Prairie Dog Daves Cheesy Tater Soup Food
YET ANOTHER TATER TOT CASSEROLE
I like to play with the below basic recipe. One of my favorites is to add a package of drained and squeezed spinach and some garlic to the beef or some mushrooms. Sometimes I add a little Worcestershire to the soup too. Occasionally I'll add more soup. I love that this is SO versatile. Experiment with different soups, cheese, vegetables. Next time I'm going to drizzle a bit of olive oil over the top of the tater tots and sprinkle with some herbs. Perhaps garlic powder, Italian spices, or crushed red pepper flakes.

Steps:
- Mix ground beef with the dry onion soup mix and press into a 9x13 pan. Mix the soup, milk, salt, and pepper. Pour over the ground beef mixture. Add a layer of cheddar cheese. Arrange frozen tater tots over the top of the casserole.
- Bake at 350 degrees for 1 hour.

CHEESY TATER TOT CASSEROLE
I hate tater tot casserole but my husband loves it so I had to come up with one that I liked too. This is it! It's nice and creamy with lots of cheesy goodness!

Steps:
- Preheat oven to 350 degrees.
- Brown ground beef, add onion to saute, drain, set aside.
- In a large mixing bowl, combine soup, milk, sour cream, and 1 cup of shredded cheese, as well as any of your favorite seasoning, mix well.
- Add package of tots, beef, and onions to soup mix. Mix all together and make sure the tots are well coated.
- Place tot mixture in a 13x9 pan, smooth it out. Bake at 350 for 30 minutes. Remove from oven, top with remaining 2 cups of cheese and return to oven. Cook for an additional 30 minutes.
OPIE'S CHEESY TATER TOT CASSEROLE
I created this recipe over time in homage to the original from Opie's BBQ in Spicewood, TX. Some things to note: Ore-Ida tater tots have lots of salt and seasoning; typically off-brand do not. I would probably add over a tsp for off-brand tots.

- Mix everything but the Colby cheese and french's onions in a large bowl (make sure tots are still frozen so they don't break apart).
- Scoop mixture into one 9x13 pan.
- Bake uncovered at 350 degrees for one hour.
- Top with Colby cheese and then French's onions and bake for another 5-10 minutes until onions are golden brown.

- preheat oven to 325.
- peel and quarter potatoes, boil untill potatoes are soft. drain, add butter,milk.
- use electric mixer to mix . add salt and pepper to taste.
- place wieniers on a cookie sheet and slice down the middle, but don't cut all the way thru,just enough so it will lay open.
- spoon in potatoes, sprinkle cheese on top.place in oven, bake until cheese is melted. serve.

Steps:
- Cook ground beef and drain grease.
- Pour ground beef in bottom of ungreased 8x8 pan.
- Drain green beans and layer on top of ground beef.
- Smooth Cheddar Cheese Soup over the green beans.
- Place tater tots strategically to cover entire casserole.
- If desired, sprinkle shredded cheddar cheese over tater tots.
- Bake in the oven using the directions from the tater tot bag.

This is a great gluten free substite for corn dogs, which is something that my 10 year old really misses. My other children love it as well. Prep is a little time consuming, but very worth it.

- Simmer about 15 minutes until vegetables are tender.
