H-O-T Hot Boneless Buffalo Wings image

Provided by Food Network

Time 30m

Yield 2 servings

Number Of Ingredients 10

1/4 cup high-fiber bran cereal twigs (recommended: Fiber One Original)
1 ounce fat-free BBQ-flavored potato chips (recommended: Pringles Light Fat-Free Barbecue Potato Crisps)
Dash onion powder
Dash garlic powder
Dash cayenne pepper
Dash black pepper
Dash salt
8 ounces raw boneless skinless lean chicken breast, cut into 10 nuggets
3 tablespoons Frank's RedHot Original Cayenne Pepper Sauce
Carrot sticks, as optional accompaniment

Steps:

  • Preheat the oven to 375 degrees F.
  • Spray a baking sheet (or baking pan) with nonstick spray and set aside.
  • Using a blender or food processor, grind cereal to a breadcrumb-like consistency. Transfer to a small bowl and set aside.
  • Crush potato chips in a sealed bag, and then add to the bowl of cereal crumbs. Add spices and mix well.
  • Place chicken pieces in a separate bowl, cover with hot sauce, and toss to coat.
  • Give each chicken piece a shake so it's not dripping with sauce, and then coat evenly with crumb mixture. Lay crumb-covered nuggets on the baking sheet.
  • Bake in the oven for 10 minutes.
  • Flip nuggets over and bake until outsides are crispy and chicken is cooked throughout, about 10 more minutes.
  • Serve with carrot sticks, if using. Enjoy!

BONELESS WINGS

Boneless Wings image

Provided by Food Network

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 17

1 cup ketchup
1/2 cup honey
1/2 cup brown sugar
1/4 cup sriracha
2 tablespoons brown mustard
2 tablespoons cider vinegar
1 tablespoon cayenne pepper
3 pounds cornstarch
1 1/4 pounds all-purpose flour
1/2 cup granulated garlic
1/2 cup onion powder
1/2 cup paprika
1/4 cup ground black pepper
1/4 cup cayenne pepper
4 to 6 boneless, skinless chicken breasts
1/2 cup milk
12 large eggs

Steps:

  • For the sweet hot sauce: Combine the ketchup, honey, brown sugar, sriracha, mustard, vinegar, cayenne and 2 tablespoons water in a large bowl and whisk vigorously until everything is mixed well.
  • For the flour dredge: Mix together the cornstarch, flour, granulated garlic, onion powder, paprika, black pepper and cayenne in a large bowl.
  • For the chicken: Heat a deep-fryer to 350 degrees F.
  • Cut the chicken into strips approximately the size of your thumb, making each strip as even as possible. Whisk together the milk and eggs in a large shallow dish for the egg wash. Roll the chicken strips in the flour dredge until evenly coated, shaking off the excess. Then dip in the egg wash. Then dip in the flour dredge once again.
  • In batches, place the chicken strips in the fryer basket and drop it in the oil, giving it a good shake to make sure they don't stick together. Cook until they all begin to float, about 5 minutes. (To insure they have been cooked all the way, feel free to cut one in half.) Toss them in a large bowl with some sweet hot sauce until evenly coated. Repeat with the remaining chicken.

Yield 6-8 appetizer servings

Number Of Ingredients 26

For the boneless wings:
2 cups buttermilk
2 tablespoons hot sauce (preferably Frank's)
2 tablespoons kosher salt, divided, plus more
2 pounds boneless, skinless chicken breasts, cut crosswise into 1" strips
3 cups all-purpose flour
2 tablespoons garlic powder
1 tablespoon paprika
1/2 teaspoon cayenne pepper
2 teaspoons freshly ground black pepper
For the hot sauce:
5 tablespoons unsalted butter
1/2 cup hot sauce (preferably Frank's)
2 tablespoons pure maple syrup
For the blue cheese dip:
1/2 cup sour cream
1/4 cup buttermilk
1/4 cup crumbled blue cheese
1/2 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt
2 tablespoons chopped chives, divided
For frying and serving:
Vegetable oil (for frying)
4 celery stalks, cut crosswise into 4-5" pieces
Special Equipment
A deep-fry thermometer

Steps:

