BOMBAY POTATO & SPINACH PIES



Bombay potato & spinach pies image

These spicy filo pies are ideal for a lunch with salad or as part of a buffet

1¼kg large waxy potato such as Charlotte, halved
85g butter
2 onions , chopped
1 tbsp cumin seed
1 tbsp black mustard seed
2 tbsp finely chopped ginger
2 red chillies , halved, deseeded and sliced
3 tbsp korma paste
400g bag fresh spinach
4 tomatoes , chopped
small bunch coriander , chopped
270g pack filo pastry (6 large sheets)
50g melted butter
1 tsp black mustard seed

Steps:

  • Heat oven to 190C/170C fan/gas 5. To make the filling, heat a pan of salted water. When boiling, add potatoes and boil for 15 mins until tender. Melt the butter then fry the onions for a few mins. Add cumin, mustard seeds, ginger and chillies and fry, stirring occasionally, for about 7 mins until soft. Stir in curry paste.
  • Cook the spinach in the microwave on High for 5 mins. Drain and squeeze out as much liquid as you can, then chop it. Drain the potatoes and tip them into the spice mixture. Crush lightly to break them up into chunks rather than mash. Toss in the spice mixture with plenty of salt to coat them, then add the spinach, tomatoes and coriander.
  • Carefully unroll the pastry and brush 2 x 20cm loose-bottomed sandwich tins with some butter. Brush the first sheet of pastry and lay it in and across the tin so that it hangs over the side. Do the same with another sheet of pastry to cover the other side of the tin (so the two form a cross), butter and fold the final sheet in half and lay it in the base of the tin to create a firm base. Do the same with the other tin and remaining pastry.
  • Spoon the filling into the tin and fold up the pastry that is overhanging so that it covers the filling. Brush generously with the remaining butter and sprinkle with seeds. Bake for 35 mins until golden and crisp. Serve with a salad and mango chutney, or a raita made by mixing plain yogurt with mint sauce or jelly, if you like.

2 (10 ounce) packages frozen chopped spinach, thawed and drained
3 green onions, chopped
8 ounces ricotta cheese
½ lemon, juiced
1 pinch salt and pepper to taste
1 cup shredded mozzarella cheese
4 matzo sheets

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Place the potatoes in the preheated oven, and bake for 45 minutes, or until tender. Turn once or twice. Cool, peel and cut into 1/4 inch slices.
  • Reduce the oven temperature to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together the spinach, green onion, ricotta cheese, lemon juice, salt and pepper. Wet the matzo sheets under warm running water briefly on each side, just until pliable. Place one in the bottom of a 9 inch square baking dish. Spread 1/4 of the ricotta mixture over it, followed by a layer of potato slices. Sprinkle 1/4 of the mozzarella cheese over the potatoes. Repeat the layers, and finish with mozzarella cheese on top.
  • Bake for 35 minutes in the preheated oven, until the cheese on top is bubbly and golden brown. Keep warm until you are ready to serve. Cut into squares.

1/2 cup fat-free evaporated milk
2 large eggs, lightly beaten

Steps:

  • In a bowl, combine the potatoes, 4 teaspoons oil and 1/2 teaspoon salt. Press onto the bottom and up the sides of a 9-in. pie plate coated with cooking spray. Bake at 425° for 20-25 minutes or until crust is lightly browned. Cool on a wire rack. Reduce temperature to 350°., In a nonstick skillet, saute onion in remaining oil until tender. 3 cups chopped yellow onions (2 onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
3 (10-ounce) packages frozen chopped spinach, defrosted
6 extra-large eggs, beaten
2 teaspoons grated nutmeg
1/2 cup freshly grated Parmesan cheese
3 tablespoons plain dry bread crumbs
1/2 pound good feta, cut into 1/2-inch cubes
1/2 cup pignoli (pine nuts)
1/4 pound salted butter, melted
6 sheets phyllo dough, defrosted

Steps:

  • Preheat the oven to 375 degrees. In a medium saute pan on medium heat, saute the onions with the olive oil until translucent and slightly browned, 10 to 15 minutes. Add the salt and pepper and allow to cool slightly. Squeeze out and discard as much of the liquid from the spinach as possible. Put the spinach into a bowl and then gently mix in the onions, eggs, nutmeg, Parmesan cheese, bread crumbs, feta, and pignoli. Butter an ovenproof, nonstick, 8-inch saute pan and line it with 6 stacked sheets of phyllo dough, brushing each with melted butter and letting the edges hang over the pan. Pour the spinach mixture into the middle of the phyllo and neatly fold the edges up and over the top to seal in the filling. Brush the top well with melted butter. Bake for 1 hour, until the top is golden brown and the filling is set. Remove from the oven and allow to cool completely. Serve at room temperature.

