutes or until golden, turning several times with a metal slotted spoon. Maintain oil temperature around 325°. If browning too quickly, lower the heat to medium. Remove fritters from the hot oil using the slotted spoon. Drain on wire racks set over paper towels.
  • Serve immediately with Lemon Garlic Aioli or honey.

ASPARAGUS FRITTERS

Asparagus Fritters image

Categories     Bread     Fry     Asparagus     Boil

Yield makes 10 to 12 fritters

Number Of Ingredients 8

2 bunches medium asparagus spears, peeled at the base (about 22 spears)
5 large eggs
1/2 cup grated Grana Padano or Parmigiano-Reggiano
1/2 small onion, finely chopped
1/4 cup fine dry bread crumbs
2 tablespoons all-purpose flour
1/2 teaspoon kosher salt, plus more for seasoning
Vegetable oil, for frying

Steps:

  • Bring a large pot of salted water to a boil. Add the asparagus spears, and cook until tender but not mushy, about 8 minutes. Drain, and rinse under cold water to cool them down. Drain and dry the spears, and cut into 1/2-inch pieces.
  • Whisk together the eggs, grated cheese, onion, bread crumbs, flour, and salt in a large bowl. Stir in the asparagus pieces.
  • Heat 1/2 inch vegetable oil in a large skillet over medium heat. (The oil is ready when a drop of batter sizzles on contact.) Drop 1/4-cup rounds of the asparagus batter into the hot oil, flattening if necessary, to make flat cakes. Cook until golden on the underside, about 2 minutes, then flip, and fry until the fritters are cooked through, about 2 minutes more. Drain the fritters on paper towels, and season with salt.

  • Asparagus cream pasta. After paying above the odds for a bunch of asparagus, throwing up to half of each spear away is a little hard to swallow. While tough to chew, they are packed with flavour, so use them to infuse a cream sauce to serve with pasta.
  • Shaved asparagus salad. Use a vegetable peeler to strip ribbons from stalks of just-blanched asparagus, creating a vegetarian 'carpaccio' of almost raw, paper-thin slices.
  • Asparagus & courgette fritters. Anything battered gets a thumbs up from us, and vegetable tempura has the added bonus of giving a vague nod to nutrition.
  • Soft-boiled duck egg with bacon & asparagus soldiers. As they’re suitably soldier-like, asparagus is perfect for dunking. Wrap in streaky bacon and serve with boiled duck eggs, or simply steam and serve with a watercress or lemon mayonnaise as a nifty canapé.
  • Sesame grilled asparagus rafts. Turning endless spears of asparagus on a grill or barbecue can be a tedious chore, so take out the hard work by skewering them horizontally into ‘rafts’ of five.
  • Asparagus, sundried tomato & olive loaf. If you like flexing your kneading skills and experimenting with Mediterranean flavours this recipe is for you.
  • Tofu & asparagus pad Thai. Asparagus is often associated with delicate French cooking or traditional British flavour combinations, but being a robust ingredient it can handle intense flavours too.
  • Asparagus coconut crêpes with sweet chilli sauce. Take the blueprint of a traditional pancake and veer leftfield with this Asian-inspired recipe. The coconut milk crêpes are filled with asparagus and chunky, chopped hard-boiled egg, and they’re served with a chilli, lime and peanut dip, plus a garnish of herbs.
  • Microwave risotto primavera. Traditional risotto ‘primavera’ (which translates as 'spring' in Italian and Spanish) contains seasonal vegetables like peas, asparagus and broad beans, but this recipe saves you the labourious stirring process as the whole dish is cooked in the microwave.
  • Mini prosciutto & asparagus frittatas. Whether poached, boiled, scrambled or fried, eggs have a natural affinity with asparagus. We like to immerse our spears in a bath of whisked egg, which is then poured into prosciutto nests, topped with Parmesan cheese and baked into a mini version of Italian-style frittata.