  • Prep the chicken:
  • Stir buttermilk, hot sauce, and 1 Tbsp. salt in a wide, shallow bowl. Add chicken and toss to coat.
  • Mix flour, garlic powder, paprika, cayenne, black pepper, and remaining 1 Tbsp. salt in a large bowl.
  • Working in batches, transfer chicken to bowl with flour mixture. Toss to coat, then transfer to a rimmed baking sheet or large platter. Working in batches again, dip in buttermilk mixture, allow excess to drip off, then dip again in flour mixture. Transfer back to baking sheet and chill at least 15 minutes and up to 2 hours.
  • For the hot sauce:
  • Meanwhile, cook butter, hot sauce, and maple syrup in a small saucepan over medium heat, stirring, until butter is melted and mixture is smooth.
  • For the blue cheese dip:
  • Whisk sour cream, buttermilk, blue cheese, pepper, salt, and 1 Tbsp. plus 2 tsp. chives in a small bowl. Top with remaining 1 tsp. chives.
  • Fry the chicken:
  • Preheat oven to 250°F. Set a wire rack over another rimmed baking sheet.
  • Pour oil into a large heavy pot fitted with thermometer to a depth of 2". Heat over medium-high until thermometer registers 350°F. Working in batches, fry chicken, turning occasionally, until crispy and golden brown and an instant-read thermometer registers 165°F, 4-6 minutes per batch. Transfer chicken to prepared wire rack, season with salt, and keep warm in oven.
  • Right before serving, transfer fried chicken to a large bowl. Pour hot sauce mixture over and gently turn with tongs until coated. Serve with blue cheese dip and celery sticks alongside.

BUFFALO CHICKEN BITES (BONELESS BUFFALO WINGS)

Buffalo Chicken Bites (Boneless Buffalo Wings) image

These boneless buffalo chicken bites are perfection. Lightly battered and pan-seared, they're crispy on the outside with a moist and tender interior, then tossed in my mom's signature buffalo sauce.

Provided by Danielle Esposti

Categories     Appetizer

Time 30m

Number Of Ingredients 11

2 lb boneless skinless chicken breast (patted dry and diced into 2" pieces)
1/2 c cornstarch (or arrowroot powder for paleo)
2 tsp sea or kosher salt
1 tsp cracked black pepper
1 tsp onion powder
1 tsp garlic powder
1/2 tsp paprika
2 tbsp olive oil (or avocado oil for paleo)
1/2 c Frank's RedHot
1/2 c Texas Pete Original Hot Sauce (or your favorite hot sauce - see suggestions in post)
2 tbsp butter

Steps:

  • Combine the cornstarch, salt, onion powder, garlic powder, pepper, and paprika in a large mixing bowl. Whisk until thoroughly combined.
  • Add the chicken to the cornstarch mixture; toss until evenly coated.
  • Heat a 12" non-stick skillet over medium high heat. Add 1 tbsp olive oil and heat until it shimmers. Add half the battered chicken to the skillet in a single layer. Sautee 5 minutes until the breading is lightly golden brown, flip the pieces, and sautee 5 minutes on the other side. Remove the chicken using a slotted spoon and transfer to a plate. Repeat with the remaining chicken pieces, adding additional olive oil as needed.
  • Add the butter to the skillet and melt, scraping up browned bits as it cooks. Add the buffalo sauces to the melted butter and whisk until combined.
  • Add the cooked chicken to the buffalo sauce. Toss to coat all pieces in sauce, then cook an addition 3-5 minutes until the chicken is cooked through and the sauce slightly thickens. Serve immediately with blue cheese or ranch dipping sauce and sliced carrots and celery.

BONELESS BUFFALO CHICKEN WITH GARLIC & PARMESAN

Boneless Buffalo Chicken With Garlic & Parmesan image

Great weeknight dinner, because it's so fast to prepare! Or make it for your half-time party on Super Bowl Sunday--it's a crowd pleaser for sure! This is a Rachael Ray recipe that I adapted to my family's taste by adding the parm. If you like buffalo wings with garlic & parm, you'll love this.

Categories     One Dish Meal

Time 15m

Yield 4 serving(s)

2 lbs boneless chicken, cut into bite-size pieces
olive oil, to cover bottom of skillet

1/4-1/2 cup hot sauce (Frank's Red Hot is best)
2 -3 tablespoons butter
1/4-1/2 cup parmesan cheese
salt & pepper

Steps:

  • Heat olive oil & add the chicken, salt, pepper, and garlic, stirring from time to time. Saute for several minutes until the chicken is cooked through totally. COOKS COUNTRY BONELESS BUFFALO CHICKEN

Cooks Country Boneless Buffalo Chicken image

I got this out of the Cooks Country Feb/March 2009 Magazine. Hubby and I loved it, both of us prefer the boneless style "wings". For the hot sauce, Cooks Country recommends Franks (which we used) over Tabasco. We served it with the standard Blue Cheese dressing (I made the Cooks Country version) and celery. Prep time is a total guess since I have not made this since last year. I can update it when I make it again (this weekend!).