SAUSAGE, SPINACH AND POTATO TART



Sausage, Spinach and Potato Tart image

2 cups all-purpose flour, plus more for dusting
1/2 teaspoon kosher salt
12 tablespoons butter (1 1/2 sticks), cold and sliced into chunks
1 large egg, lightly beaten
1 tablespoon cold water
1 small Yukon gold potato, finely diced
Kosher salt
1 tablespoon olive oil
8 ounces bulk mild or sweet Italian pork sausage
3 cups fresh baby spinach
Freshly ground black pepper
4 green onions, sliced
3 large eggs
1/2 cup milk
1 cup grated gruyere cheese

Steps:

  • For the dough: Add flour and salt to the bowl of a food processor and pulse a few times to mix. Add the butter to the bowl and pulse until the mixture looks like crumbly sand. Add the egg and water and pulse again until the dough comes together.
  • Very lightly flour the work surface. Dump the dough onto the floured surface and knead a few times until it comes together. Shape the dough into a disc and roll out to a 13-inch circle. Press the dough into the bottom and sides of an 11-inch tart pan with a removable bottom. Level the edges with your fingers. Prick the bottom of the tart with a fork. Freeze until firm, 25 minutes.
  • For the filling: Preheat the oven to 400 degrees F.
  • While the tart is in the freezer, add the potatoes to a medium saucepan and cover with cold water. Add a big pinch of salt and bring to a boil. Reduce the heat to a simmer, and cook the potatoes until tender but still with a bit of resistance, 5 to 6 minutes. Drain and cool.
  • Lightly drizzle the olive oil in a large skillet over medium heat. Add the sausage, and cook, breaking up with the back of a wooden spoon until crumbly and browned, 6 to 8 minutes. Add the spinach by the handful and stir until it just wilts down. Season the mixture with salt and pepper and stir in the green onions. Remove to a bowl to cool.
  • Crack the eggs into a medium bowl and stir in the milk. Whisk together until combined and then add some salt and pepper.
  • Remove the tart from the freezer. Cover the top with parchment paper and add pie weights or dried beans. Place on a sheet tray and bake for 20 minutes.
  • Remove the pie weights and parchment paper and continue baking for 10 minutes more.
  • Turn the oven temperature down to 350 degrees F.
  • Evenly sprinkle the par-baked tart shell with half of the grated cheese, then the cooked potatoes, and finally top with the sausage and spinach mixture. Pour the eggs over the top and sprinkle with the remaining cheese. Bake for 45 minutes.
  • Cool the tart for 10 minutes before serving. Can be served warm or at room temperature.

400g baby spinach
1 tbsp olive oil
500g mushroom , such as chestnut, shiitake and button
2 garlic cloves , crushed
250ml vegetable stock (made from half a low sodium vegetable stock cube)
300g cooked new potatoes , cut into bite-sized pieces
1 tbsp grain mustard
1 tsp freshly grated nutmeg
2 heaped tbsp light crème fraîche
3 sheets filo pastry
300g each green beans and broccoli, steamed

Steps:

  • Heat oven to 200C/180C fan/gas 6. Wilt spinach in a colander by pouring a kettleful of hot water over it.
  • Heat half the oil in a large non-stick pan and fry mushrooms on a high heat until golden. Add garlic and cook for 1 min, then tip in stock, mustard, nutmeg and potatoes. Bubble for a few mins until reduced. Season, then remove from the heat; add crème fraîche and spinach. Pour into a pie dish and allow to cool for a few mins.
  • Brush filo with remaining oil, quarter sheets then loosely scrunch up and lay on top of pie filling. Bake for 20-25 mins until golden. Serve with vegetables.

This pie is a great way to use up your freezer staples: that one bag of frozen spinach and that packet of puff pastry sitting in the back. Feel free to make this pie your own by playing around with the herbs and spices. You can also veganize it by leaving out the feta and using a vegan-friendly puff pastry. Typically used as a marinade or condiment, chermoula is a North African spice paste with a multitude of variations. Here, it is used twice, once to flavor the base and then again as a sauce to drizzle alongside.

3/4 cup/30 grams roughly chopped fresh cilantro (coriander)
1/2 fresh mild red chile (about 10 grams), roughly chopped, seeds and all
2 teaspoons cumin seeds, toasted and roughly crushed using a mortar and pestle
1 teaspoon sweet paprika
Kosher salt and freshly ground black pepper
4 tablespoons/60 milliliters olive oil
4 tablespoons/60 milliliters olive oil
1 large yellow onion (about 12 ounces/360 grams), halved and thinly sliced
12 ounces/350 grams frozen spinach, thawed, then squeezed to remove excess water
Kosher salt and freshly ground black pepper
1/3 cup/15 grams roughly chopped fresh dill
1 1/2 teaspoons fresh lemon zest, plus 1 1/2 tablespoons lemon juice
All-purpose flour, for dusting
1 sheet frozen all-butter puff pastry, at least 9 inches/24 centimeters wide, thawed
1 cup/130 grams roughly crumbled Greek feta
1 baking potato (about 9 ounces/250 grams), skin-on, scrubbed clean

Steps:

  • Prepare the chermoula paste: Add the garlic, cilantro, chile, cumin, paprika, 1/2 teaspoon salt, a good grind of pepper and 3 tablespoons oil to a food processor. Pulse into a coarse paste and set aside.
  • Prepare the pie: Add 3 tablespoons oil to a large skillet and heat over medium-high. Once hot, add the onion and cook, stirring occasionally, until softened and well browned, about 12 minutes. Add half the chermoula paste (reserve the rest), the spinach, 1 teaspoon salt and a good grind of pepper, and cook for 2 minutes more, stirring to combine. Remove from the heat, then add the dill and lemon zest. Set aside to cool, about 20 minutes.
  • Line a 9-inch/24-centimeter pie or tart pan (tin) with a removable base with a piece of parchment paper large enough to cover the base and a little bit over the sides. (The excess will help you lift the tart when it's baked.) On a lightly floured work surface, roll out the pastry with a floured rolling pin to a 12-inch/30-centimeter square. Lay the puff pastry on the parchment, pressing in the pastry to fit the base and sides of the pan and cutting away any excess so it overhangs by about 3/4 inch/2 centimeters.
  • Poke the base all over with a fork (about 10 times), then spread the cooled spinach mixture over the base evenly. Sprinkle the feta on top, then fold and scrunch the sides over the filling to create a rim. (Don't worry if it's not perfect.) Refrigerate the pie for at least 20 minutes, or up to overnight, covered.
  • Heat the oven to 400 degrees Fahrenheit/200 degrees Celsius.
  • Trim and discard the ends of the potato and use a mandolin or very sharp knife to cut the potato into paper-thin slices. Toss together in a bowl with 1 tablespoon oil, plus 1/2 teaspoon salt and a good grind of pepper. Fan out the slices on top of the spinach and feta in a circular pattern, overlapping slightly, to cover the filling but not the pastry rim.
  • Place the chilled pie on a baking sheet and bake until cooked through and nicely colored, about 50 minutes. Set aside to cool, about 15 minutes, before gently transferring to a wooden board or serving plate.
  • When ready to serve, stir the lemon juice and remaining 1 tablespoon oil into the reserved chermoula. Spoon half of the chermoula all over the pie and serve the remaining in a bowl alongside. Serve warm, or at room temperature.