Provided by TexasKelly

Categories     Chicken

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 12

4 boneless skinless chicken breasts (about 1 1/2 lbs)
1/2 cup buttermilk
1 teaspoon salt
3/4 cup hot sauce
1/4 cup water
1/4 teaspoon sugar
1 tablespoon unsalted butter
1 1/2 cups cornstarch
4 large egg whites
1/2 cup all-purpose flour
1/2 teaspoon baking soda
4 cups vegetable oil

Steps:

  • Marinate: Cut chicken into about 1 1/2 inch chunks. Combine chicken, buttermilk, and salt in large zipper lock bag and refrigerate 30 minutes or up to 2 hours.
  • Combine hot sauce, water, sugar, butter and 2 tsp cornstarch in saucepan. Whisk over medium heat until thickened, about 5 minutes.
  • Coat: Whisk egg whites in shallow dish until foamy. Stir flour, baking soda, remaining cornstarch, and 6 tbsp hot sauce mixture in second shallow dish until mixture resembles coarse meal.
  • Remove chicken from marinade and pat dry with paper towels. Toss half of chicken with egg whites until well coated, then dredge chicken in cornstarch mixture, pressing to adhere. Transfer coated chicken to plate and repeat with remaining chicken.
  • Fry: Heat oil in Dutch oven over medium high heat until oil registers 350 degrees and repeat with remaining chicken.
  • Toss: Warm remaining hot sauce mixture over medium low heat until simmering. Combine chicken and hot sauce mixture in large bowl and toss to coat.
  • Serve :).

BONELESS BUFFALO WINGS RECIPE

Boneless Buffalo Wings Recipe image

This boneless wings recipe is easy to make with breaded chicken breast fried until crispy and golden, then slathered in homemade Buffalo Sauce. Better than any restaurant!

Provided by Mike Hultquist

Categories     Appetizer     Main Course

Number Of Ingredients 12

1 pound boneless chicken breast (sliced into bite-sized nuggets or chunks)
1 cup flour
1 tablespoon spicy seasoning blend (I use a Cajun blend. What's YOUR secret blend of choice?)
Salt and pepper to taste (about 1/2 to 1 teaspoon each)
1 large egg
1 cup buttermilk (or you can use milk)
Vegetable Oil for frying
1 stick butter - 1/2 cup or 8 tablespoons
½ cup Louisiana style hot sauce - Franks is very popular though I use Valentina HOT
2 tablespoons apple cider vinegar or white vinegar
1 teaspoon Worcestershire sauce
For Serving. Blue cheese dressing or ranch dressing (celery sticks)

Steps:

  • Stir together the flour, seasonings and salt and pepper in a large bowl.
  • In a separate bowl, beat together the egg and buttermilk until combined.
  • Dip each chicken piece into the egg mixture, then into the seasoned flour mixture. Repeat, then set onto a plate to rest for 10 minutes.
  • Heat several inches of frying oil heated to 350 degrees F in a large pot or Dutch oven. Do not boil.
  • Fry the boneless wings for 5-6 minutes, or until golden brown and cooked through. They should register 165 degrees F internally when measured with a meat thermometer.
  • Remove and set onto a paper towel lined plate to drain excess oil.
  • Heat the butter, hot sauce, vinegar and Worcestershire sauce in a sauce pan until the butter melts. Whisk vigorously until the sauce thickens up.
  • Slather the boneless wings with homemade Buffalo sauce and serve with blue cheese dressing or ranch dressing and celery sticks on the side.

Estimated Reading Time 5 mins
  • Cut boneless skinless chicken breasts into strips. RECORD SCRATCH. FREEZE FRAME. Aren't we talking about boneless chicken wings here? What's with the chicken breasts sitch!?
  • Tenderize chicken with buttermilk. Like any good fried chicken recipe, this one starts with a nice buttermilk bath. Whisk together 2 cups buttermilk, 2 Tbsp.
  • Dredge the chicken in a seasoned flour mixture. While traditional Buffalo wings don't have a flour coating, giving the boneless version a dredge makes them more sturdy—plus it lends a satisfying crunch that mimics fried chicken skin.
  • Dredge chicken in buttermilk and flour again. Working in smaller batches this time, return the chicken pieces back to the buttermilk mixture and then toss again in the flour mixture.
  • Make the blue cheese dip. While your chicken is chilling in the fridge, make a couple sauces for your "wings." For the blue cheese dip, whisk 1/2 cup sour cream, 1/4 cup buttermilk, 1/4 cup crumbled blue cheese, 2 tsp.
  • Prep the hot sauce coating. In a small saucepan, stir together 1/2 cup hot sauce, 5 Tbsp. unsalted butter, and 2 Tbsp. pure maple syrup over medium heat until butter is melted and sauce is smooth.
  • Set up your frying station. When you're ready to fry, fill a large heavy pot with 2 inches of vegetable oil, attach a deep-frying or candy thermometer, and set over medium heat.
  • When the thermometer reaches 350°F, add chicken in batches. Don't throw all your chicken in at once. Work in batches so the frying temperature stays consistent and you can move the pieces around (using a slotted spoon or a spider) so that they cook quickly and evenly.
  • Toss the chicken with wing sauce and serve with all the fixings. Transfer all of the chicken to a large bowl and pour the wing sauce mixture over. Gently turn the chicken pieces with tongs until they're coated and glossy.