500 g waxy potatoes
500 g spinach or 500 g kale, trimmed and finely chopped
3 tablespoons olive oil
4 garlic cloves, minced
1/2 teaspoon ground cumin
1/4 cup water
3 tablespoons lime juice
1/4 cup toasted pumpkin seeds, chopped, plus extra for garnish
1 1/2 teaspoons salt (to taste)
6 jumbo tortillas, warmed in the microwave
700 g pasta sauce
1/2 teaspoon chili powder
1/2 teaspoon cumin
1 teaspoon marjoram or 1 teaspoon oregano

Steps:

  • Simmer pasta sauce with spices and herbs on very low heat while preparing the enchiladas.
  • Peel and dice the potatoes and boil them until tenders - about 20 minutes. Drain and set aside.
  • Cook the oil and garlic over medium low heat, stirring occasionally. Add the kale, sprinkle with a little salt, and raise the heat to medium, stirring constantly to cover the kale with oil and garlic.
  • Partially cover the pot to steam the kale until it has wilted - 4-6 minutes.
  • Mix in the potatoes, stock, lime juice, pumpkin seeds, and salt. Use the back of a wooden spoon to mash some of the potatoes and cook another five minutes. Taste and season.
  • Ladle some of the tomato sauce into the bottom of a casserole dish and spread it around. Take a warmed tortilla, run the potato mixture down the middle and roll up. Pack the tortillas into the casserole dish. Pour about a cup of sauce over the top when finished all the tortillas. Sprinkle with pumpkin seeds.
  • Cover tightly with foil and bake at 375°F for 25 minutes, Remove foil and bake for another 10 minutes, until edges of tortillas look a little browned.
  • Top individual servings with extra sauce. Serve with a green salad and some vegan guacamole.

4 large russet potatoes, peeled and diced
3 tablespoons olive oil
6 -8 garlic cloves, thinly sliced
1 -2 teaspoon red pepper flakes
salt and pepper
1 (9 ounce) package microwavable package fresh spinach

Steps:

  • Cook potatoes in boiling salted water until tender and drain in a colander reserving 1/4 cup of liquid.
  • Let potatoes steam 3 minutes, shaking once, then remove to a serving dish.
  • While potatoes are cooking, place oil, garlic and red pepper flakes in a small skillet and cook slowly over low heat until garlic is lightly browned.
  • When potatoes are ready, cook spinach according to package directions.
  • Add spinach, garlic-pepper oil (and some reserved liquid if needed) to potatoes, toss, season with salt and pepper and serve at once.

1 pound sweet Italian sausage (about 4 links), cut into 1/4" coins
2 garlic cloves, thinly sliced
3 tablespoons all-purpose flour
2 cups leftover chicken stock or low-sodium chicken broth
2 medium carrots (about 5 1/2 ounces), peeled, cut into 1/4" coins
4 small new potatoes (about 5 ounces), cut into 1/2" cubes
6 ounces frozen peas, thawed
1 tablespoon chopped dill
1/4 cup fresh lemon juice, divided
1 1/4 teaspoons kosher salt, divided
3/4 teaspoon freshly ground black pepper, divided
1 sheet frozen puff pastry, such as Dufour or Pepperidge Farm, thawed
1 large egg (optional)
5 cups baby spinach (about 4 ounces)
4 cups baby arugula (about 3 ounces)
3 radishes, thinly sliced
1/4 cup cilantro, coarsely chopped
1/4 cup parsley, coarsely chopped

Steps:

  • Place rack in upper third of oven; preheat to 425°F. If you see or feel dirt in leeks, rinse well, separating layers, then pat dry; otherwise, leave rounds intact.
  • Heat 1 Tbsp. oil in a 10" cast-iron or other deep, heavy, ovenproof skillet over medium-high. Cook sausage, stirring occasionally, until browned, 5-7 minutes. Add garlic and cook until golden brown, about 2 minutes more. Using a slotted spoon, transfer sausage and garlic to a plate, reserving about 2 Tbsp. oil in pan.
  • Return pan to low heat and add flour, 1 Tbsp. at a time, stirring to combine. Cook, stirring constantly, until mixture starts to smell toasty and is the color of peanut butter, about 5 minutes.
  • Stir in stock 1/4-cupful at a time. Bring to a boil, then reduce heat to medium-low. Add carrots, potatoes, and leek and simmer until carrots and potatoes are just softened and liquid is reduced by half, 10-12 minutes. Add reserved sausage and garlic, peas, dill, 2 Tbsp. lemon juice, 3/4 tsp. salt, and 1/2 tsp. pepper and stir to combine.
  • Remove from heat. Place pastry over skillet, tucking corners gently into sides; it won't completely cover pan. Whisk egg with 1 Tbsp. water (if not using, substitute 1 Tbsp. oil) in a small bowl and brush top of pastry. Cut four 1" slits in pastry to vent.
  • Bake pot pie until pastry is beginning to brown and underside is cooked, 23-25 minutes. Let cool 10 minutes before serving.
  • Meanwhile, whisk remaining 4 Tbsp. oil, 2 Tbsp. lemon juice, 1/2 tsp. salt, and 1/4 tsp. pepper in a large bowl. Add spinach, arugula, radishes, cilantro, parsley, and almonds and toss to combine.
  • Divide pot pie among plates and serve salad alongside.

1 sheet pastry dough for 9-inch tart
5 ounces frozen chopped spinach, thawed and drained
2 cups frozen hash brown potatoes, thawed
1 ½ cups shredded Gruyere cheese, divided
7 large eggs, beaten
½ cup heavy cream
2 teaspoons everything bagel seasoning
3 dashes hot pepper sauce (such as Tabasco®), or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Cut a 9-inch circle of parchment paper.
  • Place pastry crust in a 9-inch quiche or pie pan, gently shaping and stretching to fit. Prick crust with a fork several times and place parchment circle over top. Add pie weights or dried beans on top of parchment paper.
  • Set the pan on a baking sheet and place in the center of the preheated oven. Reduce heat to 375 degrees F (190 degrees C) and bake about 10 minutes. Remove to a wire rack and cool for about 5 minutes. Carefully remove pie weights or beans and parchment paper. Leave oven on.
  • While the crust is cooling, squeeze thawed spinach between several layers of paper towels, to remove most of the moisture. Set aside.
  • Add thawed potatoes to the cooled crust. Sprinkle 1 cup shredded Gruyere cheese on top.
  • Stir beaten eggs, cream, bagel seasoning, and hot pepper sauce in a large bowl until ingredients are fully incorporated. Stir in spinach, breaking up any clumps. Pour mixture over the cheese and potatoes. Sprinkle the remaining 1/2 cup Gruyere on top.
  • Place in the center of the oven and bake until eggs are set and a knife inserted into the middle comes out clean, 40 to 45 minutes. Remove from the oven and cool on a rack for 10 minutes. Serve warm.

Spinach Potato Pie image

When we have brunch with relatives, I like to make this crustless quiche with hash browns and spinach. We think it's a great addition to our menu. -Deanna Phillips, Ferndale, Washington

5 large eggs, lightly beaten
4 cups frozen shredded hash brown potatoes
2 cups chopped fresh spinach
3/4 cup chopped red onion
1/2 cup 2% cottage cheese
7 bacon strips, cooked and crumbled
3 green onions, chopped
4 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon hot pepper sauce
3 plum tomatoes, sliced
1/2 cup shredded Parmesan cheese

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 11 ingredients. Pour into a greased 9-in. pie plate., Bake 40 minutes. Arrange tomatoes over top; sprinkle with Parmesan cheese. Bake 15-20 minutes longer or until a knife inserted near the edge comes out clean. Let stand 5 minutes before cutting.

  • Preheat oven to 375 degrees and place diced potatoes in a medium saucepan. Add enough cool water to cover potatoes by at least 1" then place pot over high heat. When water begins to boil, add a generous pinch of salt and reduce heat to medium-low. Simmer 15 minutes or until potatoes are soft but not falling apart. Drain and set aside to cool.
  • Coarsely chop baby spinach or defrosted frozen spinach. Place a large skillet over medium-high heat and add olive oil. Once oil is hot, add diced onion and ½ tsp salt, cook 3–4 minutes or until onions become translucent. Add minced garlic and chopped spinach. Cook until dark green and most of the liquid has evaporated.
  • Transfer spinach mixture into a large bowl then add cooked potatoes, feta crumbles and Parmesan cheese. Stir to combine. If necessary, allow mixture to cool slightly before stirring in beaten eggs—then set the filling aside.
  • Brush an 8" x 8" baking dish with a bit of melted butter. Center a sheet of phyllo dough into the bottom of the dish, allowing the excess to hang over the sides. Brush top of dough with butter and place another sheet on top in the opposite direction so that the dough sheets overhang both sides of baking dish. Repeat layering and buttering until you have completed 6–8 layers.

Peel potatoes and cut into 2 mm (0.08 inches) slices using a mandolin. Place slices in circles, starting at the outside and finishing in the centre.
